SIMPLE CHICKEN SOUP

Simple Chicken Soup image

This comfort food classic is just as flavorful and soul-satisfying as Grandma's chicken soup, but where hers took several hours-or a day-to make, ours takes under an hour. Instead of long-simmered stock, we start with store-bought chicken broth and water but enrich them with stock vegetables and the carcass, bones and meat of a leftover roast chicken.

Provided by Food Network Kitchen

Time 55m

Yield 8 cups (4 servings)

Number Of Ingredients 9

Carcass and bones from one 4- to 5-pound roast chicken (or a mild-flavored rotisserie chicken)
4 cups low-sodium chicken broth
2 medium carrots, sliced into 1/4-inch-thick rounds
2 celery stalks, sliced into 1/4-inch-thick slices
1 medium onion, chopped
1 bay leaf
1/2 cup white rice
2 tablespoons chopped parsley
Kosher salt

Steps:

  • Put the bones and carcass from a leftover chicken (they can be in pieces) in a large pot. Cover with the broth and 4 cups water. Bring to a boil over medium-high heat, reduce to a simmer and cook for 20 minutes. Skim any foam or fat from the broth with a ladle as necessary.
  • Remove the bones and carcass with tongs or a slotted spoon; set aside to cool. Add the carrots, celery, onion and bay leaf to the broth, bring back to a simmer and cook until the vegetables are about half cooked (they will still have resistance when tested with a knife but be somewhat pliable when bent), about 10 minutes. Stir in the rice (to keep it from sticking to the bottom), and cook until the grains are just al dente, 10 to 12 minutes.
  • Meanwhile, when the carcass and bones are cool enough to handle, pick off the meat, and shred it into bite-size pieces.
  • When the rice is done, add the meat to the broth and simmer until warmed through, about 1 minute. Stir in the parsley, and season with 1/2 teaspoon salt or more to taste. Serve hot.

CHICKEN SOUP FROM SCRATCH

Chicken Soup From Scratch image

Chicken soup is one of the most painless and pleasing recipes a home cook can master. This soup has all the classic flavors (celery, carrot, parsley) but has been updated for today's cooks, who can't easily buy the stewing hen and packet of soup vegetables that old-fashioned recipes used to call for. A whole bird provides the right combination of fat, salt and flavor. Don't be tempted to use all white meat, as the flavor won't be as round. Because making soup involves the bones and deep tissues of the bird, it is particularly reassuring here to use the highest-quality poultry you can find. This method produces a fragrant, golden, savory soup you want to eat all winter long; it's a perfect backdrop for noodles, rice or matzo balls.

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 15

1 chicken, 3 to 3 1/2 pounds, with skin, cut up
3 stalks celery, with leaves, cut into chunks
2 large carrots, cut into chunks
2 yellow onions, peeled and halved
1 parsnip or parsley root (optional)
About 1 dozen large sprigs parsley
About 1 dozen black peppercorns
2 bay leaves
2 teaspoons kosher salt, more to taste
3 tablespoons reserved chicken fat, more if needed
3 leeks, trimmed, halved lengthwise, rinsed and sliced crosswise into thin half-moons
3 large carrots, peeled and cut into small dice
Kosher salt and ground black or white pepper
Egg noodles (fresh or dried), such as packaged wide noodles, spaetzle, fettuccine or pappardelle cut into short lengths (see note)
Finely chopped herbs, such as parsley, scallions, dill or a combination

Steps:

  • Place the chicken, celery, carrots, onions, parsnip (if using), parsley, peppercorns, bay leaves and salt in a large soup pot and cover with cold water by 1 inch.
  • Bring to a boil over high heat, then immediately reduce the heat to very low. Adjust the heat until the soup is "smiling": barely moving on the surface, with an occasional bubble breaking through. Cook uncovered, until the chicken is very tender and falling off the bone, 1 to 1 1/2 hours.
  • When cool enough to handle, use tongs to transfer chicken from the pot to a container. Taste the broth and continue to simmer it until it is concentrated and tasty. Strain broth through a fine sieve (or a colander lined with cheesecloth) into a separate container. Discard all the solids from the strainer (or reserve the vegetables, chill and serve with vinaigrette, if you wish).
  • Refrigerate chicken pieces and broth separately for at least 8 hours (or up to 3 days), until a thick layer of yellow fat has risen to the top of the broth.
  • When ready to finish the soup, use your fingers to separate chicken breast meat from bones and skin. Discard bones and skin. Use two forks to pull the breast meat apart into soft chunks, or use a knife and cut into bite-size pieces. (Reserve dark meat for another use.)
  • Skim chicken fat from top of broth and set aside. Place 3 tablespoons of the fat in a soup pot with a lid. Add leeks, stir to coat, and heat over medium heat until leeks begin to fry. Then reduce the heat to a gentle sizzle and cook, stirring often, until slightly softened, about 3 minutes.
  • Add carrots, sprinkle with salt, stir, and cover the pot. Cook until vegetables are just tender, about 5 minutes more. (Keep in mind that vegetables will continue to cook in the soup.) Do not brown.
  • Pour broth into pot with vegetables and heat to a simmer. Add noodles and simmer until heated through, soft and plumped with chicken broth. Add the breast meat, then taste broth and add salt and pepper to taste. For best flavor, soup should have some golden droplets of fat on top; if needed, add more chicken fat one teaspoon at a time.
  • Serve immediately, in a tureen or from the pot, sprinkling each serving with herbs.

