2 lbs. (1 kg) boneless and skinless chicken thigh and leg meat
Bamboo skewers, soaked in cold water for 2 hours
1 cucumber, cut into small pieces
1 small onion, quartered
oil, for basting
3 tablespoons oil
2 stalks lemongrass, white parts only
2 cloves garlic, peeled
6 small shallots or pearl onions, peeled
2 teaspoons turmeric powder
1 teaspoon coriander powder
1 teaspoon chili powder
1/2 tablespoon salt or more to taste
2 tablespoons sugar or honey

Steps:

  • Cut the chicken meat into small cubes. Set aside.
  • Blend all the he Marinade ingredients in a food processor. Add a little water if needed.

  • Combine the chicken and the Marinade together, stir to mix well. Marinate the chicken for 6 hours in the fridge, or best overnight. When ready, thread 3-4 pieces of the chicken meat onto the bamboo skewers.
  • Grill the chicken satay skewers for 2-3 minutes on each side until the meat is fully cooked and the surface is nicely charred, on both sides. Baste and brush with some oil while grilling. Serve hot with peanut sauce the fresh cucumber pieces and onions.

½ cup soy sauce
½ cup lemon or lime juice
1 tablespoon brown sugar
2 tablespoons curry powder
2 cloves garlic, chopped

Steps:

  • In a mixing bowl, combine peanut butter, soy sauce, lime juice, brown sugar, curry powder, garlic and hot pepper sauce. Place the chicken breasts in the marinade and refrigerate. Let the chicken marinate at least 2 hours, overnight is best.

I'm Indonesian but I live in Spain. I'd like to share with you my recipe of satay ayam. It has helped me a lot to overcome my homesickness. I hope this dish will be one of your favorite Asian dishes. You will not be able to resist the sweet and salty taste of the peanut sauce!

1 pound chicken thighs, cut into 1/2-inch pieces
¾ teaspoon salt
1 pinch ground white pepper
1 tablespoon sunflower seed oil
24 wooden skewers
1 cup water
5 tablespoons peanut butter
2 tablespoons kecap manis (sweet soy sauce)
1 tablespoon brown sugar
2 cloves garlic, minced
½ teaspoon salt
1 tablespoon lime juice

Steps:

  • Combine chicken thighs, 3/4 teaspoon salt, white pepper, and sunflower seed oil in a bowl. Cover and refrigerate for 1 to 2 hours.
  • Soak wooden skewers in water to prevent burning during cooking.
  • Bring water, peanut butter, kecap manis, brown sugar, garlic, and 1/2 teaspoon salt to a boil in a small saucepan; stir to combine. Remove from heat and add lime juice.
  • Thread marinated chicken onto skewers. Set about 2 tablespoons peanut sauce aside in a small bowl and brush the sauce in the bowl over chicken.
  • Heat a grill pan or large skillet over medium-high heat. Arrange chicken skewers in batches on grill pan and cook until chicken is no longer pink in the center, 1 to 2 minutes per side. Serve skewers with remaining peanut sauce from the saucepan.

{Video below} My homemade copycat of the Chinese takeout favourite - chicken satay stir fry! The coconut and peanut flavour is not as intense as Malaysian and Thai satay sauce, and the satay seasoning flavour is stronger. The chicken is tenderised the way Chinese restaurants do - perfect to make breast nice and juicy. This step is optional, but I think it's worth it for a true Chinese restaurant experience! MARINATING TIME: 20 minutes for tenderising, 10 minutes for seasoning, both optional.

8 oz / 250g chicken breast
3/4 tsp baking soda ((bi carb soda) (optional))
1/2 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp turmeric powder
1/4 tsp chilli powder ((Not US Chilli powder! See Note 1))
1 1/2 tsp Curry Powder ((Note 2))
1/2 tsp salt
1/4 tsp white pepper
1 1/2 tbsp smooth peanut butter
2 tsp brown sugar
1 tsp light soy sauce ((Note 3))
2 tsp rice vinegar
2 tsp Sriracha ((or other hot sauce))
1/2 tsp lemongrass paste ((Note 4))
1/3 cup coconut milk ((full fat))
1/4 cup water
1 tbsp peanut oil ((or other plain oil))
1 onion (, finely chopped)
2 garlic cloves (, minced)
Shallots/scallions (, sliced (optional garnish))

