BUTTER SCHNITZEL

Butter Schnitzel image

I have been to Germany, and in my travels a good friend of mine made me this. I have duplicated and improved upon his recipe.

Categories     Meat and Poultry Recipes     Pork

Time 55m

Yield 12

Number Of Ingredients 13

12 boneless pork loin chops, 3/4 inch thick
2 cups bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon dried parsley flakes
1 teaspoon salt
½ teaspoon freshly ground pepper
½ pound butter
2 cloves garlic, minced
1 cup dry white wine
1 pound mushrooms, sliced
1 tablespoon cornstarch
2 tablespoons water
olive oil as needed

Steps:

  • Pound the pork chops with a spiked meat mallet until 1/4 inch thick; set aside. In a large bowl, combine the bread crumbs, Parmesan cheese, parsley flakes, salt, and pepper. Press the pork into the crumbs to bread thoroughly; set aside.
  • Melt butter in a large saucepan over medium-high heat. Stir in the garlic and cook until fragrant, about 30 seconds. Pour in the wine and sliced mushrooms. Allow to simmer and cook until the mushrooms have softened, about 10 minutes. Stir together the cornstarch and water, then add to the mushroom sauce. Simmer until the sauce has thickened, then remove from the heat and set aside.
  • Meanwhile, heat a few tablespoons of olive oil in a large, nonstick skillet over medium-high heat. Fry the pork cutlets a few at a time until golden brown and cooked through, 1 to 2 minutes per side. Serve with reserved mushroom sauce.

PAPRIKA CHICKEN SCHNITZEL WITH FRIED EGGS (HOLSTEIN)

Paprika Chicken Schnitzel with Fried Eggs (Holstein) image

This past holiday season I visited Vienna for the first time with my mom, brother and husband. We all had our fill of schnitzel. Back home, I combined elements from a few versions and a twist or 2 of my own. This dish can be made with veal, chicken or pork cutlets.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 14

4 pieces chicken breast
Salt and freshly ground black pepper
Flour
6 eggs, divided
2 cups seasoned bread crumbs
2 tablespoons sweet paprika
A handful flat-leaf parsley, leaves chopped
1 lemon, zested and juiced, divided, plus wedges for serving
4 to 5 tablespoons extra-virgin olive oil, divided
1 jar roasted red peppers, thinly sliced
1 tablespoon butter
1 heart romaine lettuce, shredded
8 anchovy fillets
4 tablespoons capers

Steps:

  • Preheat oven to 200 degrees F. Place a baking sheet in oven to keep cooked cutlets crisp.
  • Butterfly the chicken breast pieces across the breast but not all the way through, open the meat up and set into a plastic food storage bag or 2 pieces waxed paper. Gently pound out each piece into very thin, large cutlets. Pile cutlets on a plate and season with salt and pepper.
  • Arrange a station for breading: flour, 2 beaten eggs, bread crumbs mixed with paprika, parsley and the zest of a lemon.
  • Heat just enough oil to coat the bottom of a large nonstick skillet over medium to medium-high heat.
  • Bread 2 cutlets in flour, then egg, then bread crumb mixture and cook 2 to 3 minutes on each side, transfer to oven, add a bit more oil, if necessary, and repeat. Keep the cooked cutlets hot in the warm oven. Wipe pan clean, add 1 tablespoon extra-virgin olive oil heat then add roasted red peppers, season with salt and pepper and wilt them 4 to 5 minutes.
  • While cutlets are in oven and peppers are cooking up, heat 1 tablespoon of butter in a medium skillet over medium heat. Add 4 eggs and fry to desired doneness, season with salt and pepper.
  • Arrange some lettuce on each dinner plate, top with 1 cutlet, and some of the lemon juice over top. Arrange some roasted red pepper strips, 2 anchovy fillets, 1 tablespoon capers and a fried egg, sunny-side up or over easy on top of the cutlets. Serve with lemon wedges.

CHICKEN SCHNITZEL WITH CAPERS AND PARSLEY

Chicken Schnitzel with Capers and Parsley image

Categories     Chicken     Egg     Fry     Quick & Easy     Fall     Parsley     Capers     Gourmet

Yield Makes 4 servings

Number Of Ingredients 11

4 (1/4-inch-thick) chicken cutlets (1 1/4 to 1 1/2 lb total)
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1 cup fine dry bread crumbs
4 to 6 tablespoons vegetable oil
2 1/2 tablespoons unsalted butter
2 tablespoons bottled capers, rinsed, drained, and patted dry
2 tablespoons chopped fresh flat-leaf parsley
Accompaniment: lemon wedges

Steps:

  • Preheat oven to 200°F. Put an ovenproof platter in oven to warm.
  • Gently pound each cutlet between 2 sheets of plastic wrap to 1/8-inch thickness with flat side of a meat pounder or with a rolling pin.
  • Stir together flour, salt, and pepper in a shallow bowl or a pie plate. Whisk together eggs and a pinch of salt in another shallow bowl, then put bread crumbs in a third shallow bowl.
  • Pat chicken dry and dredge in seasoned flour, shaking off excess. Dip in eggs, letting excess drip off, then dredge in bread crumbs, coating completely. Transfer to a wax-paper-lined tray and chill 10 minutes.
  • Heat 2 tablespoons oil in a 12-inch heavy nonstick skillet over moderately high heat until hot but not smoking, then fry cutlets in 2 or 3 batches (without crowding), turning over once, until golden brown and just cooked through, about 3 minutes per batch. (Add 2 tablespoons oil to skillet between batches.) Drain cutlets on paper towels, then transfer to platter in oven to keep warm.
  • Add butter and capers to skillet and heat over moderate heat, swirling skillet, until butter is melted. Stir in parsley and pour sauce over cutlets.

