1/3 cup pizza sauce
1/4 cup sliced ripes olive
1/4 cup diced green bell pepper
1/4 cup sliced mushrooms
1/3 cup shredded light mozzarella cheese

Steps:

  • Place rice cakes on baking sheet.
  • Spread pizza sauce evenly on each rice cake; top with olives, pepper, and mushrooms, and then with cheese.
  • Bake at 400 for 10 minutes. Serve immediately.

6 rice cakes
2 cups spaghetti sauce or 2 cups pizza sauce
2 cups mixed cheeses
1 cup turkey pepperoni
1 small onion, diced
1/2 bell pepper, diced
1/4 cup olive
2 teaspoons olive oil
1 cup parmesan cheese

Steps:

  • In a small sauté pan place onions and bell peppers with two tea spoons of olive oil. Sauté' until golden brown then place in a small bowl and set aside. Next take 6 rice cakes two at a time and place on a microwave safe plate and top with; sauce, cheese, bell pepper, olives, onions, turkey pepperoni, and parmesan cheese. Bake in the microwave for 3 to 4 minutes then serve with salad!
