Time 40m

Yield 4

Number Of Ingredients 4

5 slices bacon
4 ounces thinly sliced ham
1 pound skinless, boneless chicken breast halves - cut into chunks
¼ cup shredded Cheddar cheese

Steps:

  • Place the bacon into a large skillet over medium-high heat, and fry until crisp. Drain most of the grease, leaving enough to coat the bottom of the pan. Hold up the pieces of bacon with tongs, and use scissors to snip it into pieces, letting it fall back into the pan.
  • Tear the ham into small pieces, and sprinkle them in with the bacon. Stir for a minute, then add the chicken pieces. Cook, stirring occasionally, until the chicken is cooked through, about 10 minutes.
  • At the very end, reduce the heat to medium-low, and sprinkle some of the cheese to coat everything. Stir to melt into a sauce that should coat all of the meat. Sprinkle in the rest of the cheese, and cook until everything is coated and cheese has thickened slightly, about 1 minute.

HOMEMADE CHICKEN CACCIATORE, SICILIAN-STYLE

Homemade Chicken Cacciatore, Sicilian-Style image

This recipe was shown to me by my Sicilian employer years ago in Lynchburg, VA. It is made from scratch with tomatoes, onions, peppers, wine, and seasonings. Do not cook chicken before adding to this recipe; it must all blend together to get this particular flavor. Leaving the skin on the chicken helps the flavors to blend together while cooking. You can remove the skin after cooking.

Time 2h25m

Yield 6

Number Of Ingredients 13

1 tablespoon butter
1 large onion, chopped
1 large green bell pepper, sliced thin
1 teaspoon crushed garlic
2 (14.5 ounce) cans diced tomatoes, drained and juice reserved
1 cup Burgundy wine
1 ½ tablespoons Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon garlic salt
1 whole chicken, cut into pieces
2 tablespoons all-purpose flour
1 (16 ounce) package spaghetti

Steps:

  • Melt the butter in a large stockpot over medium heat. Cook the onion, bell pepper, and garlic in the melted butter until they begin to soften, about 3 minutes. Add the tomatoes, wine, Italian seasoning, salt, pepper, and garlic salt; cook and stir until the mixture just begins to boil. Reduce the heat to medium low; add the chicken and cook until the meat is tender enough to fall off the bone, about 1 1/2 hours. Remove the bones and skin from the chicken, returning the meat to the pot.
  • Heat 3/4 cup of the reserved liquid from the tomatoes in the microwave until just warmed. Stir the flour into the tomato liquid until thick. Add to the stockpot and stir continually until the mixture begins to thicken. Remove from heat and allow to sit for about 15 minutes.
  • While the chicken mixture rests, bring a large pot of lightly-salted water to a boil. Stir the spaghetti into the water and return to a boil. Cook until the pasta is slightly tender but still firm to the bite, about 12 minutes. Drain. Ladle the chicken mixture over the drained spaghetti to serve.

CHICKEN SICILIAN (PAUL'S)

CHICKEN SICILIAN (PAUL'S) image

Categories     Chicken     Olive     Sauté     Dinner

Number Of Ingredients 11

2 chicken breasts, cleaned and rinsed
½ can whole plum tomatoes, tomatoes should be de-stemmed and chopped roughly, no extra liquid
¾ cup white wine
½ onion, chopped
2 cloves garlic, minced
4-5 cherry peppers, chopped roughly
10-12 olives (assorted varieties), pitted and chopped roughly
2 tablespoons capers
Olive oil
Flour, seasoned
Salt & pepper to taste

Steps:

  • 1. To prepare the chicken, thinly slice chicken breasts into flat pieces, pound thin and cut into small pieces (1"' x 2"). 2. In a non-stick skillet over medium-high heat, add enough olive oil to brown chicken. When hot, dredge chicken pieces in seasoned flour and place in skillet. Brown on each side, roughly 3 minutes per side. Remove chicken and reserve in bowl. You'll probably need to do this in 2 batches. When all of the chicken is browned, add about a ¼ cup of white wine to the skillet to deglaze. Reduce for 1 minute and add back into bowl of chicken. 3. In a skillet over medium-high heat, add olive oil. When hot, add onion and sauté for 4-5 minutes. Add garlic and cherry peppers and sauté another minute. Add chopped tomatoes, ½ cup white wine, salt and pepper. Stir to mix and simmer for 10 minutes. 4. Add chicken pieces back into the skillet along with the olives and capers. Simmer mixture, stirring to incorporate and warm everything. 5. Serve with side of pasta, or over pasta. Add grated cheese.

SICILIAN CHICKEN PARMESAN

Sicilian Chicken Parmesan image

My own way of doing this, of course with tips handed down from mom. I'm posting this as a request to Doreen, my cousin-in-law, who raves about my Italian cooking. You can use jarred or your own homemade tomato sauce or mine (Recipe #195848) but homemade is always better. Some of the measurements are approximate as I never measure anything. You may find you need a bit more or less. Use fresh grated cheese....not that stuff in the green canister you find on the grocery shelves. And use mozzarella cheese that comes in a chunk, not the pre-grated kind. You'll also need a large roasting pan or baking dish, large enough to hold the chicken in a single layer or just slightly overlapping each other.

Categories     Chicken Breast

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 9

8 boneless skinless chicken breasts
1 1/2 cups seasoned dry bread crumbs (I use Progresso)
1/2 cup parmesan cheese (or any other hard Italian cheese you prefer) or 1/2 cup romano cheese, grated (or any other hard Italian cheese you prefer)
2 eggs, beaten
olive oil, for frying
4 cups tomato sauce (see description above)
16 slices parma ham, thinly sliced (optional)
16 ounces mozzarella cheese, grated
1/4 cup parmesan cheese, grated

Steps:

  • Carefully slice each chicken breast horizontally. Don't worry if they're not perfect or if one half comes out real thin as you slice each one. Believe me, no one will notice.
  • Mix the breadcrumbs and 1/2 cup Parmesan in a shallow dish. Have the beaten eggs in another shallow dish.
  • Heat a heavy skillet over medium heat.
  • Dip each chicken breast into the egg, allowing excess to drip off, and then into the breadcrumb mixture, covering both sides. Place chicken onto a clean plate. Do this with all the chicken before starting to cook them.
  • Preheat oven to 350F/180°C.
  • Pour about 3-4 tablespoons olive oil into the pan and let it get hot. Fry the chicken about 2-3 minutes each side and transfer to a plate. Add more oil to pan as needed.
  • Ladle the tomato sauce (about 1 cup) into the baking dish to cover the bottom. Put the chicken breasts into the dish in a single layer or slightly overlapping.
  • Layer the parma ham over the chicken at this point, if using.
  • Ladle more tomato sauce (about 1 cup) over the chicken. Sprinkle the grated mozzarella all over the chicken to cover, then sprinkle the 1/4 cup grated parmesan.
  • Bake for 30-45 minutes, or until cheese has melted and become slightly golden in color.
  • Serve with pasta, remaining tomato sauce, a crusty loaf of bread and salad.
  • Enjoy!
