10 3/4 ounce cream of chicken soup ((1 can))
1 cup sour cream
3 cups cooked chicken breasts (cut into cubes or shredded, about 4 breasts)
2 cup broccoli florets
4 ounce Ritz crackers
1/2 cup butter (melted)

Steps:

  • Preheat oven to 350 F degrees. Spray a 9x13 casserole dish with cooking spray and set aside.
  • In a bowl whisk the cream of chicken soup and sour cream together.
  • Add the chicken, broccoli florets and toss it together with the cream of chicken/sour cream mixture, making sure each pieces is coated fully.
  • Add the chicken and broccoli to the casserole dish.
  • Add the crackers to a food processor and pulse a few times until the crackers resemble breadcrumbs.
  • Sprinkled the crumbled crackers over the casserole the chicken and broccoli and then drizzle with the melted butter.
  • Bake for 40 minutes until the casserole starts to bubble and the crackers start to turn golden brown.

1/2 cup butter
13 1/2 ounces Ritz crackers, 3 packages (each pkg has 37 crackers)

Steps:

  • Preheat oven to 350°.
  • Rinse chicken and pat dry.
  • Place Ritz crackers in the blender and blend until finer than breadcrumbs.
  • Melt butter completely (I microwave it).
  • Dip chicken in melted butter.
  • Coat chicken in Ritz crumbs and place on baking sheet.
  • Bake for 45 minutes.

3 -4 chicken breasts
1 (10 3/4 ounce) can cream of chicken soup
1 cup sour cream
1 (1/4 lb) package Ritz cracker
1/2 cup butter or 1/2 cup margarine
salt and pepper

Steps:

  • Mix sour cream and soup in a bowl, place inside the refrigerator.
  • Boil chicken breasts until tender; drain and let stand 10 minutes or until cool enough to handle.
  • Spread cubed chicken evenly over the bottom of a sprayed 9X13 casserole dish.
  • Salt and pepper chicken to taste.
  • Remove sour cream and soup mixture from refrigerator and spread over the chicken in the casserole dish.
  • Crush Ritz crackers inside of its plastic sleeve and then spread evenly over the casserole.
  • Spoon melted butter over the top of all.
  • Bake at 350°F until golden brown and bubbling, approximately 20-30 minutes.

4 ounces cream cheese (softened)
¼ teaspoon onion powder
salt and pepper, to taste
10 ounces frozen mixed vegetables (1 bag (green beans, carrots, corn, broccoli florets etc.))
3 cups chicken breast (cooked and cut into bite-sized pieces (about 1 1/2 pounds))
1 sleeve Ritz crackers (crushed (about 1 1/2 cups crushed))
½ cup butter (melted)
1 Tablespoon fresh parsley (roughly chopped (optional garnish))

Steps:

  • Preheat oven to 350 degrees. Spray a 9x13" baking pan with non-stick cooking spray and set aside.
  • In a large bowl, mix together soup, sour cream, cream cheese, onion powder, and salt and pepper.
  • Mix in the frozen vegetables and chicken.
  • Spread chicken mixture into the bottom of the prepared pan
  • In a bowl, mix crushed cracker crumbs and melted butter together then sprinkle over the top of the chicken mixture.
  • Bake uncovered for 30-35 minutes.

2 teaspoons olive oil
3 egg whites
¾ cup seasoned bread crumbs
6 skinless, boneless chicken breast halves
1 (12 fluid ounce) can fat-free evaporated milk (divided)
1 tablespoon cornstarch
½ cup grated Parmesan cheese
½ cup chopped fresh parsley
⅛ teaspoon ground black pepper
¾ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat olive oil in a large skillet over medium heat until the oil shimmers; meanwhile, beat the egg whites until frothy in a bowl, and place the bread crumbs in a separate flat bowl. Dip the chicken breasts into the egg white, dredge in crumbs, and brown on both sides in the hot oil until golden, 3 to 5 minutes per side. Place the chicken breasts into the baking dish.
  • In a small bowl, mix about 3 tablespoons of evaporated milk with the cornstarch until smooth. Pour the rest of the evaporated milk into a saucepan, and mix in Parmesan cheese, parsley, and black pepper. Over medium-low heat, bring the milk mixture just to a bare simmer, and whisk in the cornstarch mixture; let cook until thickened, about 1 minute. Pour the sauce over the chicken breasts; sprinkle top with mozzarella cheese.
  • Bake in the preheated oven until the sauce is bubbly and the cheese has melted, about 25 minutes. An instant-read thermometer inserted into the center of a chicken breast should read 160 degrees F (70 degrees C).

2-4 chicken breasts
1 sleeve (Ritz Crackers, crushed)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
2 cups shredded cheddar cheese
1 can (10.5 oz, cream of chicken soup)
2 tablespoons butter
2 tablespoons sour cream
1 teaspoon dry parsley

Steps:

  • Preheat oven to 400 and grease a cast iron pan or baking dish with nonstick cooking spray. Set aside.
  • First, you can decide to cut chicken into smaller pieces and slice down the middle if your breasts are super large. The smaller you make your chicken, the less cooking time you may need so please be aware to adjust times if you cut down into strips or down the middle.
  • Add crushed Ritz crackers, salt and pepper, and mix spices and crackers well in a shallow bowl.
  • Add milk to a shallow bowl and shredded cheddar cheese to a separate bowl. You will be dipping the chicken in these bowls, so do not combine.
  • Dip chicken into milk first, making sure both sides are covered.
  • Dip chicken into shredded cheese and press the cheese into the chicken on both sides.
  • Now dip into crushed Ritz crackers and press the crackers into both sides of the chicken breasts. Some of the cheese will fall off into the crackers and that's okay.
  • As you finish coating chicken, please chicken into prepared pan.
  • Repeat recipe process until all chicken is covered and pan is full.
  • Cover chicken with foil and bake for 35 minutes.
  • Remove foil and discard.
  • Return chicken to oven for 10 more minutes until crispy, melty, and golden brown.
  • Serve topped with cream sauce (recipe below)
  • Chicken Cream Sauce
  • To make the sauce, add cream of chicken soup, sour cream and butter to a small saucepan.
  • Heat sauce over low heat, stirring occasionally until blended well and hot. This only takes a few minutes.
  • Drizzle sauce on chicken and sprinkle with parsley before serving.
