Steps:
- 1. Preheat oven to 400° 2. Combine chicken and next 4 ingredients in a large bowl, stir well. 3. Combine mayo and next 5 ingredients in a small bowl, stirring with a whisk. Add mayo mixture to chicken mixture, stir well to combine. 4. Spoon chicken mixture into an 11 X 17 inch baking dish coated with cooking spray and sprinkle with cheese. 5. Top cheese evenly with chips. Bake at 400° for 13 minutes or until filling is bubbly and chips are golden
POTATO CHIP CHICKEN CASSEROLE
Ingredients: 1 cup celery, chopped 2 cups cooked chicken, chopped 1 can cream of mushroom soup 1/2 cup milk 3 cups potato chips, crushed grated cheese (optional) Directions: 1. Mix celery and chicken together. 2. Place 1/2 of this mixture in an ungreased baking dish. 3. Spoon ½ can of mushroom soup and 1/4 cup milk over the chicken mixture. 4. Sprinkle 1 1/2 cups crushed potato chips over all. 5. Repeat layers one more time. If using grated cheese, sprinkle on top. 6. Bake 30 minutes at 350 degrees F.

Spread the mixture into a lightly greased 9×13 inch baking pan. Cover the mixture with cheese and then the crushed potato chips Bake for 25-30 minutes or until the potato chips are browned and the casserole is heated through.

- Refrigerate overnight.

- Serves 12. May be divided into two smaller pans and half frozen for later use.
