CHICKEN BREASTS WITH ROSEMARY AND CHANTERELLES AND ROASTED GARLIC POTATOES
Steps:
- To make potatoes: Preheat oven to 375 degrees. Place a roasting pan in the oven for 5 minutes to preheat. In a mixing bowl, combine the potatoes, garlic, and olive oil and stir to coat the potatoes and garlic. Season generously with salt and pepper. Transfer to the roasting pan and roast, stirring occasionally until potatoes are soft when pierced with the tip of a knife and the garlic cloves are very soft and sweet in flavor, about 40 minutes. Remove from oven and keep warm.
- To make mushrooms: In a 12-inch saute pan, heat the butter over medium heat. Add the shallots and cook for about 3 minutes, until softened. Add the garlic and cook about 1 minute longer. Add the mushrooms and thyme. Cover the pan and cook for 7 to 10 minutes, until the mushrooms are tender and have released their juices. If the mushrooms seem dry during cooking, add about 1/4 cup of the chicken stock.
- When the mushrooms are soft, add the rest of the chicken stock, raise the heat to high, and cook until the liquid is reduced by half, about 6 minutes. There will be quite a bit of liquid in the mushrooms. Remove them from the heat, cover, and set side to keep warm.
- To make the chicken:
- Heat the oil and 1 tablespoon of the butter in a 12-inch saute pan over medium-high heat. Season the chicken breasts with salt and pepper. Place the chicken breasts in the pan, skin side down. Cook for about 6 minutes, until golden brown. Turn and cook until the juices run clear when pierced with the tip of a knife, about 6 more minutes. Add the rosemary and cook, basting frequently, for 6 to 8 minutes longer, until the chicken is cooked through and nicely browned. Transfer to a serving platter and set it aside, covered, to keep warm.
- Pour off any oil in the pan and add the wine and Cognac. Raise the heat to high and deglaze the pan by scraping up any browned bits with a wooden spoon. Add the stock and cook until the sauce is reduced nearly by half or thickened and richly flavored, about 4 minutes. Remove the pan from the heat and swirl in the remaining 3 tablespoons of butter. Season with the chives, salt, and pepper. Spoon the sauce over the chicken and serve, passing the mushrooms and potatoes on the side.
CHICKEN WITH CHANTERELLE MUSHROOMS AND MARSALA WINE
A fortunate mistake in forgetting to marinate the chicken in additional ingredients made me come up with this last-minute preparation. It's chanterelle season in Oregon, and I love to use this wild mushroom as often as I can in the fall.

- Stir flour and paprika together in a shallow dish. Remove and set aside 1 tablespoon of the flour mixture for later use. Dredge the chicken in the flour mixture to coat evenly.
- Melt 2 tablespoons butter in a skillet over medium heat; cook and stir chanterelle mushrooms in melted butter until they release their liquid and begin to brown, about 5 minutes. Transfer mushrooms to a bowl and set aside.
- Melt 4 tablespoons butter in the skillet. Cook the chicken breasts in the melted butter until browned, about 3 minutes per side; season with salt and pepper.
- Return the cooked mushrooms to the skillet and stir in chicken broth, reserved 1 tablespoon of flour-paprika mixture, Marsala wine, and dried tarragon. Place a cover on the skillet, reduce heat to low, and cook until the sauce is thick, the chicken is no longer pink in the center, and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

CHICKEN POT PIE WITH CHANTERELLE MUSHROOMS
A reasonably easy to make, and tasty, chicken pot pie with chanterelle mushrooms that I serve to my young family.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a pie dish. Separate parsley leaves and stalks. Chop both and set aside.
- Heat olive oil in a skillet over medium-high heat. Fry the chicken breasts in the hot oil until both sides are browned, 7 to 10 minutes. Slice into 1/2-inch chunks. Return the chicken to pan, add mushrooms and garlic, and cook and stir until soft, about 5 minutes. Strain off and save the juices from the mushrooms as they cook.
- Transfer pan contents to the prepared pie dish along with carrots and peas; add parsley leaves. Mix to get a good distribution of ingredients throughout the dish.
- Combine chicken broth, reserved mushroom juices, milk, parsley stalks, thyme, and rosemary in a pot. Bring to a boil. Mix cornstarch and water together to make a paste and add to the pot. Reduce heat and simmer, stirring occasionally, for 5 minutes. Strain the gravy over the pie dish and season with salt and pepper.
- Roll out the thawed pastry until it will cover the pie dish. Lay over pie and press down at the sides, cutting away excess pastry. Brush beaten egg yolk over the pastry. Cut a small "X" in the middle of the pie to vent.
- Bake in the preheated oven until browned and bubbly, about 30 minutes.

