CHICKEN SPINACH FETA PIE RECIPE BY TASTY

Steps:
- Season the chicken breasts with the salt, pepper, garlic, greek oregano, and olive oil.
- Place the chicken breasts in a large skillet on medium-high heat with a tablespoon of oil. Cook until the first side is a dark golden brown, about 5 minutes. Flip the chicken and cook the other side until equally brown, about 5 minutes. Turn the heat to low and cook the chicken until it's cooked through about 10 more minutes. Set the chicken aside to cool and then slice it.
- Preheat oven to 400°F (200°C).
- To a bowl, add the ricotta, chopped frozen spinach, feta cheese, chopped green onion, beaten eggs, dill, and pepper, and stir to combine.
- Place the butter into a large shallow dish. Take about 5 sheets of the thin phyllo dough and dip it in the butter.
- Place the buttered phyllo into a 9 inch (23 cm) springform pan. Make sure the dough complete covers the sides and hangs over the edges of the pan. Use as many sheets as needed to create a even layer all around.
- Spread half of the feta spinach mixture on the bottom of the springform pan on top of the phyllo dough. Shingle one layer of the sliced cooked chicken, and spread the other half of the spinach feta mixture. Make sure each layer is tightly pressed.
- Place the chopped tomatoes on the outer rim of the pie. Place a ring of chopped red onion, and then place chopped kalamata olives in the center.
- Fold the phyllo dough from the edges of the pan to the center and cover the top of the pie with 3 more batches of buttered phyllo.
- Cover the pie with aluminum foil and bake for 1 hour. Remove the aluminum foil cover and cook for about 20 more minutes, until the top is golden brown.
- Let rest at room temperature for at least 30 minutes.
- Remove the pie from the springform pan, slice, and serve.

CHICKEN POT PIE WITH MASHED POTATO CRUST

- If you are cooking the pot pies immediately, preheat the oven to 375.
- Start by making the potatoes: put the potatoes into a saucepan, cover them with water and bring to a boil. Simmer until the potatoes are tender, about 15 minutes. Drain and return to the pot.
- Add 4 tablespoons of butter and 1 teaspoon salt. Mash with a potato masher and then add the pepper and the milk. Stir in half the scallions and set aside.
- In another large saucepan, melt 2 tablespoons of butter over medium high heat. Add the onions and stir until they are starting to turn tender, about 3 minutes.
- Whisk in the flour, followed by the chicken broth. Simmer for 5 minutes.
- Add the carrots, celery, 1 teaspoon salt and the sage. Simmer for another 5 minutes.
- Add the milk and the chicken and simmer for another 5 minutes.
- Spoon the chicken mixture into one large casserole or individual casseroles. Top with the mashed potatoes, spreading them to the sides of the casserole. At this point you can put them in the fridge if you are baking them later, just let them come to room temperature before you bake.
- Place the casserole on a rimmed baking dish and bake for 30 minutes. Cool slightly, garnish with remaining scallions and serve!

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain. Meanwhile, place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and set aside.
- Mash the potatoes with milk and salt. Brush a deep 9 inch pie dish with olive oil and press the potatoes in. Brush with remaining olive oil. Bake in preheated oven for 30 minutes or until lightly browned.

- Preheat oven to 400 degrees.
- Lightly grease a 9-inch glass or ceramic pie dish with 1/4 teaspoon oil. Toss potatoes with 1 teaspoon oil and 1/8 teaspoon each salt and pepper. Press into an even layer in pie dish, up the sides like a crust. Bake until golden brown at the edges and dry, about 20 minutes. Let cool.

- Toss parsnip, turnip, carrots, garlic, onions and canola oil. Roast in oven at 400 for 30 minute
- Boil potatoes in salted water until tender. Mash and add sour cream and salt and pepper to taste.
- Steam green beans until just tender, either over boiling potatoes or in microwave.
- Melt butter in saucepan and add flour. Cook until roux is lightly golden and flour smells nutty. Add stock and thyme sprigs. Bring to a simmer and continue to stir until sauce thickens. Remove thyme stems. Season to taste with salt and black pepper.
- Combine roasted vegetables, diced chicken, corn, green beans and sauce. Place in deep cassarole dish and top with mashed potatoes.
- Bake in 350 oven until bubbling, about 30 minute Place under broiler for 5 min to brown top of potatoes.
- Let stand 5 min before serving.

Quiche works very well. Add seasonings of your family's choice for more variety. Use ham, bacon, or whatever protein. This quiche needs flavor boosters, so use your spice cabinet. Easily make this a Tex-Mex dish with diced green chiles and a touch of cumin. You could also add crumbled freshly cooked bacon to add more flavor. I served this with sliced avocado and tomatoes for a perfect light dinner.

- Preheat oven to 375ºF. You will need a large (10-12-inch) cast iron or oven-ready skillet, with a lid or with foil to cover it.
- Peel the potatoes and slice them crosswise into thin rounds about 1/8-inch thick. (see notes) Line a plate with a double layer of paper towels. Heat 2 tablespoons of oil in the skillet over high heat until hot. Reduce heat to medium and cook potatoes in batches, as many as will fit in a single layer in your pan, for 2 minutes per side until browned in spots and softened. Transfer potatoes to the paper-towel-lined plate to drain. Sprinkle them with a pinch of salt and a few grinds of pepper. Repeat with remaining potatoes, adding oil to the pan as needed and layers of paper towels to the plate, as needed. (I did it in 4 batches).
- Wipe out the skillet you used for the potatoes. Melt the butter in the skillet over medium heat. Add onions and cook, stirring occasionally, until tender and translucent, 5-6 minutes. Add garlic and cook, stirring, for 1 minute. Turn up the heat to medium-high and add the chopped spinach, a few handfuls at a time, stirring and tossing each time you add a bunch, until it’s wilted enough to add another bunch. Repeat until all the spinach is wilted, 5-7 minutes. Transfer the spinach-onion mixture to a large bowl. Gently tip the bowl over the sink and pour off any excess liquid. When the spinach mixture has cooled for ten minutes or so, add the rest of the filling ingredients: green onions, dill, eggs, feta, salt, pepper and nutmeg, if using. Toss to combine.
- Again, wipe out your skillet and lightly oil or butter the sides and bottom. Arrange potato slices on the bottom and around the sides of the skillet, overlapping them slightly to create a solid crust (see photo in post). If you have any potatoes left over, they are delicious as is or dipped in ketchup!