HOMEMADE CHICKEN SOUP FROM THE CARCASS

Homemade Chicken Soup From the Carcass image

In this recipe video, I show you how to make a homemade chicken soup...from scratch! I make chicken soup, just about every time we have a roast chicken, and I've got leftover chicken and bones. It is an easy soup recipe to make, and of course tastes great. It's also really easy to modify the soup with other ingredients and flavors. Here, I toss in some corn, cut fresh off the cob, as well as some orzo pasta. Of course by putting in some spaghetti or linguini noodles you can keep it a more traditional version. For the full list of ingredients and the write up that shows how to make the soup step by step, head over to the recipe page linked below. Hope you enjoy this chicken soup!

Steps:

  • One the greatest by-products of roasting a whole chicken (which I do as a pretty frequent Sunday meal), is the opportunity to make Homemade Chicken Soup with the leftover bones & carcass. Not sure if there is a food that feels more comforting and homey than Chicken Soup. Just about every family and every culture has a version, and it's one of those foods that just makes you feel good. This Homemade Chicken Soup Recipe is not hard to make, as I'll do with the leftover chicken(s) after the Sunday Roast (although you could start from an uncooked chicken). I'll show you how to make the broth from the carcass, and then put it together with the classic vegetables, and some pasta. Of course, it's easy to add other ingredients to make it your own. Hope you enjoy this Chicken Soup Recipe! Recipe Overview & Keys to Success To make the best Chicken Soup, just follow these few cooking techniques: Make your own chicken broth/stock with left over bones/carcass (you can even freeze them until you have enough) While it takes a bit more time, the essence of the soup is the broth, and you can make much better broth than you can buy Try to get the vegetables as uniformly cut as possible. Not only will that help ensure they cook evenly, but it makes the chicken soup easier, and more pleasant to eat. If you're using leftover chicken like me, make sure to pull the chicken meat you want in the soup, off the carcass before making the broth. While the bones simmer and make the broth, the meat is going to give up all it's flavor and get every dry - you won't want that in the soup. Instead we'll add the meat back to the soup at the last minute Note, you can freeze the leftover chicken carcasses and make the soup another day; or better yet, make the chicken broth, and freeze that. Then you can pull it out to make the chicken soup, whenever you want RECIPE FOR HOMEMADE CHICKEN SOUP Ingredients (for 5) 1 - 2 left over chicken carcasses (with some meat on the bone) 1/2 cup pieces of chicken meat 2 carrots diced into quarter inch pieces 1 large celery rib diced into quarter inch pieces 1 yellow onion diced 2 garlic cloves mined 1/3 cup orzo pasta (you can use traditional spaghetti or any pasta you'd like) 1 teaspoon thyme 1 ear of corn (optional) Homemade Chicken Soup From the Carcass Assuming you're using leftover roast chicken, remove any remaining meat from the carcass and dice it for the soup If you need more chicken meat, you can certainly cook off another breast and dice it up as well Place the chicken carcass(es) in a stock pot and cover with water by 2 - 3 inches Bring the water up to a very light simmer, and continue to simmer for 45 minutes to hour to make the chicken broth Remove the chicken bones from the broth and discard. Pour the broth into a bowl, through a strainer to collect any small bones or bits of chicken, and set the broth aside Clean the soup pot, and put it back over medium heat, coat with olive oil Add the carrots, onion, celery and garlic. Season with salt and pepper and stir to combine Continue to sweat the vegetables until the onions are just translucent Add the thyme leaves, and the chicken broth Bring everything up to a simmer again, and cook until the carrots just soften (about 10 minutes) Add the corn, chicken and orzo pasta Cook for another 5 - 8 minutes until the orzo is tender Taste and re-season the soup if needed Serve up this delicious Homemade Chicken Noodle Soup with some crusty bread and a nice salad, can you've got a perfect, warming, comforting meal. Hope you enjoy it! Wine Recommendation: Soups can make for a tough wine pairings. I don't really like reds for chicken soup, as the flavors are likely to drown (no pun intended) the lighter soup. Similarly, so would full bodied or oaky whites. I'd suggest you go with an austere white wine, like a Sauvignon Blanc from the Loire Valley in France. The wines are generally fairly tight, minerally, and clean tasting, and should accent the sweet elements in the soup. Hope you enjoy it!

