SHRIMP AND HAM CREOLE JAMBALAYA



Shrimp and Ham Creole Jambalaya image

Number Of Ingredients 16

2 Tbsp unsalted butter
2 onions, (coarsely chopped)
2 stalks celery, (diced)
2 garlic cloves (or ½ tsp garlic powder)
½ green pepper, (cored, seeded and diced)
4 c cooked ham (roughly 1 lb, diced)
1 can (14.5 oz) diced tomatoes, (un-drained)
2 Tbsp tomato paste
1 bay leaf
1 Tbsp parsley
½ tsp thyme
½ -1 tsp cayenne powder ((depending on your heat preference))
1 ½ c white rice, (dry)
2 ½ c chicken broth ((we prefer low sodium))
½ lb raw shrimp, (shelled)
½ -1 tsp salt

Steps:

  • In a Dutch oven or large soup pot, heat the oil. Add the onions and sauté over medium high heat, 2-3 minutes.
  • Add the celery, garlic, and pepper, and sauté an additional 3-4 minutes, until the onions are lightly golden.
  • Add the ham and mix well.
  • Add the tomatoes, paste, and seasonings (except the salt). Mix well.
  • Add the rice and broth. Bring the mixture to a boil.
  • Reduce the heat to medium low. Cover the pot and simmer for 15-20 minutes, until the rice is tender. (Checking near the end of the cooking time to be sure the jambalaya doesn't need more broth.)
  • Add the shrimp and mix to combine. Cover and cook for 5 minutes more, over low heat, until the shrimp is pink and cooked through.
  • Taste the jambalaya and add salt and extra cayenne powder as desired.

1 pound boneless skinless chicken breasts, (cubed)
1/4 teaspoon sweet paprika
1 teaspoon oregano
6 ounces andouille sausage, (sliced into ¼-inch rounds)
2 tablespoons tomato paste
2 cups low-sodium fat free chicken broth
1 (14.5-oz can) diced tomatoes
1 cup long grain rice
1 teaspoon cajun seasoning, (or to taste,)
1 pound shrimp, (peeled and deveined)
2 green onions, (thinly sliced, for garnish)
dried parsley, (for garnish)

Steps:

  • In a large Dutch oven heat olive oil over medium heat.
  • Add onions, celery, and bell peppers and season with salt and pepper.
  • Cook for 4 minutes, or until just tender. Stir in garlic and cook for 1 minute.
  • Stir in chicken and add sweet paprika and oregano.
  • Cook for 5 minutes, or until chicken is browned on all sides.
  • Stir in prepared sausage and tomato paste; cook for 1 minute.
  • Add chicken broth, crushed tomatoes, rice and cajun seasoning.
  • Bring mixture to a boil; reduce heat to medium low and cover the pot with a lid.
  • Cook for 20 minutes, or until rice is tender and most of the liquid is absorbed.
  • Add the shrimp and cook for 4 to 5 minutes, or until shrimp is pink and cooked through.
  • Remove from heat.
  • Garnish with sliced green onions and dried parsley.

Steps:

  • Add oil to a large nonstick saucepan. Over medium heat, sauté onion, garlic, bell pepper and celery until onion is translucent. Add parsley, ham, chicken, bay leaf, and cayenne pepper. Cook, stirring often, 5 to 6 minutes. Add tomatoes (with juice), tomato sauce, and 1 3/4 cups cold water. Gently simmer, uncovered, stirring occasionally, about 5 minutes. 1 fryer chicken (about 3 pounds), boned, skinned, and cut into 1-inch cubes, or 1 1/2 pounds skinless, boneless breasts and thighs, cut into 1-inch cubes

1/8 teaspoon freshly ground black pepper
1/8 teaspoon cayenne
2 tablespoons vegetable oil
1/2 pound cooked ham, cut into 1/2-inch cubes
2 cups chopped yellow onions
1 cup seeded and chopped green bell peppers
1 cup chopped celery
4 garlic cloves, peeled
3 cups chicken broth
One 16-ounce can whole tomatoes, chopped, liquid reserved
1/2 cup chopped green onions (green part only)
2 tablespoons chopped fresh parsley leaves
2 pounds medium-size shrimp, peeled and deveined
1 teaspoon Tabasco brand pepper sauce
2 cups long-grain white rice, rinsed and drained

Steps:

  • Sprinkle the chicken with the salt, black pepper, and cayenne. Heat the oil in a large, heavy pot or Dutch oven over medium heat. Add the chicken and cook, stirring, until browned on all sides, 8 to 10 minutes. Transfer the chicken to a large mixing bowl.
  • Add the ham to the pot and cook, stirring, until lightly browned, about 5 minutes. Add the ham to the chicken in the bowl.

Instead of the diced tomatoes and hot sauce, substitute a 10 ounce can of Ro*Tel Diced Tomatoes and Green Chilies. The Ro*Tel really gives it a nice kick.

  • Heat the oil in a large cast-iron Dutch oven over medium heat. Add the sausage and cook until it start to render the fat. Add the onions, bell peppers, 1 teaspoon of the salt, the Creole seasoning, and 1/2 teaspoon of the cayenne. Stirring often, brown the vegetables and sausage until they are caramelized, about 15 minutes. Scrape the bottom and sides of the pot to loosen any browned particles (fond). Add the garlic and cook for 1 minute.
  • Season the chicken with the remaining 1 teaspoon salt and remaining 1/2 teaspoon cayenne. Add the chicken, ham, and the bay leaves to the pot. Brown the chicken for 8 minutes, scraping the bottom of the pot to loosen any browned bits.
  • Add the rice and stir for 2 to 3 minutes to coat evenly. Add the water, stir to combine, and cover. Cook over medium heat for 30 to 35 minutes, without stirring, or until the rice is tender and the liquid has been absorbed.

  • Heat a large skillet over high heat. Add oil to pan; swirl to coat. Add chicken; cook 4 minutes, stirring occasionally. Place chicken in an electric slow cooker.
  • Add onion, bell pepper, celery, and garlic to pan; sauté 4 minutes or until tender. Add onion mixture, turkey kielbasa, and next 5 ingredients (through chicken broth) to slow cooker. Cover and cook on LOW for 5 hours.
  • Cook rice according to package directions. Add cooked rice and remaining ingredients except parsley garnish to slow cooker. Cover and cook on HIGH 15 minutes or until shrimp are done. Garnish with parsley leaves, if desired.
