Easy Jerk Chicken with Grilled Pineapple Salsa image

A simple, healthy, delicious, and fast recipe for jerk chicken, made in less than 30 minutes. Homemade dry seasoning mix recipe is included!

4 boneless chicken breasts, (pounded to an even thickness)
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoon dried thyme
1 teaspoon ground allspice
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon crushed hot pepper flakes
1/4 teaspoon cayenne pepper
1/4 teaspoon cinnamon
1/8 teaspoon freshly ground nutmeg
5 fresh pineapple rings, (1 inch thick)
2 large fresh jalapeños, (cut in half and seeds removed)
1/4 cup fresh cilantro, (chopped)
juice from 1/2 of a fresh lime
salt to taste
olive oil to brush chicken before grilling
1/4 cup dry jerk seasoning

Steps:

In a small bowl, combine all ingredients for the dry jerk seasoning and mix well. Place the chicken breasts in a shallow dish and rub them thoroughly with the jerk seasoning, cover and let sit in refrigerator for at least 2 hours.

Ingredients

4 chicken breasts, boneless and skinless
1 cup sour cream
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon cayenne pepper
1 clove garlic, crushed
1 teaspoon paprika
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon thyme
1 teaspoon marjoram
1/8 teaspoon soy sauce
4 tablespoons butter
1 cup Italian seasoned breadcrumbs

Steps:

Butterfly each breast and place in a large glass pan.
Combine sour cream, worcestershire sauce, cayenne, paprika, salt, pepper, marjoram, thyme and soy sauce and pour over chicken, making sure each piece is coated.
Marinate overnight.
Next day remove chicken from marinade, and shake off any excess.
Place a pat of butter in the middle of each chicken breast and roll up.
Roll in bread crumbs and fit snugly in an 8-inch square baking pan.
Bake for 1 hour at 325 degrees.
