CHICKEN PARMESAN PIE

1 package Pillsbury reduced fat crescent rolls
1 cup pasta sauce (reduced fat kind)
12 oz cooked shredded chicken
2/3 cup light shredded mozzarella
1/2 cup panko crumbs (or bread crumbs but panko are a little lighter in points)
2 Tbsp finely grated parmesan cheese
1 tsp olive oil
Fresh parsley

Steps:

  • Preheat oven to 350F, spray a 8 inch round pie dish. Unroll your dough and use the pieces to shape a pie crust into your dish, this will require a little work and you might need to break some pieces and even things out. Prebake dough for 5-7 minutes in oven.
  • Place a few tablespoons of your pasta sauce on the bottom of the pie crust.
  • In a bowl mix your shredded chicken with the remaining pasta sauce. Spoon into your pie crust.
  • Sprinkle your mozzarella cheese on top, then your fresh chopped parsley.
  • In a small bowl mix your oil, parmesan and panko crumbs, sprinkle on top of your pie.
  • Bake in oven for 15-20 minutes checking that your dough does not burn.
  • Cut into six and serve immediately.

3/4 cup cottage cheese
1/3 cup grated Parmesan cheese
1 1/2 cups cooked chicken, cut up or shredded
1 1/4 cups shredded Mozzarella cheese
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
6 ounces tomato paste
1 cup milk
2 eggs
2/3 cup Bisquick
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 400 degrees F. Spray a pie pan with non-stick cooking spray.
  • Mix cottage cheese and grated Parmesan cheese; spread into the bottom of the pie plate.
  • Combine chicken, 1/2 of the shredded Mozzarella cheese, garlic powder, dried oregano and basil and tomato paste; spoon over cheese mixture.
  • Using a blender, beat milk, eggs, Bisquick and pepper for 15 seconds; pour into pie plate over both layers.
  • Bake for 30 minutes or until knife comes out clean; top with remaining shredded Mozzarella. Bake for 5 additional minutes; if desired, broil for 1 minute until golden brown.
  • Let stand for 10- 15 minutes to set up before cutting.

1/2 cup parmesan cheese
1 1/2 cups cooked chicken
1 1/4 cups mozzarella cheese (5oz)
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 (6 ounce) can tomato paste
1 cup milk
2 eggs
1/2 cup Bisquick
1/4 teaspoon pepper

Steps:

  • Heat oven to 400.
  • Grease pie 10 inch pie plate.
  • Layer cottage cheese and Parmesan cheese in pie plate.
  • Mix chicken, 1/2 cup of the mozzarella,garlic powder, oregano, basil and tomato paste.
  • Spoon over Parmesan cheese.
  • Beat remaining ingredients in blender on high 15 seconds or 1 min with hand mixer until smooth.
  • Pour into pie plate.
  • Bake 30 minutes.
  • Top with remaining mozzerlla and bake 5 to 8 minutes longer or until knife inserted in center comes out clean.
  • Cool 5 minutes and serve.

3/4 c low/no fat cottage cheese
1/3 c parmesan cheese, regular or fat free
1 1/2 lb cut-up cooked chicken breast
1 1/2 c mozzarella cheese
1/2 tsp oregano, dried
1/2 tsp basil, dried
1/2 tsp garlic
6 oz can tomato paste
1 c milk, regular or low-fat
2 eggs
2/3 c bisquick
1/4 tsp pepper

Steps:

  • 1. Preheat oven to 400 degrees. Grease a deep-dish pie pan.
  • 2. Layer cottage cheese & Parmesan in pie pan.
  • 3. Mix together chicken, 1/2 cup of the mozzarella, spices & paste; Spoon over Cheeses in pie pan.
  • 4. Beat the milk, eggs, bisquick & pepper in a blender on high for about 15 seconds or with a wire whisk about 1 minute..til smooth. Pour over chicken.
  • 5. Bake 30 minutes; sprinkle with the rest of mozzarella cheese and bake 5-8 minutes longer or til knife inserted near center comes out clean.

I wanted a parma pie without using bisquick (we don't have it here in Oz)so went searching, I found this on a low-carb web site. I'm posting the recipe as written but I simply combined all the ingredients together,(except water)spooned into pastry, wacked them in the pie maker & voila, chicken parma pies!

1/2 cup cottage cheese
1/3 cup parmesan cheese, grated
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon basil
3 tablespoons tomato paste
1/4 cup cream
1/4 cup water
3 eggs
1/4 teaspoon pepper
1 1/2 cups chicken, cooked & shredded
1 1/4 cups mozzarella cheese, grated, separated

Steps:

  • Heat oven to 200.C.
  • Spread cottage cheese on the bottom of a glass pie plate and then sprinkle with parmesan cheese.
  • Mix chicken & 3/4 cup mozzarella cheese with the herbs & tomato paste and then add eggs.
  • Mix cream with water and add to the chicken mixture.
  • Pour into pie plate and bake for 25-30 mins (some cream will rise to the top).
  • Top with remaining mozzarella and bake for 5 mins more.
