CREAMY GARLIC CHICKEN PASTA {WITH TOMATO & SPINACH}
Chicken pasta in a garlic tomato cream sauce is the ultimate comfort meal. Made with pasta, chicken, spinach, seasonings, lots of yummy garlic, and parmesan cheese, you can make this incredible dish in under 30 minutes!

Steps:
- Prep Pasta: Boil water in a large pot and cook pasta al dente according to package instructions.
- Season both sides of chicken breasts with salt garlic powder, Italian seasoning, paprika, and a generous pinch of salt and pepper.
- Heat olive oil in a large heavy duty pan over medium-high heat and cook chicken breasts 5 minutes per side or until cooked through. Remove from heat and set aside.
- To the same pan, add the butter and garlic and cook for 1 minute or until fragrant. Add the tomato and spinach and cook 2-3 minutes or until the tomato and spinach are soft and wilted.
- Reduce the heat and add the heavy cream and parmesan cheese. Whisk until fully incorporated and creamy. Add a pinch of salt and pepper to taste.
- Drain pasta and slice chicken into thin slices or cubes and return to the same pan. Stir to combine and serve!

I had some chicken, sour cream, Lipton onion soup and Pasta...this is what I came up with..and it was absolutely delicious.. I thought the kids were going to lick their plates..LOL! I just served it with some crusty bread to sop up that lovely sauce.. My pictures.

Steps:
- 1. In a medium sized bowl; mix the soup mix, 3 tablespoons corn starch and 2 1/2 cups boiling water. Set aside.
- 2. In a large skillet, with about a tablespoon of oil; saute the celery and carrots until tender. Add the garlic the last minute of cooking. Remove the vegetables from skillet and set aside.
- 3. Season chicken with salt, pepper and paprika. In the same skillet you saute the veggies in; add enough oil to saute the chicken; over medium heat. Stirring occasionally until tender and no longer pink.
- 4. Add the vegetable back into the skillet with the chicken. Stirring to blend.
- 5. Add the sour cream to the soup mixture, stirring until well blended.
- 6. Now, pour the soup and sour cream mixture over the chicken and vegetable, stir to blend. Bring to a boil, then simmer until sauce is thickened. About 5 minutes. Add the parsley; stir. Taste the sauce and adjust the seasonings, if any is needed.
- 7. Serve over prepared pasta or rice. This was so flavorful..I hope you enjoy it as much as my family did.
CHEESY CHICKEN PASTA

- Saute the onion: Heat the olive oil in a large skillet or dutch oven over medium heat. Add the onion and cook till translucent.
- Brown the chicken: Add the chicken and season with salt and pepper and cook through until browned. Stir in the garlic and cook till aromatic for about 1 minute.
- Combine the cheesy chicken pasta: Add the pasta, chicken broth, milk, stir and bring to a boil. Reduce the heat, cover and simmer for 15 - 20 minutes or until the pasta is cooked. Uncover and if there's any more liquid cook for another 5 minutes or until all the liquid has cooked off.
- Finish the dish: Remove from heat, stir in the cream cheese till creamy and melted. Add the spinach, mozzarella and Parmesan cheese. Stir until all the cheese melts and the spinach wilts. Serve while warm.
- Serve while warm.

- In a small bowl, combine the first 4 ingredients; rub over chicken. Place in a 3-qt. slow cooker. In a large bowl, combine the soup, sour cream and wine; stir in mushrooms. - Cook the pasta following pack instructions. Reserve 100ml of the water and drain the pasta in a colander.
- Meanwhile, heat the oil in a frying pan on a medium heat and fry the garlic and spinach for 3 mins until wilted. Add the soft cheese and heat until melted. Stir in most of the parmesan, then add the shredded chicken, peas and some of the pasta water. Bring to the boil and bubble for 2-3 mins until the chicken and peas are completely heated through.
- Add the pasta and stir until combined. Add more pasta water to loosen the sauce, if needed. Remove from heat, sprinkle over the remaining parmesan and parsley or basil to serve.