CLASSIC HOMEMADE CHICKEN SOUP

Classic Homemade Chicken Soup image

This is an old fashioned chicken soup the way my grandmother made it. She passed it down to my mother and then to me. Since this is a handed down recipe, the measurements aren't exact, and it's more about using your "eye" and "judgment".

Provided by onipar

Categories     Clear Soup

Time 2h20m

Yield 6-8 serving(s)

Number Of Ingredients 11

1 (2 -4 lb) roasting chickens, cut into pieces. you can also buy chicken pieces already cut
2 stalks celery, cut up
2 turnips, halved (you can leave these whole if they are small)
2 parsnips, cut up
2 carrots, cut up
1/2 bunch fresh dill (or more to taste)
1/2 bunch fresh parsley
2 onions, halved
3 -4 garlic cloves (or more to taste)
water, to cover
salt and pepper

Steps:

  • Cut up your chicken into pieces (thighs, legs, breasts, etc) and place in a large stock pot.
  • Fill with cold water to cover and put on high heat as you assemble the rest of the ingredients.
  • Cut up all of your veggies. You can do this any way you like, but I like to leave these in large pieces so they don't get too mushy during the long cooking time.
  • You can tie your dill and parsley together if you like.
  • Put all the veggies and herbs into the pot.
  • Add extra water if needed.
  • Bring to a boil, and then let simmer.
  • Simmer for 2-4 hours*.
  • *The cook time is largely up to you. I like to cook mine for many hours to get all of the flavors out of the chicken, but really, once the chicken is cooked through, you can take it off the fire.
  • If you prefer to have smaller pieces of carrots, potatoes, or celery in your soup, dice as much as you want and put it into the pot 30-40 minutes before it's done.
  • ***TIP: There will be A LOT of fat on the top of this soup from the chicken skin. Traditionally, you would cook this the day before, refrigerate over night, and then remove the hardened fat layer. Easy as pie. But, if you want it the same day, you will have to skim the fat as the cooking progresses. So watch the soup over the 2-4 hours of cooking and skim as you go.
  • Add salt and pepper to taste. (you will need a lot of salt. Don't fret. Start off with a teaspoon. Taste. Add another pinch. Taste. Add. And so on until you reach desired flavor.
  • Take all the chicken out of the pot and remove the meat from the bones and skin. Discard the bones and skin. You can replace the meat into the pot or leave it on the side for people to put into their individual bowls.
  • Make egg noodles, rice, or dumplings to accompany.
  • Eat and enjoy.

BASIC CHICKEN SOUP

Basic Chicken Soup image

Everyone has their own favorite chicken soup recipe, but rarely have so few ingredients added up to so much comfort. This version has classic flavors and, thanks to a simplified method, cooks more quickly than traditional chicken soups (the dish is ready in a little over an hour). There's no need to make a separate stock; the vegetables and meat form their own satisfying broth.

OLD FASHIONED CHICKEN SOUP FROM SCRATCH

Old Fashioned Chicken Soup from Scratch image

Provided by Michelle Dunster - dishesanddustbunnies.com

Number Of Ingredients 12

6 lb whole chicken (I used 2 small chickens about 3lbs each)
2 cups onions, chopped
4 cups celery, chopped (This is about 1 bunch of celery)
6 cloves of garlic, minced
4 cups of carrots, chopped into coins
2 bay leaves
1 tsp dried thyme
1/4 tsp salt
1/4 tsp pepper
1 1/2 tsp dried parsley flakes
Water, as needed
Additional salt and pepper, to taste

Steps:

