I had broccoli the other night and didn't want to cook (or throw out) the stem, so I cut it up and decided to use it in a soup. This was my result. =) It kind of reminds me of some kind of soup you could get in a Chinese restaurant for some reason. =) Also, this recipe is for two servings, so only eat half of it if you're on the HCG diet. If you want to add or remove certain spices, feel free to do so!! =)

Number Of Ingredients 8

3 -4 cups water
6 ounces chicken, pre-cooked, cubed
2 cups broccoli stems, chopped
4 tablespoons Braggs liquid aminos (optional, may add more or less if desired)
1 -2 tablespoon onion, chopped
1 -2 teaspoon garlic, powdered
1 teaspoon cumin, powdered
1 dash pepper, ground, to taste

Steps:

  • Pour water in a medium sized pot on medium heat and add all ingredients.
  • Let simmer for 20-60 minutes (until broccoli is tender).
  • Eat half and save the other half for the next day or whenever. =).

A really nice soup, with just enough kick. The meatballs are superbly delicious and you don't feel like you're depriving yourself. Recipes counts for 1 protein, 1 vegetable, and 1 Melba toast.

Number Of Ingredients 17

100 g chicken breasts, ground
1 teaspoon onion, finely chopped
1 garlic clove, minced
1 pinch sage
1 pinch marjoram
1 pinch thyme
1 dash onion powder
1 dash garlic powder
1 melba toast, crushed
2 cups low sodium chicken broth
2 garlic cloves, minced
1 bay leaf
1 dash cayenne pepper
1 dash sea salt
1 dash pepper
4 celery ribs, finely chopped
1 tablespoon apple cider vinegar

Steps:

  • Meatballs: In a small bowl, combine first 9 ingredients (ground chicken, minced onion, garlic, sage, marjoram, thyme, onion powder, garlic powder and Melba toast crumbs). Form into small meatballs (about 6).
  • Broth: In a pot, combine broth, garlic and remaining spices (bay leaf, cayenne, salt, pepper). Bring to a boil.
  • Add meatballs to the broth, reduce heat, cover and cook for 30 minutes, until meatballs are cooked through. Add celery the last 5-10 minutes of cooking.
  • Add apple cider vinegar just before serving.

4 cups chicken broth (College Inn, low-sodium, fat free is best. You may use more if you want a more watery soup... just r)
400 g chicken breasts, diced
4 cups celery, chopped
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1/2 teaspoon cumin seed (optional)
1/4 teaspoon celery seed (optional)
salt and pepper, to taste

Steps:

  • Place all ingredients in a pan and cook until chicken is thoroughly cooked and celery is cooked to desired firmness.
  • Remove from heat and serve. Or put some in a container to freeze for when you need it. =).
