4 (7-ounce) chicken breasts, butterflied
1/2 cup all-purpose flour
Sea salt and cracked black pepper
2 eggs
1/4 cup milk
2 cups matzo meal
Vegetable oil, for shallow frying
1 (14-ounce) can cherry tomatoes
1/4 cup vincotto
1 long red chile, sliced
1 tablespoon finely grated lemon zest
1/2 pound buffalo mozzarella, torn
Store-bought pesto, to serve
Baby mint leaves (optional), to serve

Steps:

  • Preheat oven to 475°F. Using a meat mallet, pound each chicken breast to 1/4" thick. Place the flour, salt and pepper in a medium bowl and mix to combine. Place the eggs and milk in a separate bowl and whisk to combine. Place the matzo meal in a third bowl. Dust the chicken with the flour, dip into the egg mixture and press into the crumbs to coat.
  • Pour oil into a large frying pan to a depth of 1" and heat over medium heat. Cook the chicken in batches, turning, for 2 minutes or until golden and cooked through. Drain on paper towels and set aside. Place the tomatoes in a bowl and lightly crush with a fork. Add the vincotto, chile, lemon zest, salt and pepper and mix to combine. Place the chicken in a roasting pan and top with the tomato mixture and mozzarella. Roast for 10-12 minutes or until the cheese is melted and golden. Divide among serving plates and top with the pesto and mint, if using, to serve.

This is the alternate to veal schnitzel parmigiana. I love this version better and I always order it at the local hotel. This can be made very easy at home and is very quick.

4 chicken schnitzels
30 g butter
1/4 cup oil, for cooking
1 cup chunky tomato pasta sauce
1 cup cheese, grated

Steps:

  • Shallow fry the chicken schnitzels on the stove.
  • Use medium heat for about 5-10 minutes on each side or until they look cooked.
  • Remove from heat and spread pasta sauce over the top of the schnitzels.
  • (make sure the sauce is spread evenly and not too thin or thick) Sprinkle the grated cheese over the pasta sauce and place in a microwave for 1 minute so that the cheese is nicely melted.
  • Serve with a nice green salad and a bread roll.

Shredded chicken and spaghetti stirred into a mixture of melted cheese, green onion, tomatoes, red and green chile peppers and creamy mushroom soup. A Classic Chicken Spaghetti with a little bite. This is a good last minute chicken recipe for a family, and my 2-year-old loves to eat this recipe with his fingers. Also, this dish freezes well. Serve with garlic bread, if desired.

1 (16 ounce) package spaghetti
1 (10.75 ounce) can condensed cream of mushroom soup
¾ pound processed cheese
1 (10 ounce) can diced tomatoes with green chile peppers
1 cup chopped green onion
4 1/2 breast, bone removeds skinless, boneless chicken breast halves - boiled, cut into bite size pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat soup in a large saucepan over low heat. Add cheese and melt, stirring. When cheese is almost melted, stir in tomatoes with green chile peppers and green onion. Simmer over low heat for 2 to 3 minutes, stirring.
  • Add spaghetti and mix well, then stir in chicken. Heat through and serve.
