CHICKEN POTATO NOODLE SOUP RECIPE
This chicken potato noodle soup is a lighter version of the classic chicken noodle soup we all love. In my version, I used spiralized potato noodles instead of the usual pasta noodles. It is easy-to-make and perfect for those, who are calorie conscious.

Steps:
- Heat olive oil in a large heavy bottom pot in medium heat. Add onion, carrots, and celery and cook over medium until they are softened, 8-10 minutes.
- Stir in the garlic and cook stirring constantly until fragrant, 30 seconds or so.
- Add in the shredded chicken, chicken stock, water, and salt and pepper. Bring it a boil, turn the heat down to medium-low, and let it simmer for 10-15 minutes.
- Stir in the spiralized potato "noodles". Cook for 7-8 minutes.
- Finish it off with freshly squeezed lemon juice and fresh parsley.
- Ladle the soup into large bowls and serve with lemon wedges and crusty bread.

- In a stockpot over medium-high heat, saute the onion, carrots and celery in oil for 5 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the flour, oregano, thyme and poultry seasoning until blended. , Gradually add the broth, potatoes and salt; bring to a boil over medium-high heat. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender., Stir in chicken and noodles; simmer for 10 minutes or until noodles are tender. Reduce heat. Stir in milk; heat through (do not boil).

Steps:
- Season chicken with seasoned salt and pepper.
- Heat vegetable oil in a large soup pot over medium-high heat. Cook chicken until no longer pink in the center, about 5 minutes.
- Add onion to pot and cook until almost translucent, about 5 minutes. Add garlic and cook until slightly browned, about 2 minutes more.
- Stir broth, water, celery, carrots, and potatoes into the pot. Cook until carrots and potatoes are tender, 15 to 20 minutes.
- Taste and adjust seasoning with salt, pepper, and cayenne.

- Heat the vegetable oil in a stock pot over medium heat. Cook and stir the onion, celery, and carrots in the hot oil until tender, 8 to 10 minutes. Add the chicken broth, baking potatoes, thyme, and poultry seasoning to the vegetable mixture; bring to a simmer and continue cooking until the potatoes are cooked through, about 15 minutes.
- Stir the cooked chicken, egg noodles, and evaporated milk into the soup; cook until the noodles are cooked through, another 7 to 10 minutes.
