CHICKEN TAGINE WITH APRICOTS AND ALMONDS
Steps:
- Stir together ground cinnamon, ginger, turmeric, pepper, 1 teaspoon salt, and 2 tablespoons oil in a large bowl. Add chicken and turn to coat well.
- Heat butter and 1 tablespoon oil in base of tagine (or in skillet), uncovered, over moderate heat until hot but not smoking, then brown half of chicken, skin sides down, turning over once, 8 to 12 minutes. Transfer to a plate. Brown remaining chicken in same manner, adding any spice mixture left in bowl.
- Add onion and remaining 1/4 teaspoon salt to tagine and cook, uncovered, stirring frequently, until soft, about 8 minutes. Add garlic and cook, stirring occasionally, 3 minutes. Tie cilantro and parsley into a bundle with kitchen string and add to tagine along with 1/2 cup water, chicken, and any juices accumulated on plate. Reduce heat and simmer, covered, 30 minutes.
- While chicken cooks, bring honey, remaining cup water, cinnamon stick, and apricots to a boil in a 1- to 2-quart heavy saucepan, then reduce heat and simmer, uncovered, until apricots are very tender (add more water if necessary). Once apricots are tender, simmer until liquid is reduced to a glaze, 10 to 15 minutes.
- While apricots cook, heat remaining 1/4 cup oil in a small skillet over moderate heat and cook almonds, stirring occasionally, until just golden, 1 to 2 minutes. Transfer with a slotted spoon to paper towels to drain.
- Ten minutes before chicken is done, add apricot mixture to tagine. Discard herbs and cinnamon stick, then serve chicken sprinkled with almonds on top.
MOROCCAN CHICKEN AND APRICOT TAGINE
Steps:
- Gather the chicken ingredients.
- Combine the spices in a bowl large enough to hold the chicken.
- Add the chicken and toss to evenly coat the pieces with the spices.
- Gather the remaining tagine ingredients.
- Over medium-low heat, melt the butter in the base of a large tagine or Dutch oven.
- Add the olive oil, onions, garlic, and cinnamon stick .
- Add the seasoned chicken, meat-side down, in a single layer on top of the onions.
- Place the cilantro bouquet on top. Add the broth to the tagine.
- In the bowl used to season the chicken, swirl the water to cleanse it of the spices.
- Add the water to the tagine.
- Cover and leave the liquids to reach a simmer over medium-low heat.
- Once simmering , cook the chicken, undisturbed, for 1 hour.
- Remove 1/2 cup of the cooking liquids and set aside.
- Carefully turn over the chicken pieces so that they are meat-side up.
- Cover the pan and continue simmering for another 30 minutes to 1 hour, until the chicken is done and the liquids are thick and reduced.
- While the chicken is cooking, put the apricots in a small pot and cover with water.
- Simmer the apricots over medium heat, partially covered, for 10 to 15 minutes, or until tender enough to pinch in half with your fingers.
- Drain the apricots and return to the pot.
- Add the sugar (or honey), ground cinnamon, and the 1/2 cup of the reserved cooking liquid.
- Simmer the apricots gently for 5 to 10 minutes, or until they are sitting in a thick syrup.
- Discard the cilantro bouquet and cinnamon stick from the tagine.
- Arrange the chicken on a large serving platter (or simply leave in the base of the tagine). Spoon the apricots and syrup on and around the chicken. If desired, garnish with fried almonds or sesame seeds.

