GINGER-CHICKEN STIR-FRY



Ginger-Chicken Stir-Fry image

Stir fries require very little cooking time and you can pretty much use any vegetables you like, but the star of this one is the ginger. This dish is quick and easy to make, but get all of your ingredients together (including mixing the sauce) before you start cooking because everything happens fast! Serve with rice, and garnish with sliced green onions.

3 tablespoons vegetable oil, divided
1 pound boneless, skinless chicken breasts, thinly sliced
1 red bell pepper, cored and sliced
1 cup vertically sliced onion
3 ounces snow peas, trimmed, cut in half
⅓ cup water
¼ cup hoisin sauce
¼ cup soy sauce
¼ cup sherry
2 ½ tablespoons minced fresh ginger root
2 tablespoons rice vinegar
2 tablespoons sesame oil
1 tablespoon oyster sauce
1 tablespoon sugar
1 ½ tablespoons cornstarch
2 cloves garlic, minced

Steps:

  • Heat 2 tablespoons vegetable oil in a wok or large skillet over high heat. Add chicken to the wok, and stir-fry until chicken is opaque on all sides, about 3 minutes. Remove to a plate.
  • Heat the remaining 1 tablespoon vegetable oil in the wok. Add bell pepper, onion, and snow peas; stir-fry until vegetables start to soften, 3 to 4 minutes. Reduce heat to medium-low.
  • Whisk together water, hoisin sauce, soy sauce, sherry, ginger, rice vinegar, sesame oil, oyster sauce, sugar, cornstarch, and garlic in a bowl. Add sauce to the wok, stirring constantly until sauce starts to thicken. Add chicken back to the wok, stir, and reheat, 1 to 2 minutes.

Garnished with fresh basil, chicken stir fry with ginger, sugar snap peas, and carrots is easy to make and so versatile. You'll love the ginger scented sauce that has just the right amount of heat!

1 cup low sodium chicken broth
2 tablespoons fresh lime juice
1 tablespoon honey
1 tablespoon cornstarch
2 teaspoons minced or grated fresh ginger
1/2 teaspoon crushed red pepper flakes, or to taste
1 1/2 to 2 pounds boneless, skinless chicken breast
½ teaspoon kosher salt
2 teaspoons cornstarch
2 tablespoons coconut oil
1 large red onion, cut into thin vertical slices
2 cups matchstick cut carrots (or 4 medium carrots, coarsely shredded)
2 cups sugar snap peas
1/4 cup fresh basil, cut into ribbons
Cooked rice to serve

Steps:

  • In a bowl or a measuring cup, whisk together broth, lime juice, honey, 1 tablespoon cornstarch, ginger, and red pepper flakes. Set aside.
  • Cut the chicken breasts into thin slices, about 1/4-inch thick. Sprinkle with 2 teaspoons cornstarch, salt and pepper. Mix to coat chicken.
  • In a large skillet or wok, heat 2 tablespoons coconut oil over medium-high heat.
  • Add chicken and cook until golden, about 8-10 minutes. Chicken should be completely cooked. Remove from pan; set aside.
  • Add onion to pan, stir fry for 2 minutes. Add carrots to pan, stir fry for 2 more minutes. Add peas to pan and stir fry for 1 more minute until just tender, but still crisp.
  • Add chicken to pan, pour in sauce and scrape any brown bits off the bottom of the pan. Cook until sauce has thickened and reduced slightly, about 3 minutes..
  • Serve over rice, sprinkled with fresh basil.

This is easy and my kids love it. I've also made it with cubed pork from cheap pork chops. You can spice this dish up with crushed red pepper flakes. Serve over rice. Don't substitute dried basil, though! It has to be fresh! And though it sounds like a lot of basil, that makes the dish.

1 tablespoon soy sauce
2 tablespoons water
1 tablespoon white sugar
2 pounds skinless, boneless chicken breast halves, cut into small pieces
1 tablespoon vegetable oil
5 green onions, sliced
3 cloves garlic, chopped
3 tablespoons vegetable oil
2 (6 ounce) bags fresh baby spinach leaves
1 cup thinly sliced fresh basil

Steps:

  • Combine soy sauce, water, and sugar in a bowl.
  • Marinate chicken in soy sauce mixture for 30 minutes.
  • Heat 1 tablespoon oil in a large skillet or wok over medium heat.
  • Cook and stir green onions in oil for 1 minute. Add garlic and cook and stir for 1 minute. Transfer to a small bowl.
  • Pour 3 tablespoons oil into the skillet. Cook and stir chicken and marinade until chicken is no longer pink in the center and juices run clear, about 5 minutes.
  • Add spinach leaves to chicken. Cover for 4 minutes stirring occasionally.
  • Stir green onion mixture into chicken and spinach; cook to reheat onions, 1 to 2 minutes.
  • Stir in basil and cook until heated, 1 to 2 minutes. Serve!

1 1/2 pounds boneless, skinless chicken breast halves, cut crosswise into 1/4-inch-thick slices (longer pieces cut crosswise in half again)
1 tablespoon cornstarch
Coarse salt and ground pepper
6 teaspoons vegetable oil
1 small onion, halved and cut into 1/4-inch-thick wedges
2 bell peppers (red, yellow, green, or a mix, ribs and seeds removed), cut into 1/4-inch-wide strips
6 garlic cloves, minced
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 1/2 cups fresh basil leaves, larger leaves torn in half
Cooked white rice, for serving (optional)

Steps:

  • Pat chicken pieces dry with paper towels. In a medium bowl, toss chicken with cornstarch until coated; season generously with salt and pepper.
  • In a large wok or nonstick skillet, heat 2 teaspoons oil over medium-high. Cook half the chicken, turning once, until browned, but not completely cooked through, 2 to 3 minutes total. Transfer to a plate. Repeat with another 2 teaspoons oil and remaining chicken. Transfer chicken to plate. Set aside. Wipe out skillet with a paper towel.
  • To skillet, add remaining 2 teaspoons oil, onion, and bell peppers; cook over medium-high heat, tossing often, until beginning to brown, 3 minutes. Add garlic; cook until fragrant, about 1 minute.
  • Add 1/4 cup water, vinegar, soy sauce, and chicken to pan; cook, tossing, until chicken is cooked through, about 1 minute. Remove from heat. Stir in basil leaves. Serve immediately, over white rice, if desired.

  • In a skillet or wok, heat the oil over medium-high heat. Stir in the onion, ginger, and garlic, and cook until lightly browned. Mix in chicken strips, and cook about 3 minutes, until browned. 1 lb boneless skinless chicken breast half
1 tablespoon peanut oil
1 clove garlic, minced
1 tablespoon minced fresh ginger
1/4 teaspoon crushed red pepper flakes
2/3 cup chicken broth
1 tablespoon asian fish sauce (nam pla)
2 teaspoons cornstarch
3 cups lightly packed fresh basil leaves, rinsed
salt

Steps:

  • Slice chicken into 1/8-inch thick strips, 2 to 3 inches long.
  • Place a nonstick frying pan or wok over high heat.
  • When hot, add oil, garlic, ginger, pepper flakes and chicken.
  • Stir-fry until chicken is no longer pink in the center 3 to 4 minutes.
  • In a small bowl, mix broth, fish sauce and cornstarch until smooth.
  • Add to pan and stir until sauce is boiling, about 1 minute.
  • Add basil leaves and stir just until barely wilted, about 30 seconds.
  • Add salt to taste and pour into a serving bowl.
