RANCH CHICKEN PATTIES WITH CREAMY CHEDDAR SAUCE



Ranch Chicken Patties with Creamy Cheddar Sauce image

These are a great quick dinner with some steamed broccoli or green beans on the side. Most everything is from the pantry. To serve, place 2 patties on a plate and spoon sauce over. Garnish with chopped green onions if desired. Quick and easy!

2 (12.5 fl oz) cans chicken chunks, drained
1 ½ cups panko bread crumbs
1 (4 ounce) packet saltine crackers, finely crushed
1 cup sour cream
2 eggs
½ (1 ounce) package ranch dressing mix, or to taste
1 tablespoon Dijon mustard
1 tablespoon dried onion granules
1 teaspoon ground black pepper
1 tablespoon dried parsley
1 tablespoon cooking oil, or as needed
1 (11 ounce) can condensed Cheddar cheese soup
1 cup chicken broth
1 cup sour cream
5 green onions, thinly sliced

Steps:

  • Mix chicken, panko, saltines, sour cream, eggs, ranch dressing mix, mustard, onion, black pepper, and parsley together in a bowl until well combined. Shape chicken mixture into 8 patties, approximately 3/4-inch thick.
  • Pour panko onto a plate, coat patties, and place on a platter. Chill for 1 hour or overnight.
  • Coat a nonstick skillet with vegetable oil over medium heat. Cook patties until golden brown and heated through, 5 to 7 minutes per side. Place a layer of paper towels on a baking rack, transfer patties to paper towels to drain.
  • Combine soup and broth in a saucepan; heat until just boiling, about 5 minutes. Reduce heat to low, stir sour cream and green onions into sauce. Serve patties with sauce on top.

3 cups chicken broth
½ cup water
2 cups sliced fresh mushrooms
½ cup sliced bamboo shoots, drained
3 slices fresh ginger root
2 cloves garlic, crushed
2 teaspoons soy sauce
¼ teaspoon red pepper flakes
1 pound skinless, boneless chicken breast halves - cut into thin strips
1 tablespoon sesame oil
2 green onions, chopped
¼ cup chopped fresh cilantro
3 tablespoons red wine vinegar
2 tablespoons cornstarch
1 egg, beaten

Steps:

  • In a saucepan, combine the chicken broth, water, mushrooms, bamboo shoots, ginger, garlic, soy sauce, and hot pepper flakes. Bring to a boil, then reduce the heat to low, cover and simmer while you assemble the rest of the ingredients.
  • Place the chicken slices into a bowl and toss with the sesame oil to coat. In a separate bowl, stir together the cornstarch and vinegar, and set aside.
  • Increase the heat under the broth to medium-high, and return to a rolling boil. Add the chicken slices. Return to a boil, and then drizzle in the egg while stirring slowly to create long strands of egg. Stir in the vinegar and cornstarch. Simmer over medium heat, stirring occasionally, until chicken is cooked through and the broth has thickened slightly, about 3 minutes. Serve garnished with green onions and cilantro.

Semi-authentic Chinese dish that my BF and I love! With all the colorful vegetables, this makes a pretty dish.

1 large egg
2 tablespoons cornstarch
300 g boneless skinless chicken thighs or 300 g boneless skinless chicken breasts, cut into bite-sized chunks
1/4 cup peanut oil (or other vegetable oil)
4 slices ginger
3 birds eye chiles, halved crosswise (amount depends the heat desired)
1 small yellow onion, sliced
2 cloves garlic, minced
60 g carrots, julienned (1/4 cup)
1 small green pepper, julienned
60 g shiitake mushrooms, julienned (4 medium or 1 cup sliced)
1/4 cup chicken stock (approx) or 1/4 cup water (approx)
1/3 cup white wine (I used Chardonnay)
4 teaspoons tomato paste
1 teaspoon brown sugar
1 lime, juice of
2 teaspoons soy sauce
fresh cilantro leaves
green onion, sliced diagonally

