Chicken sausage recipes are not commonly found on the web. I had some chicken thighs and was looking for something versatile to do with them.

1 apple, chopped
1 small onion, chopped
3 cloves garlic, minced
1 tablespoon tomato paste
1 tablespoon ground sage
1 teaspoon celery seed
1 teaspoon anise seed
1 teaspoon ground marjoram
½ teaspoon ground allspice
½ teaspoon salt
½ teaspoon ground black pepper
1 pound skinless, boneless chicken thighs

Steps:

  • Combine apple, onion, garlic, tomato paste, sage, celery seed, anise seed, marjoram, allspice, salt, and pepper in a nonstick skillet over medium heat. Cook and stir until softened and fragrant, about 10 minutes. Remove from heat and let cool for 10 minutes.
  • Place chicken thighs in a food processor; pulse until coarsely chopped. Process until ground. Transfer to a bowl. Fold in apple mixture.
  • Scoop 1/4 cup of the chicken mixture with a large melon baller and form into a patty. Repeat with remaining chicken mixture.
  • Preheat a large nonstick skillet over medium heat. Cook 4 patties until browned and no longer pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer to a plate; wipe out skillet. Repeat with remaining patties.

Imagine a sausage patty made from chicken that's just as tender, juicy, and flavorful as one made from pork. It's possible, with a little help from pancetta. Using chicken thighs makes for a significantly more succulent and tender patty, as long as you keep the meat very cold while working with it.

1 ½ pounds boneless, skinless chicken thighs
1 (4 ounce) package pancetta
2 teaspoons kosher salt, or to taste
1 teaspoon freshly ground black pepper
¼ teaspoon dried thyme
½ teaspoon crushed toasted fennel seeds
¼ teaspoon ground coriander
¼ teaspoon cayenne pepper
¼ teaspoon freshly grated nutmeg
2 teaspoons minced fresh sage
2 Granny Smith apples
½ tablespoon oil, or as needed
6 tablespoons butter
8 leaves fresh sage
6 tablespoons all-purpose flour
2 ½ cups chicken broth, or more as needed
1 tablespoon maple syrup
⅓ cup creme fraiche
salt and freshly ground black pepper to taste
4 buttermilk biscuits, split

Steps:

  • Cut chicken thighs into 1-inch pieces. Chop pancetta finely using a meat cleaver until paste-like in texture. Mix chicken and pancetta together. Sprinkle salt, pepper, thyme, fennel, coriander, cayenne, nutmeg, and sage. Mix until combined and place mixture on a plate; cover with plastic wrap and freeze for 15 to 20 minutes before grinding.
  • Peel and quarter apples. Grate apples into a bowl. Place grated apples in a paper towel and squeeze all the water out. Add apples to the partially frozen chicken sausage meat.
  • Place 1/2 of the chicken mixture in a food processor. Pulse on and off until mixture is slightly finer than coarse sausage. Repeat with the remaining chicken. Cover with plastic wrap and refrigerate to let the flavors develop, 4 hours to overnight.
  • Use a large ice cream scoop to portion out the meat. Flatten scoops with dampened hands to make patties about the same size as your biscuits.
  • Heat oil in a large skillet over medium-high heat. Cook patties until bottom is browned and leaves a deep brown fond in the skillet, 3 to 5 minutes. Reduce heat to medium and flip patties over. Add butter and sage leaves. Cook until patties are firm to the touch, removing leaves once they stop bubbling, about 5 minutes more. Remove patties.
  • Whisk flour into the pan; cook and stir until starting to thicken, about 1 minute. Pour in broth and bring to a boil, whisking the browned bits of food off the bottom of the skillet. Add maple syrup and creme fraiche; season with salt and pepper. Cook until gravy is spoonable and reaches desired thickness, 2 to 3 minutes more. Add more broth if gravy is too thick. Remove from heat.
  • Place biscuit halves on individual plates. Top each with a chicken sausage patty; spoon gravy on top. Garnish each with a fried sage leaf.

1 lb lean ground chicken
1 egg(s), medium
1 cup large-flake rolled oats
2 cloves garlic, minced
1 cup onion(s), finely diced
2 tbsp maple syrup
1 tbsp Dijon mustard
1 tbsp thyme, fresh, minced
1 tbsp sweet paprika
¼ tsp nutmeg
¼ tsp hot red chili pepper flakes, (optional)
¼ tsp salt
½ tsp black pepper, freshly ground

Steps:

  • Add ground chicken and an egg to a large bowl. Sprinkle over large flake rolled oats, minced garlic, diced onion, maple syrup, Dijon mustard, fresh minced thyme leaves, paprika, nutmeg, red hot chili pepper flakes, salt and freshly ground black pepper. Use clean hands to mix very well.
  • Use a ¼ cup (60 ml) measure and shape ten portions into 2-inch (5 cm) patties. Cover and refrigerate for at least 1 hour to help the patties stay together better during cooking.
  • Coat a large non-stick skillet coated with cooking spray or vegetable oil. Arrange a single layer of patties and pan fry over medium heat for 4-6 minutes on each side or until a thermometer reads 165°F (74°C).

1 tablespoon butter
1 green apple, finely chopped
1 small onion, finely chopped
Salt and pepper
1 teaspoon fennel seed
1 1/2 pounds ground chicken breast
1 1/2 teaspoons poultry seasoning, half a palm full
1 teaspoon allspice, 1/3 palm full
1 teaspoon sweet paprika, 1/3 palm full
Extra-virgin olive oil, for drizzling

Steps:

  • Heat a small nonstick skillet over medium heat. Add butter and melt. Add apples and onions and season with a little salt, pepper and fennel seeds. Gently saute the mixture 5 minutes to soften and remove from heat to cool.
  • Heat a griddle pan or large nonstick skillet over medium-high heat.
  • Place chicken in a bowl and season with salt and pepper, poultry seasoning, allspice, paprika and a healthy drizzle of extra-virgin olive oil. Add in the apples, onions and fennel and mix the sausage. Score meat into 4 sections and form 3 small, thin patties from each section, 2 1/2 inches across, 12 small patties total. Cook patties 3 to 4 minutes on each side and serve warm.