  • Put your chicken into the stock pot and cover with water.
  • Add a little salt and bring to a boil. Once it comes to a good rolling boil for a few minutes, lower the heat to between LOW and MEDIUM. Put the lid on and let it cook for about 2 hours on the stove.
  • Open the pot and check to see how the chicken is doing. When the meat is more tender and JUST STARTS to come off the chicken it's time for the next step.
  • Using tongs or another kitchen tool (I like to use a large roast beef fork) remove the chicken from the pot and set on a cookie sheet or large plate. The only thing that should be left in the pot is the liquid.
  • While the chicken cools for a couple minutes so you can work with it easier, skim off some of the fat that's accumulated on the surface of the pot. You don't have to remove it all since it does give the soup a great flavor but if there's a lot you should try to remove some. The amount of fat you have on the top depends on the chicken itself - some are fattier than others.
  • Using a fork and knife, remove as much meat as possible from the chicken and drop it into the pot. Do not cut the meat into chunks - let the meat naturally come apart as it continues the cooking process.
  • Make sure that you add the leg bones to the pot along with the meat. The bones are extremely important in making the soup taste perfect.
  • Once all the meat is removed from the chicken you can discard the unused parts.
  • Now add the vegetables, garlic and herbs to the pot.
  • Add some water to the pot until the veggies, etc are covered.
  • Bring to a rolling boil once more for a couple minutes.
  • Lower the heat to about between LOW and MEDIUM, cover and let it cook for 2 more hours.
  • Stir the soup a couple times while it cooks.
  • At the end of cooking give the soup a taste and add a little more salt and pepper to taste.
  • Let it cook for a couple more minutes and remove the leg bones and bay leaves.
  • Once done - Enjoy!

CHICKEN SOUP WITH RICE FROM SCRATCH

Chicken Soup With Rice from Scratch image

This recipe is from a Pillsbury Classic cookbook and, with a few minor modifications, I wanted to share it. It is a truly home-made with love chicken soup. I am making it today because....I feel a cold coming on and just want to curl up with a steaming bowl of deliciousness!! :-) I suppose you could make this in a crock pot but the thought of a soup pot on the stove is comfort in itself!! (Note: If you prefer noodles to rice, add 1 cup of uncooked egg noodles during last 10 minutes of cooking time).

Provided by Sues Kitchen

Categories     Chicken

Time 3h

Yield 8 serving(s)

Number Of Ingredients 13

2 1/2-3 lbs frying chicken, cut up
10 cups water (or you can use half chicken broth and half water)
1 medium onion, chopped
salt
1/2 teaspoon thyme leaves
2 garlic cloves, chopped
1 bay leaf
6 peppercorns or 1/4 teaspoon pepper
2 stalks celery, sliced
2 carrots, sliced
1/2 cup uncooked rice
1/2 cup frozen peas
1 -2 tablespoon fresh parsley (optional) or 1 -2 tablespoon sliced green onion (optional)

Steps:

  • Combine chicken and water in large pot. Bring to a boil. Skimm off any scum that rises to the top.
  • Reduce heat to med/low; cover and simmer 15 minutes.
  • Add onion, salt, thyme, bay leaf, garlic and peppercorns. Simmer covered for additional 35 to 45 minutes or until chicken falls off the bone.
  • Remove chicken, bay leaf and peppercorns from broth; cool.
  • Remove chicken from bones; cut into bite size pieces.
  • Skim fat from broth. You may want to put broth into the fridge for several hours or overnight. It is easier to remove the fat.
  • Bring broth to a boil. Stir in chicken pieces, celery, carrots and rice - I add a little more onion too. Reduce heat; cover and simmer for 30 minutes or until veggies/rice are tender. I add the peas for the last 10 minutes. If you are using noodles instead of rice, add uncooked noodles at this stage.
  • Add parsley or green onion if desired.

  • Place the chicken in a large Dutch oven or soup pot. Cover with water. Bring to a boil, reduce heat and simmer until the chicken is falling off the bone, about an hour. Remove the chicken, and let cool to touch. Remove the meat from the bones.
  • Add the onion, carrots, celery, garlic, bay leaves, sage, thyme, rosemary, and marjoram to the broth. Bring back to a boil, reduce heat and simmer until the veggies are tender, 15-20 minutes.
  • While the broth is simmering, make your egg noodles by mixing together the flour and salt in a medium-sized mixing bowl. Make a well in the center, and add in the egg yolks and egg. Using clean fingers, mix together until it is lumpy and yellow (it should look a bit like scrambled eggs). Add in water a few tablespoons at a time, kneading after each addition, until the dough comes together to form a ball.
  • Flour a work surface, and roll out the dough until paper-thin. Using a sharp knife or a pizza cutter, cut into 1/4" x 2" pieces.
