BASIC CHICKEN SOUP
Everyone has their own favorite chicken soup recipe, but rarely have so few ingredients added up to so much comfort. This version has classic flavors and, thanks to a simplified method, cooks more quickly than traditional chicken soups (the dish is ready in a little over an hour). There's no need to make a separate stock; the vegetables and meat form their own satisfying broth.

Steps:
- Bring chicken, water, and 1 tablespoon salt to a boil in a large stockpot. Skim foam. Add onions, celery, and garlic. Reduce heat. Simmer, partially covered, for 30 minutes.
- Remove breast, and set aside. Add carrots. Simmer, partially covered, for 40 minutes.
- Remove remaining chicken; discard back and wings. Let cool slightly. Remove meat from bones, and cut into bite-size pieces.
- Stir in desired amount of chicken; reserve the rest for another use. Skim fat. Season with salt.

CHICKEN SOUP FOR DUMMIES
A quick and easy "comfort food" soup for those cold nights. My family loves it and it's very easy to make. Homemade taste in a pinch!

Steps:
- 1. Heat olive oil in a 6-8 qt pot over medium heat. Add minced garlic. Saute until just beginning to brown. Add onions, saute until translucent
- 2. Add chicken broth and bring to a boil. Turn heat down to medium, add chicken, potatoes, and carrots. Simmer, stirring occasionally, until vegetables are tender and chicken is cooked, about 45 minutes.
- 3. Just before serving, add cooked orzo, rice, or other pasta. I used thin spaghetti, broken into 2 inch size pieces. Stir to mix. Serve soup with salt and pepper to taste, and grated parmesan cheese, if desired.
BEGINNER CHICKEN AND DUMPLINGS

- Melt the butter in a large pot over medium heat. Stir in the onions, and cook for a few minutes until they begin to soften. Add the chicken breast and thigh meat; cook and stir until the chicken is no longer pink in the center, about 10 minutes. Pour in the water and cream of chicken soup; season with chicken bouillon and poultry seasoning. Bring to a simmer over medium-high heat.
- Meanwhile, pour the milk into a mixing bowl, and stir in the baking mix until a dough forms. Once the soup is simmering, drop the dumpling mix in by the spoonful. Reduce heat to medium-low, cover, and simmer until the dumplings are no longer doughy in the center, about 20 minutes. Turn the dumplings over after 10 minutes to ensure they cook evenly.

CHICKEN AND MUSHROOM RICE CASSEROLE FOR DUMMIES
An adaptation, IMHO, a perfection of an old standard. Mom used to make her version in the morning, set the oven timer, and come home to a delicious meal. (Use frozen chicken if you do this.)

- Preheat oven to 375.
- Grease 3 quart (13x9x2 ideally) casserole with butter, save remaining.
- In a vessel than can hold and measure more than 4 cups, Mix Hot water with chicken base until dissolved.
- Add cream of mushroom soup.
- Add sliced mushrooms.
- Add water to measure 4 cups total.
- Stir mixture thoroughly.
- Add rice directly into mixture, mix well.
- Pour mixture into greased casserole.
- Press chicken into mixture in casserole until partially covered. (As much or as little as you can fit or want, the rice is great alone as well) I prefer 5-6 frozen chicken thighs.
- Distribute remaining butter over top of casserole.
- Cover with foil.
- Bake for 75 minutes or until chicken is cooked.
- Salt & Pepper to taste, if necessary.
- Optional: If chicken is boneless, cut chicken into pieces with kitchen shears while still in casserole. Stir and serve.

SIMPLE CHICKEN SOUP
This comfort food classic is just as flavorful and soul-satisfying as Grandma's chicken soup, but where hers took several hours-or a day-to make, ours takes under an hour. Instead of long-simmered stock, we start with store-bought chicken broth and water but enrich them with stock vegetables and the carcass, bones and meat of a leftover roast chicken.

- Put the bones and carcass from a leftover chicken (they can be in pieces) in a large pot. Cover with the broth and 4 cups water. Bring to a boil over medium-high heat, reduce to a simmer and cook for 20 minutes. Skim any foam or fat from the broth with a ladle as necessary.
- Remove the bones and carcass with tongs or a slotted spoon; set aside to cool. Add the carrots, celery, onion and bay leaf to the broth, bring back to a simmer and cook until the vegetables are about half cooked (they will still have resistance when tested with a knife but be somewhat pliable when bent), about 10 minutes. Stir in the rice (to keep it from sticking to the bottom), and cook until the grains are just al dente, 10 to 12 minutes.
- Meanwhile, when the carcass and bones are cool enough to handle, pick off the meat, and shred it into bite-size pieces.
- When the rice is done, add the meat to the broth and simmer until warmed through, about 1 minute. Stir in the parsley, and season with 1/2 teaspoon salt or more to taste. Serve hot.

Not much to say...if you're soup impaired (like me), this is simple and good. I came up with this by using ideas from many different recipes and only adding ingredients my family likes.

Steps:
- Place chicken and water in stock pot and bring to a boil.
- Reduce to a simmer and add remaining ingredients EXCEPT PASTA; cover.
- Simmer for 45 minutes and then remove chicken to a plate.
- Add pasta to broth and bring back to a boil; reduce to low/med heat, do not cover; let cook for about 20 minutes.
- Meanwhile, when chicken is cool enough to handle, remove skin and discard; pull bite sized pieces of chicken from bones and add back to soup, discarding bones.
- By this time, your pasta should be tender; if not, allow to simmer a few more minutes.
- Check to see if you need more salt and/or pepper and then serve.

- Clear out both openings of the chicken and remove any giblets. Pat dry the chicken with a paper towel and place in a large stockpot. Fill the pot with cold water until the chicken is covered by about an inch of water. Place the stockpot of chicken on the stove over medium-high heat. When the water comes to a boil, turn the heat down to medium-low to let simmer.
- During the first part of the simmering process, you will see foam rise to the top of the water and clump together. Use a large spoon to skim off the foam and discard. Once all the foam has stopped producing, add back hot water to the pot so the chicken is covered by at least an inch again.
- Add the carrots, celery, onion, parsnip, peppercorns, kosher salt, cloves, bay leaves, parsley and dill to the pot of chicken stock. Cover with a lid, but allow some venting and let the stock cook at a steady simmer. If it starts to boil too hard, the broth results will be cloudy. (steady bubbles coming up with steam, but not a rolling boil). Let the stock cook for 1 1/2 to 2 hours until the chicken meat is cooked and tender. You may have to occasionally add more water to keep the chicken covered.