Steps:

  • Cut chicken in half length wise then slice thinly. Place in a bowl with baking soda, use fingers to coat. Set aside for 20 minutes.
  • Rinse well, pat dry with paper towel then place in a bowl.
  • Mix together Seasoning.
  • Sprinkle 1 tsp of Seasoning over chicken. Mix to coat then set aside for 10 minutes (not critical, can skip this).
  • Place all ingredients except water in a bowl. Add remaining Seasoning. Mix, then add water and mix.
  • Heat oil in wok or skillet over high heat. Add onion and garlic, stir fry for 1 minute.
  • Add chicken and stir fry for 2 minutes until just cooked through and a bit browned.
  • Lower heat slightly, then add Sauce. Stir fry until it reduce down and becomes thicker - 1 to 1 1/2 minutes.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sliced shallots/scallions if desired.

Here is the chicken version of satay, where the peanuts are mixed with candlenuts. The dipping sauce is also used as a marinade to give the meat a more intense flavor. The same sauce can also be used with fish.

For the marinade/sauce:
5 candlenuts or cashews, or 10 blanched almonds
5 cloves garlic
2 fresh chiles, cut into medium chunks
Sea salt
1 tablespoon ground coriander
Finely ground black pepper
1/2 teaspoon cayenne pepper
2 tablespoons vegetable oil
1/2 cup (75 g) raw peanuts, finely ground
1 tablespoon kecap manis (or 1 teaspoon sugar), plus more for the sauce
For the satay:
1 pound 10 ounces (750 g) boneless, skinless dark chicken meat, cut into long strips 1/4-inch (0.5 cm) thick

Steps:

  • Soak 14 medium bamboo skewers for 30 minutes in cold water.
  • To make the marinade: Put the candlenuts, garlic, chilies, and a little salt in a mortar and grind with a pestle until you have a fine paste-you can also do this in a food processor. Transfer to a bowl. Add the coriander, black pepper, and cayenne and mix well.
  • Heat the vegetable oil in a skillet over medium heat. Add the candlenut-garlic mixture and fry until lightly colored, 2 to 3 minutes. Add the peanuts and kecap manis and fry for another couple of minutes. Let cool.
  • Prepare a charcoal fire in an outdoor grill or preheat the broiler to high.
  • To prepare the satay: Marinate the chicken in the sauce for at least 30 minutes or longer, then scrape the marinade off the chicken before threading it equally onto the skewers. Grill or broil for 3 minutes on each side, or until completely cooked through.
  • Meanwhile, scrape the leftover marinade into a small saucepan. Add 1/2 cup (125 ml) water and a little more kecap manis (or a little sugar) and bring to a boil over medium heat. Transfer to a small bowl and serve as a dipping sauce with the grilled chicken.

250 gram peanut, toasted/roasted
3 candlenuts (Indonesian: kemiri)
6 red cayenne chilies (Indonesian: cabe merah keriting) (*)
4 tablespoon coconut palm sugar (Indonesian: gula Jawa)
2 1/2 teaspoon salt
600 ml water
600 gram chicken thigh meat, cut into 1/2 inch cubes (**)
4 tablespoon sweet soy sauce (Indonesian: kecap manis)
2 teaspoon oil
bamboo skewers (about 20)
sweet soy sauce (Indonesian: kecap manis)
lime wedges (Indonesian: jeruk nipis)
deep-fried shallots (Indonesian: bawang goreng)

Steps:

  • In a food processor, grind together peanuts, candlenuts, and chilies.
  • Transfer to a saucepot along with the rest of the peanut sauce ingredients, and bring to a boil. Reduce heat to a simmer and continue cooking until the sauce thickens. Turn off heat.
  • Place chicken, sweet soy sauce, oil, and 150 gram of peanut sauce in a mixing bowl. Mix together and marinate for 30 minutes.
  • Skewer the marinated chicken with bamboo skewers. Grill/broil until cooked and slightly charred, baste with marinating sauce as needed.
  • Serve the satay with peanut sauce and accompaniments.