CHICKEN WITH LEMON-CAPER SAUCE

Chicken with Lemon-Caper Sauce image

A rich chicken dish, perfect for a special meal.

Provided by ALISSASMOM

Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes

Time 30m

Yield 2

Number Of Ingredients 9

1 pinch salt
½ cup all-purpose flour
2 (6 ounce) skinless, boneless chicken breast halves
2 tablespoons olive oil
¼ cup dry white wine
¼ cup lemon juice
¼ cup cold unsalted butter, cut into pieces
2 tablespoons capers, drained
2 lemon wedges

Steps:

  • Mix together salt and flour in a small dish or plastic bag, then coat chicken and shake off excess. Heat olive oil in a skillet over medium-high heat. Shake excess flour from chicken, then brown in hot oil until both sides are golden-brown, and the inside has turned white and firm, 3 to 4 minutes per side.
  • Remove the chicken, and set aside in a warm place. Pour white wine into the skillet, and allow to boil as you dissolve the cooked bits from the bottom of the pan. Add the lemon juice, and allow to come to a boil, cook for a few minutes until reduced by half.
  • Sprinkle the cubed butter into the boiling sauce. Swirl and shake the pan vigorously to dissolve the butter, thus thickening the sauce. The butter must never come to rest, or the sauce will separate and become oily. Once the butter has completely incorporated, remove from heat and stir in capers.
  • To serve, pour lemon-caper sauce over the chicken, and serve with a wedge of lemon.

CHICKEN SCHNITZEL WITH BROWN BUTTER & CAPERS

Chicken schnitzel with brown butter & capers image

Chicken schnitzel with capers is a great supper choice, taking just 30 minutes. Use chicken breasts if you prefer, although thighs give a juicier result

Provided by Diana Henry

Categories     Dinner, Main course, Supper

Time 30m

Number Of Ingredients 10

4 chicken thighs , skinless and boneless
100g flour , seasoned
2 medium eggs , beaten
100g white breadcrumbs
2 tbsp groundnut or olive oil
25g unsalted butter
lemon wedges , to serve
150g unsalted butter
2 tbsp capers , rinsed and patted dry
½ tbsp roughly chopped fresh rosemary

Steps:

  • Open out the thighs and place them between two squares of baking parchment. Bash the thighs with a rolling pin to flatten them, but not so violently that the chicken flesh starts to break up.
  • Set out three shallow bowls. Fill one with the flour, the next with the beaten egg and the last one with the breadcrumbs. Season the thighs, then dip each one in the flour, then the egg, then the breadcrumbs. Set the coated thighs on a baking sheet.
  • Heat the oil and butter in a large frying pan. Cook the thighs over a medium heat for 4 mins each side. The coating should be golden and the chicken cooked through. Season, then transfer to a roasting tin lined with kitchen paper and keep warm in a low oven.
  • Wipe out the pan and add the butter. Cook until foaming and nutty (it will take about 3 mins for the butter to become brown), then add the capers and the rosemary and cook for 1 min more. Serve the schnitzels with the butter spooned over the top and the lemon wedges on the side.

  • Pat chicken dry and place in a resealable plastic bag; leave about an inch open for air to escape. Lightly pound using the smooth side of a meat mallet to a thickness of about ¼-½ an inch thick. *Note - you can also use chicken cutlets if you can find them at the grocery store. They are already thin and won’t require pounding.
  • Create an assembly line for breading: In one dish, combine the flour with a teaspoon each of salt and pepper, in a second dish whisk the eggs, and in a third dish add the breadcrumbs.
  • Bread the chicken. Pat the chicken dry first, then coat with the flour, then the egg (make sure it’s fully coated), then the breadcrumbs, shaking off the excess after each step. Arrange breaded chicken on a plate, with sheets of parchment paper between layers. Let rest for 10-15 minutes.
  • Heat about ¼ - ½ cup of oil in a large skillet. The oil should sizzle when you sprinkle a few drops of water or breadcrumbs into it. Place a piece of chicken into the oil, careful not to crowd. You should be able to get 2 pieces in a 12 inch skillet, but it’s important to make sure they aren’t touching each other. Fry schnitzel about 2-3 minutes per side or until breading is a deep, golden brown. Place on a paper towel lined plate and repeat until all chicken has been cooked.