- Chicken: heat oil in lg deep pot ove rmed-hi heat. Add carrots, celery and onion; saute until golden, about 10mins. Add garlic, thyme, bay and peppercorns; stir 2 mins. Add 8 cups water, 1/2 cup salt and sugar; bring to simmer, stirring until salt and sugar dissolve. Remove from heat. Add remaining 8 cups water and 4 cups ice cubes. Let stand until cooled completely. Submerge chicken in brine, cover and chill at least 12 hrs and up to 24 hrs. Preheat oven to 375. Remove chicken from brine, pat dry, place in roasting pan. Sprinkle with pepper. Roast about 1 hr 20 mins. Transfer to platter, cool. Spoon fat into small container. Freeze fat (for puff pastry). Tear chicken meat into small pieces. Pot pie:Combine milk and garlic in small pan, simmer 2 mins. Remove garlic from milk and chop finely, discard milk. Whisk 1/3 c water and cornstarch in bowl to blend; set aside. Heat 1 T oil in heavy large pot over med-hi heat. Add mushrooms and saute til tender, about 6 mins. Transfer to bowl. Add remaining 2 T oil to same pot; add carrots, leeks, and potatoes and saute til soft, about 10 mins. Add chopped garlic and thyme, stir 2 mins. Add 3 1/2 cups broth; bring to boil. Reduce heat, cover and simmer til tender about 15 mins longer. Rewhisk cornstarch mixture and add to veg mixture; stir until broth boils and thickens,a bout 2 mins. Stir in chicken, mushrooms, peas and cream. Simmer uncovered til heated thru, 6 mins. Stir in lemon juice and hot pepper sauce. Season with salt and pepper. Divide among 6 ramekins. Cover, chill. Preheat oven to 375. Top pot pies with baked puff pastry rounds. Bake until heated thru - about 15 mins.

- For chicken:
- Preheat oven to 400°. Place carrots, onion, and leek on a rimmed baking sheet and roast until golden brown, about 30 minutes. Transfer to a large pot fitted with a lid. Add chicken, breast side down, celery, thyme sprigs, wine, salt, and peppercorns to pot. Add 8 cups water to cover and bring to a boil. Reduce heat to low and simmer gently for 10 minutes. Remove pot from heat, cover, and poach chicken until cooked through, about 35 minutes.
- Remove chicken from pot and set aside until cool. Reserve broth. Shred meat; discard skin and bones. Set a large strainer over another pot. Strain broth into clean pot. Stir in tomato paste. Return to medium heat and simmer, uncovered, until reduced to 5 cups, about 40 minutes. DO AHEAD: Can be made 1 day ahead. Chill uncovered until cool. Cover chicken and broth separately; keep chilled. Rewarm broth before continuing.
- For filling:
- Place dried chanterelles in a small bowl and cover with 1 cup hot water. Let steep for 10 minutes; set aside. Reserve soaking liquid. Cook carrots in a large saucepan of boiling salted water until crisp-tender, about 2 minutes. Using a slotted spoon, transfer to a medium bowl. Add peas to saucepan; cook for 1 minute; transfer to bowl with carrots. Add onions to saucepan and cook until crisp-tender, about 2 minutes. Remove from pot and set aside; let cool. Peel onions.
- In a large heavy saucepan, melt butter over medium heat. Whisk in flour. Cook over medium-low heat, whisking constantly, until golden brown, about 10 minutes. Whisk in herbs and warm broth from chicken. Using a slotted spoon, transfer chanterelles to saucepan. Pour in soaking liquid, leaving sediment behind. Simmer for 20 minutes.
- Set a strainer over another large pot. Strain broth into pot; discard solids. Add chicken, carrots, peas, onions, mushrooms, and potatoes. Bring to a simmer. DO AHEAD: Can be made 1 day ahead. Chill uncovered until cool; cover and keep chilled. Rewarm before continuing.
- Preheat oven to 400°F. Spoon filling into an 11x8x2" or 2 1/2-quart round baking dish. (Add pie bird, if using.) Top with pastry, pinching edges to seal. If not using pie bird, cut a 1" slit in center of crust for steam to vent. Brush pastry with beaten egg, and sprinkle with sea salt and pepper, if desired.
- Place pot pie on a rimmed baking sheet. Bake until crust is golden brown and filling is bubbly, about 45 minutes.