400 gr/ 14.11 oz boneless chicken, cut in small pieces.
1 small onion.
4 garlic cloves.
1 tsp ground coriander.
½ tsp ground black pepper.
½ tsp salt.
3 kaffir lime leaves.
2 tbsp oil.
For the satay peanut sauce:
100 gr/ 3.53 oz roasted peanuts (see the note).
1 onion, roughly chopped.
5 garlic cloves.
½ tsp salt.
1 tsp sugar.
3 red bird's eye chillies.
1 cup of water.
¼ cup/ 60 ml/ 2.11 fl.oz. Indonesian sweet soy sauce.

Steps:

  • If you use bamboo skewers, don't forget to soak them for a few hours before you use them. It's to prevent them from getting burned on the grill/ griddle pan.
  • Pound the onion and garlic into a paste. You can use a pestle and mortar, or a food processor.
  • Then heat the oil in a small frying pan. Add the onion and garlic paste, the ground coriander, black pepper, salt and lime leaves. Cook until the herbs and spices release an aroma. Set aside.
  • Put the chicken pieces in a mixing bowl and add in the cooked spices. Mix and stir well until all meat pieces are coated with the spices. Set aside to marinate for at least an hour or two.
  • When you are ready to make your Satay, pierce the chicken pieces on the skewers and start grilling them. You can use your oven grill, a griddle pan, or even a barbecue. I find cooking the satay on a griddle pan is effortless and quicker. But I leave the choice to your preference.
  • For the peanut sauce:
  • Put the peanuts, onion, garlic, salt, sugar, chilli, and water in a blender. Give it a blitz until you get a creamy but a bit grainy peanut mixture.
  • Pour the mixture in a small cooking pan/pot and heat it up. When the peanut sauce is boiling, let it simmer for about 5-7 minutes before you turn the heat off. Set aside.
  • Assemble Indonesian chicken satay:
  • Arrange the skewers on a plate and pour the peanut sauce over the satay. Then drizzle it with sweet soy sauce.

This is an appetizer recipe, so the serving sizes may be small compared to what one would need for a main course.

1 teaspoon finely chopped garlic
1 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons soy sauce
1 tablespoon dark molasses
2 teaspoons fresh lime juice
2 lbs boneless skinless chicken breasts or 2 lbs boneless skinless chicken thighs, cut into 1 inch cubes
2 tablespoons vegetable oil

Steps:

  • Combine the garlic, salt and pepper in a deep bowl and mash them to a paste with the back of a spoon.
  • Mix in the soy sauce, molasses and lime juice.
  • Add the chicken cubes and toss until they are evenly coated.
  • Marinate in the refrigerator for 2 hours, stirring occasionally.
  • Remove the chicken from the marinade and thread it tightly, 4 or 5 pieces at a time, on small skewers (preferably Oriental wooden skewers about 6 inches (15 cm) long).
  • Brush the oil evenly over the chicken.
  • Cook over charcoal (traditional) or under the kitchen broiler for 5 to 10 minutes, turning occasionally, until the chicken is crisp and brown.
  • Serve at once, with the meat still on the skewers, accompanied by katjang sauce presented separately in a bowl.

2 teaspoons turmeric powder
80g sugar
1 teaspoon ground white pepper
2 teaspoons coriander powder
2 teaspoons fennel powder

1/2 cup (about 125ml) vegetable oil
1 medium size onion (about 120g)
10 cloves garlic
120 g galangal
10g belacan
70g lemongrass

Steps:

  • Cut the chicken meat into bite-size pieces of 1.5 cm cubes.
  • Cut some chicken skin into small pieces for later use.
  • Add Marinade (A) with the chicken
  • Cut the ingredients in Marinade (B)into small pieces and blend with the vegetable oil until it becomes a paste. Combine with the chicken.
  • Marinate it for at least three hours before grilling, or better for at least 24 hours if time is permitted.
  • Soak the wood skewers in water for half a before using them.
  • Pierce the skewer through the chicken meat, alternate with a piece of chicken skin that you reserved earlier. Leave a small gap between each piece of meat.
  • Grill over a small flame until the satay turns golden brown with some char marks.
