Mexican Flautas or Taquitos, what's the difference? The basic idea is the same, they're tacos filled with various ingredients of your choice, rolled like a cigar and then fried. The difference seems to be in name only, from what I can tell. It would appear that Taquitos is the name used is the United States

Number Of Ingredients 17

Vegetable oil for frying
2 cups cooked chicken (shredded)
1 tablespoon of butter
1/2 cup grated onion
1/2 cup tomato puree
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon dried oregano
1 teaspoon tomato paste
1/4 cup chopped fresh cilantro
Salt and pepper
12 soft corn tortillas
1/3 cup cream cheese
1 avocado (pitted and sliced (tossed with lime juice and salt))
1 cup queso fresco (crumbled)
Salsa (to serve)

Steps:

  • Heat the butter in a saucepan add the onion and cook for about 5 minutes. Add the tomato puree, garlic powder, cumin, chili powder, tomato paste, cilantro and oregano. Stir and cook for two minutes more.
  • Add the shredded chicken. Season with salt and pepper, cook for about 3 to 5 minutes.
  • Heat the tortillas on a nonstick skillet or oven, then wrap them in aluminum foil to keep them warm.
  • To assemble: spread one tortilla with cream cheese, then top with about 2 tablespoons of the chicken mixture, roll and secure with a toothpick. Process with the remaining tortillas.
  • Heat the vegetable oil in a large skillet and when oil is hot, place about three to four flautas into the oil, and cook for about 1 minute on each side.
  • Drain the flautas on paper towels. Remove the toothpicks and serve warm with avocado slices, queso fresco and salsa.

I found this one online but I don't remember where. The flautas are very good but the salsa is outstanding. It goes well with all manner of dishes especially tacos, burritos, and chimichangas, etc. The times are a guess.

12 ounces Cotija cheese, crumbled
4 cups cooked chicken, shredded
24 corn tortillas
8 roma tomatoes, chopped
2 tomatillos, chopped (optional)
1 red onion, chopped
1 cup fresh cilantro, chopped
1 -2 jalapeno chile, seeded, deveined, minced
1 teaspoon Mexican oregano (not as sweet as Mediterranean)
4 tablespoons olive oil
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Mix 3/4 cup cheese with chicken.
  • Heat tortillas one at a time in a very hot, dry pan until soft.
  • Fill and roll each tortilla, as its heated, with chicken/cheese mixture.
  • Secure with a toothpick.
  • Heat a frying pan containing 1/2 inch oil to 350°F.
  • Deep fry flautas until golden and crisp.
  • Drain on paper towel.
  • Serve topped with warm tomato salsa and crumbled cotija cheese.

  • Mix all salsa ingredients in a sauce pan over medium heat.
  • Sauté, stirring all the while, until it just starts to simmer.
  • Remove from heat, its ready to serve.
  • This goes great with Spanish Rice (my recipe # 77908) and refried black beans (Di Neal recipe # 10614).

1 cup water
1 pound skinless, boneless chicken breast halves
3 ½ cups vegetable oil (such as Crisco®), divided
1 cup finely chopped tomatoes
½ cup minced green onions
6 tablespoons chicken broth
2 teaspoons all-purpose flour
1 teaspoon minced garlic
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon chili powder
½ teaspoon salt
12 (6 inch) corn tortillas
12 wooden picks
1 cup shredded lettuce, or to taste
¼ cup guacamole, or to taste

Steps:

  • Bring water to a simmer in a skillet over medium heat; add chicken. Cover skillet and cook until chicken is no longer pink in the center, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken from water and cool; shred with a fork.
  • Heat 1 tablespoon vegetable oil in a skillet over medium heat; cook and stir chicken, tomatoes, green onions, chicken broth, flour, garlic, cumin, oregano, chili powder, and salt until heated through, 3 to 5 minutes.
  • Heat remaining vegetable oil in a heavy 10-inch skillet over medium heat; carefully dip tortillas in the hot oil to soften, about 1 minute. Remove tortillas with tongs and drain on paper towels, reserving oil. Heat oil to 375 degrees F (190 degrees C).
  • Spoon about 2 tablespoons chicken mixture down the center of each tortilla. Tightly roll each tortilla around the filling and secure with a wooden toothpick.
  • Fry rolled-up tortillas, working in batches, in hot oil until golden brown, 3 to 5 minutes. Remove taquitos with a slotted spoon and drain on paper towels. Serve taquitos on a bed of shredded lettuce with guacamole on the side.

Smoked cheese and green salsa give these crispy chicken taquitos that extra yum! Thinner corn tortillas will work the best. If you can't find the smoked cheese blend in your area, try using regular smoked Cheddar or Monterey Jack cheese.

4 skinless, boneless chicken breast halves - cooked and shredded
1 ½ cups shredded smoked Cheddar and Swiss cheese blend
1 (7 ounce) can green salsa
1 cup chopped onion
20 (6 inch) corn tortillas
1 quart peanut oil for frying, or as needed
1 cup sour cream
1 cup chunky salsa
1 cup guacamole

Steps:

  • Heat oil in a deep-fryer to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the shredded chicken, cheese, green salsa, and onion. Spoon about 1 1/2 tablespoons of the mixture onto tortillas, or enough so that when rolled up, each one is about 1 inch wide. Filling should not come to close to the ends, or it will fall out. Secure rolls with toothpicks.
  • Fry rolls 4 or 5 at a time so there is enough room between them for even cooking. Cook for 3 to 5 minutes, or until golden brown. Once they float, I leave them in for about another minute. If the taquitos are not crisp when cool, you haven't cooked them long enough. Drain on paper towels. Serve with sour cream, salsa and guacamole for dipping.

  • Make the Quick Pickled Red Onion: Place the sliced red onion in a small bowl. Add the vinegar, sugar, salt and pepper. Stir to combine. Cover and let stand at room temperature while you make your flautas.
  • Add the cooked chicken to a skillet over medium-low heat. Pour salsa over-top, then the water. Stir to combine. Cover the skillet and allow the chicken to warm with the salsa and water for 4-5 minutes. (The water should have been absorbed. If not, cook uncovered for a minute or so to cook it off). Remove the chicken mixture to the bowl of a stand mixer fitted with a paddle attachment (or alternately just in a bowl with two forks). Run the mixer on low for a minute or two to shred the chicken. Set aside.
  • Place a large tortilla on a cutting board. Cut the rounded edges off from each side, making a rectangle (see Step by Step photos above the recipe card). Place a row of the shredded chicken down the centre of the rectangle, then roll the tortilla up around it, rolling from the longer side. Place it seam side down, so it doesn't un-roll. Repeat with the remaining tortillas.
  • Heat a 1/2 inch of oil in a skillet over medium-high heat. (I like to cook just one at a time, in a small skillet. They cook up quickly and you don't need as much oil to get the 1/2 inch in a smaller skillet). Add one of the rolled tortillas to the skillet, seam side down. Allow to cook about 30- 45 seconds, then begin rolling it a quarter turn and allowing it to brown a bit before rolling it a quarter turn again, until the tortilla is evenly golden all around. Remove to a cooling rack and repeat with the remaining rolls.
