CHICKEN SCALLOPINI WITH LEMON BUTTER PASTA
Pasta with chicken breast tenders, apple wood bacon slices, mushrooms, fresh thymes, and cherry tomatoes. Easy and quick meal for busy weeknight!

Steps:
- Gather all the ingredients.
- Pound the chicken tenders with meat pounder to flatten them. Season them with salt and pepper. Diced onion and bacon into small pieces and slice garlic.
- Start boiling water to cook pasta in a large pot. When the pasta is cooked, drain water but please remember to keep ½ cup of the water that was used to cook the pasta. Set aside if the pasta sauce is not cooked yet.
- Meanwhile in a large frying pan, heat olive oil on medium heat. Fry the chicken on both sides until slightly browned. Transfer onto a plate and set aside.
- In the same frying pan, sauté the onions and garlic for 1-2 minutes.
- Add the bacon and cook until onions become translucent.
- Add the thyme and mushrooms and sauté until mushrooms become soft.
- Add the tomatoes, cream, butter, and lemon juice. Bring it to a simmer and season with salt and pepper to taste. If you add bacon, it's already salty so be careful not to make it too salty (keep in mind the pasta will make the sauce more bland). Remove from heat.
- By this time pasta is cooked already, so add the pasta in the pan and toss it in the creamy sauce. Slowly stir in the pasta water to loosen up and thin out the sauce.
- Add the chicken to the pan and toss lightly so that chicken will warm up. Serve the pasta on the serving plates, top with the chicken and sauce. Garnish with arugula and sprinkle grated Parmesan cheese. Serve immediately.

HUBBY'S FAVORITE CHICKEN SCALOPPINE WITH ANGEL HAIR PASTA
My mom made this for my husband and he begs for it to this day! Not one of my personal favorites, but I'm not a big chicken fan. My kids love this dish as much as he does though, so I have to make it pretty frequently around here!

Steps:
- Trim chicken of all fat.
- Pound the chicken as thin as you prefer- the thinner, the better.
- Put a pot of water on to boil for the angel hair.
- Coat chicken in seasoned flour and shake off excess.
- Melt about half a stick of butter in a non-stick frying pan.
- Add chicken and cook until lightly browned on both sides and cooked all the way through.
- Cook pasta 2-3 minutes or according to package directions.
- Remove chicken from pan and place on serving plates.
- Melt the other half of the stick of butter in same pan with lemon juice to taste.
- Add drained pasta to pan and toss to coat.
- Place pasta on plates with chicken and pour any excess butter/lemon juice mixture over chicken and pasta.
- My hubby makes his OWN separate butter/lemon juice mixture for just his plate!

- To make the sauce:.
- Heat the lemon juice and white wine in a saucepan over medium heat.
- Bring to a boil and reduce by one-third.
- Add cream and simmer until mixture thickens (3 to 4 minutes).
- Slowly add butter until completely incorporated.
- Season with salt and pepper.
- Remove from heat and keep warm.
- To make chicken and pasta:.
- Cook pasta and drain.
- Heat a small amount of oil and two tablespoons butter in a large skillet.
- Dredge chicken in flour and saute in pan, turning once, until brown and cooked through.
- Remove chicken from pan.
- Add remaining ingredients to pan.
- Heat until mushrooms soften and are cooked. Add chicken back to pan.
- To serve:.
- Place cooked pasta on each plate.
- Add half of butter sauce to chicken mixture and toss.
- Taste and adjust. Add more sauce if needed.
- Place chicken mixture over pasta.
- Add a little more sauce to each.
- Garnish with parsley.

