A just wonderful Penne dish with Italian cheese and grilled chicken. Very simple but surprisingly good. This based on a recipe is from Hub Pages Restaurant food at home it is extremely well done.

2 chicken breasts
1/3 cup Italian salad dressing
3 cups penne pasta
15 ounces alfredo sauce
8 ounces Italian cheese, shredded (Mozzarella, Parmesan, Provolone)
4 tomatoes
1 teaspoon basil
2 -3 garlic cloves
6 tablespoons olive oil

Steps:

  • Chop Chicken and marinade in Italian dressing for 30 minute.
  • Chop tomatoes, add oil chopped Garlic and basil to make bruschetta. Set aside.
  • Cook Penne in boiling water.
  • Grill or broil Chicken.
  • Divide pasta between two microwavable bowls.
  • Pour Alfredo sauce.over the pasta in each bowl.
  • Layer on Bruschetta.
  • Add a layer of Chicken.
  • Add a layer of shredded cheese.
  • Microwave for 3 min, or longer if previously chilled till cheese is melted.
  • Serve with Garlic bread.
  • Can be prepared well ahead of time in individual bowls, then Microwaved thoroughly.
  • NB. I have edited this recipe from the original post. Thanks to JFitz who kindly pointed out I had omitted to include the Garlic in the Bruschetta. JFitz also added the that she cooked the meal in a casserole dish, in the oven. I have done this successfully also, but I have failed at it by using low quality shredded Italian 3 cheese mix. Always use fresh.

Going off of applebee's dish, decided to try my own version at home. This is made with a jarred alfredo sauce for quick meals, but of course homemade is always better. Feel free to use your favorite alfredo! For really quick meal use the precooked chicken slices you can find in the freezer section at your grocer freezer.

1 teaspoon fresh basil leaf, sliced thin
2 roma tomatoes, small diced
1 garlic clove, pressed
1/4 teaspoon salt
1/2 teaspoon olive oil
1 lb chicken breast
2 tablespoons lemon juice
1 tablespoon olive oil
1/2 teaspoon Italian spices
5 button mushrooms, sliced
1 tablespoon purple onion, very thin sliced (optional)
1 (16 ounce) jar roasted garlic alfredo sauce
2 ounces provolone cheese (chopped up in little pieces or shredded)
2 ounces grated parmesan cheese
2 ounces mozzarella cheese (cut into little pieces or shredded)
2 teaspoons olive oil
1/2 lb penne pasta (cooked according to box directions)

Steps:

  • 2T lemon juice, 1 T olive oil and italian seasonings together, pour over chicken and place in a plastic bag or a marinator container. (i use a vacuume sealed container to speed up process) let marinate for 30 minutes to a couple hours.
  • start bruscetta mixture too. just mix altogether and cover in the fridge until dinner is ready to serve.
  • heat grill and cook chicken on a medium heat until chicken is completely done. start to cook your pasta on stove according to package directions.
  • meanwhile heat 2 tsp olive oil over med-high heat in a heavy skillet and cook mushrooms and onions until tender. turn off skillet
  • empty jar of alfredo sauce into skillet and add drained cooked pasta.
  • chicken is done. slice thick or thin and add to the skillet mix altogether.
  • heat contents of skillet up until just about bubbly then add the cheeses and mix well until combined and melted.
  • serve in pasta dishes and top with bruscetta mix
  • along with some garlic bread or sticks this is a great meal!

1 tablespoon canola oil
1 pound boneless skinless chicken thighs, cut into 1-inch pieces

This is my version of the classic macaroni and cheese Xea's grandmother makes. Older kids can easily make this by themselves. Add a big green salad and they can have dinner ready before you get home from work!

1 pound penne rigate pasta
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3 cups heavy cream
1/4 teaspoon freshly grated nutmeg
1 tablespoon seasoned salt, such as Lawry's
1 teaspoon freshly ground black pepper
1/2 pound shredded whole-milk mozzarella cheese
1/2 pound shredded Cheddar cheese
1/2 cup shredded Parmigiano-Reggiano cheese
1/2 cup dried breadcrumbs (preferably panko)

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare the penne rigate according to the package directions, minus 1 or 2 minutes of cooking time (see Cook's Note). Drain, then pour the pasta into a 9-by-13-inch glass baking pan.