Steps:

  • Stir cornstarch into slightly beaten egg until well combined
  • Add chicken pieces, stir to coat
  • Heat oil in a wok over medium-high heat until just below smoking
  • Shallow-fry the coated chicken in several batches until golden brown, turning if necessary, then remove to drain on absorbent papers
  • Leave about 2 tsp hot oil in the wok, stir fry ginger and chilli for 30sec, until fragrant
  • Add onion slices, continue to saute another 1-2mins, until onions are soft
  • Add garlic and stir fry for another minute
  • Add the carrot matchsticks, continue to cook until they're semi-tender
  • Stir in chicken pieces and saute for 1 minute
  • Add in the sauce mixture, adding chicken stock/water when necessary, depending how much sauce you like
  • Finally, add the green pepper and shitake mushrooms and cook for another minute
  • If you feel that the sauce is too thick, add more stock or water; if too thin, thicken with cornstarch slurry (1 tsp cornstarch dissolved in 1 TB cold water)
  • Garnish with fresh cilantro and/or sliced green onions before serving with jasmine rice

This recipe comes from the New York Times International Cookbook, which was published in 1971. I recently rediscovered this cookbook languishing on my bookshelf. I had a note on this recipe from 1974 -- can you imagine? The original recipe bears the name of a Russian innkeeper who was famous for this dish, or so the recipe introduction says. Anyway, it's quite an elegant and delicious way to use humble ground chicken.

1 lb ground chicken
1/4 teaspoon nutmeg, freshly grated
1/2 cup all-purpose flour, seasoned lightly with salt and pepper
1 egg, beaten
1 1/2-2 cups breadcrumbs, fresh
1 1/2 tablespoons all-purpose flour
1 1/2 tablespoons salted butter
1 tablespoon paprika, premium quality Hungarian
1/2 teaspoon dried thyme
1/2 cup chicken stock
1 teaspoon cognac or 1 teaspoon dry sherry
2 teaspoons fresh lemon juice
1/4 cup sour cream, dairy type
1 tablespoon salted butter
1 tablespoon vegetable oil
8 ounces noodles, cooked, curly wide egg type

Steps:

  • Form chicken into 4 oval patties about 1/2" thick. Dredge patties in flour, then egg, then bread crumbs, gently pressing breadcrumbs on. Place on a rack and chill in refrigerator for about 30 minutes or 15 minutes in a blast chiller.
  • Combine about 1 tablespoon vegetable oil and 1 tablespoon butter in a saute pan. When bubbly, add breaded chicken patties. Saute until golden. Flip. Saute until golden. Remove to an oven safe dish. Add more butter and oil if needed during sauteing. Finish cooking patties in a 350 degree oven for about 10 minutes. Test with a meat thermometer for doneness. Meanwhile, make the sauce.
  • For sauce:.
  • Make a roux with the butter and flour in a small saucepan. Allow to bubble gently over low heat, about 2 - 3 minutes, stirring constantly with a wire whisk. Add paprika, thyme, chicken stock, heavy cream, cognac or sherry and lemon juice, whisking constantly. Allow the mixture to come up to a boil, reduce heat and allow to thicken, about 2 - 3 minutes. Thin if needed with additional chicken stock. Remove from heat. Add sour cream and blend thoroughly. Keep warm, but do not allow to boil.
  • Place cutlets on a bed of cooked egg noodles, pour sauce over all and serve.

1 tablespoon low-sodium chicken stock
1 tablespoon soy sauce
2 teaspoons sugar
1 1/2 tablespoons minced jalapenos or 1 1/2 tablespoons other fresh chili peppers

Steps:

  • Combine all ingredients in small bowl and set aside until needed (Sauce can be prepared a few hours in advance.) Once all ingredients have been stir-fried, add sauce to pan along with any ingredients that have been stir-fried and then removed from pan.
  • Stir-fry until ingredients are well coated with sauce and sizzling hot, about 1 minute.