CHICKEN SCALOPPINI (PAULA DEEN)
This is VERY good! I must tell you, tho, the original recipe calls for 4 sticks of butter in the sauce! To be fair, the episode she made this on WAS called "Everything's Better With Butter." LOL I read thru many reviews on the other site and almost all cut the butter back, some even to 1 and 1/4 sticks with no problems. I used 2 sticks of butter and also used bacon instead of pancetta, out of personal preference. Dried or fresh herbs, such as tarragon, thyme, basil, oregano, even an Italian seasoning can be used to season while sauteeing the chicken. I also use the artichokes packed in water, not the oil. The last time I made it, I added some minced garlic while sauteeing the veggies and a bit more lemon (to taste) to the sauce. That said, this is one helluva a good dish! LEMON CHICKEN SCALOPPINE LIKE T.G.I. FRIDAY'S
Creamy lemon and white wine sauce over sautéed chicken, mushrooms, and artichokes served atop a bed of angel hair pasta, and then sprinkled with pancetta and capers. This was my favorite thing to order when we go to Fridays. It is no longer on the menu but now I can make it at home! I got this from Robbie's Recipes. Not exactly low in calories but definitely worth it every now and then.

- In a 2-quart saucepan, boil wine until reduced by half. Add lemon juice to pan, then whisk in butter until melted. Add 2 cups cream and simmer on low heat until thickened, stirring often. Remove from heat, stir in spices, and set aside.
- -Pound chicken breasts with the flat side of a meat mallet or the bottom of a glass until thin.
- -Fill a large pot with water and begin to heat to boiling (for preparing pasta later).
- -Heat oil in a large skillet or wok over medium-high heat; add chicken to pan and sauté on each side for 60 - 90 seconds, or until chicken is cooked through. Add mushrooms to pan and sauté with until mushrooms begin to soften. Squeeze juice from both lemon halves over chicken and mushrooms; pick out any seeds. Add 1/2 cup cream to pan and bring to a boil, stirring often. Remove from heat; stir in artichokes, parsley, and prepared lemon sauce; set aside and keep warm.
- -Add pasta to boiling water and cook as directed on package.
- -In a separate skillet or pan over medium-high heat, quickly sauté pancetta and capers until pancetta is browned; remove from heat.
- -On individual serving plates or one large platter, swirl portions of drained pasta into "nest(s)". Arrange chicken pieces in center of nest, pour sauce/mushrooms over and around chicken, and then sprinkle pancetta/capers evenly over all.

- FOR THE CHICKEN: heat a sauté pan over medium heat.
- Add oil and heat.
- Add chicken pieces to the sauté pan and sauté on each side for one minute (or until no longer pink).
- Add the sliced mushrooms to the sauté pan and sauté with the chicken for an additional minute.
- When the mushrooms are cooked, squeeze the juice from the lemons into the sauté pan and coat the chicken with the juice (ensure there are no seeds).
- Add the cream to the pan and stir to incorporate.
- Add the lemon sauce and stir to incorporate- DO NOT RETURN TO HEAT/FLAME!
- FOR THE LEMON SAUCE: boil the chablis to reduce to 2 cups.
- Add the lemon juice and butter and melt slowly.
- Add the whipping cream and simmer on low heat until thickened.
- Add the spices and cool to room temperature.
- TO SERVE: in a large bowl, twirl the pasta into a nest.
- Sprinkle the chicken pieces on the pasta and pour the remaining contents of the pan on and around the chicken.
- Sprinkle the artichokes, pancetta and capers over the entire dish.
- Garnish with chopped parsley.

LEMON BUTTER CHICKEN SCALLOPINI - SALT & LAVENDER

- Cut the chicken breasts in half lengthwise so you have 4 thinner cutlets. Place the chicken pieces between two pieces of plastic wrap (spread them out so there's a gap between each piece), and then use the flat side of a meat mallet to pound the chicken pieces so they're about 1/2" thick.
- Season both sides of each piece of chicken with salt & pepper and the garlic powder. Coat the chicken pieces in flour.
- Add the oil and 1 tablespoon of butter to a large skillet. Let the skillet heat up over medium-high heat for a few minutes until it's hot. Cook chicken in two batches. Cook the chicken for about 4 minutes on the first side and another 2-3 minutes on the second side (ensure chicken is cooked through). For the second batch, add another tablespoon of butter to the pan. The second batch may go a little faster since the pan will be very hot. Transfer the chicken to a plate and cover it loosely with foil to keep it warm.
- To the skillet, add the wine (or broth) and lemon juice. Let it bubble until it's reduced by half, then turn off the heat and stir in the remaining 2 tablespoons of butter.
