I had chicken breasts left over from a BBQ I had and decided to make a chicken salad. I couldn't find a recipe that I liked so I played around and came up with this. It is delicious!

- Toss shredded chicken, apple chunks, walnuts, red onion, celery, and lemon juice together in a large bowl.
- Whisk vanilla yogurt, salad dressing, and mayonnaise together in a separate bowl; pour over the chicken mixture and stir to coat. Gently fold the grapes into the salad.

- Combine the yogurt, buttermilk, mayonnaise, vinegar, curry powder, garlic, salt and some pepper in a medium bowl and whisk to incorporate. Combine the chicken, apple, grapes and watercress in a large salad bowl. Pour the dressing over and toss to thoroughly coat. Taste and adjust the salt, pepper and curry powder as desired. Arrange a lettuce leaf on each of 4 salad plates. Divide the salad evenly among the plates and top with chopped almonds.

I put together several recipes that I have seen and it really turned out great. Don't skip the grapes they are imporant to the taste. Time does not include cooking chicken.

Steps:
- I cooked two boneless chicken breasts in a covered fry pan with about a 1/4 inch of white wine, salt, pepper and a chicken seasoning.
- When done I cut them up in small pieces.
- You could use leftover Chicken or cook it anyway you like.
- Even canned chunk chicken might work.
- Just cut everything up and mix it all together.
- Just before serving add the Cool Whip and mix.
- It should look like mayonnaise.
- I used a Granny Smith Apple and Red Seedless Grapes, but any type would do.

- In a large bowl, whisk to combine the mayonnaise, lemon juice, dijon mustard, salt, and pepper.
- Chop the chicken breasts into small, bite-sized cubes, and add it to the dressing.
- Add the grapes, apples, celery, and pecans, and toss well to combine.
- Taste the chicken salad and make any seasoning adjustments according to your tastes. Sometimes I add a bit more black pepper or another squeeze of lemon juice.
- Ideally, let the chicken salad chill in the fridge for at least one hour before serving, but the chicken salad is now ready to enjoy!

- Preheat the oven to 425°F and set an oven rack in the middle position. Line a baking sheet with aluminum foil.
- Rub the chicken with the oil and sprinkle all over with 1 teaspoon salt and 1/2 teaspoon pepper. Roast for 25 to 30 minutes, or until or until a thermometer inserted into the thickest part of the breast reads between 160°F and 165°F (the temperature will continue to rise about 5 degrees as it cools). Add the diced chicken, celery, scallions, grapes, almonds, and herbs and mix well. Taste and adjust seasoning with salt, sugar, and lemon juice, if necessary. Chill the salad in the refrigerator for a few hours. Before serving, taste and adjust seasoning again, if necessary.
