GREEK CHICKEN BURGERS WITH TZATZIKI SAUCE
Add a Mediterranean twist to your chicken-spinach burger by using a pita bread, cucumber and tzatziki sauce - dinner ready in 30 minutes.

- Set oven control to broil. Chop enough cucumber to equal 1/2 cup; place in small bowl (slice 8 slices from remaining cucumber for sandwiches; set aside). Stir in remaining sauce ingredients; refrigerate until ready to use.
- In large bowl, mix chicken, spinach, olives, cornstarch, oregano, garlic, salt and pepper. Shape into 4 oval patties, each about 1/2 inch thick. On broiler pan, place patties. Broil with tops about 5 inches from heat 10 to 12 minutes, turning once, until thermometer inserted in center of burgers reads at least 165°F.
- Place burgers in pita pocket halves. To serve, top each burger with tomato, cucumber slices and about 3 tablespoons sauce.

- In a small bowl, mix the sauce ingredients; refrigerate until serving. , In a large bowl, combine the first seven burger ingredients. Add chicken; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. - Place shredded cucumber in clean dish towel; squeeze to remove any excess liquid. In small bowl, mix cucumber and remaining sauce ingredients. Cover; refrigerate until serving time.
- Heat gas or charcoal grill. In large bowl, mix all burger ingredients except buns, tomatoes and lettuce. Shape into 8 patties, 1/4 inch thick. Place patties on grill over medium heat. Cover grill; cook 5 to 8 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.

- In a small bowl, combine the onion, garlic and seasonings; crumble beef over mixture and mix well. Shape into six patties.
- Grill or broil for 5-7 minutes on each side or until a meat thermometer reads 160° and juices run clear.
- Meanwhile, in a small bowl, combine the lettuce, cucumber, yogurt and sesame seeds. Top each burger with lettuce mixture; serve on pita breads.

- Heat oven to 400°F.
- In a large bowl mix the chicken with, yogurt, fresh coriander,ginger, curry, salt, dry coriander, cumin and cayenne. Use your hand to really mix spices, yogurt and chicken together.
- Sprinkle with tomato, jalapeno, and onions.
- Mix until everything is evenly blended.
- If the mixture is so wet that it clings to your hands stir in some bread crumbs Form the mixture into patties approx 2 1/2" by 1/2" thick.
- Spray a baking sheet with veggie oil.
- Place patties on the baking sheet single layer and bake in 400°F oven for approx 8 minutes. Turn patties over and bake for another 8 minutes or until they are cooked. Slice the pitas in half, wrap in foil and warm in the oven during the last few minutes that the patties are baking. Place 2 patties in each pita and top with your favorites (I love chopped sweet onion, lettuce, tomatoes, feta cheese and sliced olives).

CHICKEN AND FETA BURGERS
These Mediterranean-inspired chicken patties are a light contrast to your beef burgers and complement any backyard get-together. If you use all-breast meat, add some olive oil to the meat mixture so they don't dry out. You could also use 2 tablespoons chopped Kalamata olives instead of the tapenade. Use tzatziki sauce on top to stay with the Mediterranean flavors or use a sesame dressing with shredded lettuce for an Asian taste.

- Mix chicken, oregano, tapenade, feta cheese, and garlic together in a bowl; form into 4 patties. Season burgers with salt and pepper.
- Preheat an outdoor grill for high heat and lightly oil the grate with olive oil.

- For the pita buns, mix all the ingredients except the salt in a bowl. Add the salt last and knead into pliable and elastic dough. Cover the bowl with cling film and allow the dough to rise for about 30 minutes. In the meantime, finely chop the sundried tomatoes and olives for the chicken burger. Beat the egg and knead together all ingredients for the burger, adding salt and pepper to taste. Divide the mince into 4 equal portions and shape them into burgers. Cover with cling film and place in the refrigerator for at least 1 hour. When the dough has risen, press out the air. Divide the dough into 12 equal parts and fold in the edges to create nice round balls of dough. Dust a board or platter with flour and place the dough balls on it. Cover with cling film and allow to rise again for 30 minutes. Ignite the charcoal in the Big Green Egg about 20 minutes before the end of the rising time. Heat the EGG, with the convEGGtor, the Cast Iron Grid and on top of that the Baking Stone to a temper
- Lightly dust your worktop with flour and roll out the dough balls. Place half of these (if it fits) on the Baking Stone and close the lid of the EGG. Bake the pita buns approx. 4 minutes until the bottom is nice and brown. Flip the buns and bake them for another 4 minutes. Remove the pita buns from the EGG, and bake the remaining buns in the same manner. Remove the Baking Stone, the grid and the convEGGtor and put back the Cast Iron Grid. Heat the EGG to 220°C.