- In a small saucepan, bring apricots and orange juice to a simmer over medium-high heat. Remove from heat; let cool.
- Season chicken with salt and pepper. Heat a braiser pan or deep straight-sided skillet over medium-high heat; add oil and swirl to coat bottom. Cook half of chicken, flipping once, until browned, 8 to 10 minutes. Transfer to a plate. Cook remaining chicken; transfer to plate.
- Pour off all but 1 tablespoon fat. Reduce heat to medium; add onion, garlic, and carrots. Cook, stirring occasionally, until onion is translucent, about 3 minutes. Stir in ginger and cinnamon and cook, stirring, until fragrant, about 30 seconds.
- Stir in broth and saffron, scraping up browned bits from bottom of pan. Return chicken and accumulated juices to pan. Drain apricots; add to pan with almonds and olives. Bring to a boil, then reduce heat and simmer, partially covered, until a thermometer inserted in thickest part of chicken breast (without touching bone) reads 165 degrees, 30 to 35 minutes. Remove from heat; stir in cilantro. Serve with couscous and harissa.

- Melt 4 tablespoons of the butter in a skillet over medium heat. Add the oil, garlic, ginger, saffron and cook briefly until the garlic is golden.
- Slowly add 1/2 C of the water to the sacue in the skillet, then add the chicken pieces. Add water until the chicken is partly covered. Add the coriander and cover the skillet. Reduce heat to low and simmer until the chicken is tender, about 45 minutes. Remove the chicken from the skillet and arrange on a serving dish.
- Increase the heat to high and boil the sauce until reduced by half, stirring often. Pour the sauce over the chicken.
- In a small pan over medium heat, melt the remaining 1 T of butter. Add the almonds and cook until browned, about 3 minutes. Spinkle the browned almonds over the chicken.

CHICKEN TAGINE WITH PRESERVED LEMON AND ALMONDS
This is a Moroccan style chicken dish I came up with to use some preserved lemons I bought from a farmers' market recently. Tastes good with cous cous or saffron rice. If you don't have La Kama spice mix, use a mixture of cinnamon, turmeric, ground ginger, ground black peppercorns, with a pinch of nutmeg

Steps:
- Make paste out of spices, lemon juice, honey, saffron, and 1 tspn olive oil.
- Marinate chicken in paste overnight.
- Toast almonds over a gentle heat and set aside.
- Fry onion and garlic in heavy base pot til soft.
- panfry/bbq chicken breasts until cooked on outside - ideally use something like a scanpan griddle. Don't discard the marinade.
- Place in pot with onion and all leftover marinade.
- Cover with water.
- Simmer on low 30 minutes.
- Skim the surface from time to time.
- Add preserved lemons and almonds.
- Cook for another 30 mins on very low.
- Remove chicken breasts, slice and return to sauce.
- Add chopped coriander leaves.
- Heat through and serve.

- In a heavy-based flameproof casserole, lightly brown the chicken in the olive oil over a medium heat. Reduce the heat, add the onion and garlic and sauté for 3-4 minutes.
- Add the spices, cook for 2 minutes, then pour in the apple juice and stock to cover the meat. Bring to the boil and simmer for 15 minutes, stirring occasionally.
- Add the apricots and almonds and cook for a further 15 minutes until the chicken is tender and the liquid has reduced and thickened.

- SEASON the chicken parts with salt and pepper and brown them for about 8 minutes on the skin side and 5 minutes on the flesh side, over high heat, in olive oil, in a heavy-bottomed pot just large enough to hold them in a single layer. Transfer to a plate and reserve.
- POUR all but 1 tablespoon of fat out of the pan, and stir in the onion and garlic. Cook over medium heat, stirring every couple of minutes, until the onion turns translucent but doesn’t brown, about 10 minutes. Stir in the turmeric, ginger, cinnamon, and cloves and stir over medium heat for 1 minute more—until you smell the fragrance of the spices.
- Pour over the broth and scrape against the bottom of the pot to dissolve any caramelized juices. Sprinkle over the apricots, raisins, and saffron, and put the chicken back in the pan. Cover the pot and bring to a gentle simmer over medium heat. Simmer the chicken for 15 minutes after the broth has reached the simmer—once the chicken pieces feel firm to the touch, don’t cook them any more.
- Take the chicken out of the broth with tongs to let cool. Use a ladle to skim off any fat that has floated to the top of the broth. Turn the heat off under the pot. Take the chicken off the bones in strips and put it in the pot with the broth.
