Steps:
- Preheat oven to 400°F. Place rolls on a cutting board, using a serrated knife cut rolls in half lengthwise (without breaking rolls apart). Open rolls and place tops on one side of a baking sheet and bottoms on the other side, cut side up. Melt butter in a small microwave safe bowl, stir in garlic powder. Brush butter on cut side of bread. Bake bread for 8 to 10 minutes until bread is lightly golden brown. Meanwhile warm a large skillet over medium high heat. Drizzle with olive oil. Sprinkle chicken with half the salt and half the pepper. Cook until browned, flip and cook until cooked through, about 8 minutes total. Remove bread from oven. Carefully remove top halves of rolls and place on a plate. Set aside. Sprinkle Parmesan cheese over the bottom halves. Top with cooked chicken pieces. Drizzle each chicken piece with about 1 tablespoon of marinara sauce and top with mozzarella cheese. Bake 5 minutes or until cheese is bubbly and melted. Place top halves back on chicken. Cut into sliders, serve and enjoy!
CHICKEN PARMESAN
My version of chicken parmesan is a little different than what they do in the restaurants, with less sauce and a crispier crust.

Steps:
- Preheat an oven to 450 degrees F (230 degrees C).
- Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season chicken thoroughly with salt and pepper.
- Beat eggs in a shallow bowl and set aside.
- Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.
- Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.
- Dip flour coated chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides. Repeat for each breast. Set aside breaded chicken breasts for about 15 minutes.
- Heat 1 cup olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side. The chicken will finish cooking in the oven.
- Place chicken in a baking dish and top each breast with about 1/3 cup of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan cheese on top and drizzle with 1 tablespoon olive oil.
- Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat oven to 450 degrees F (230 degrees C). Place a cooling rack on a baking sheet and set aside.

- Heat olive oil over medium-high heat in a large skillet. Dredge chicken pieces first in flour mixture, then eggs, and finally panko. Pan fry the chicken until lightly browned, no longer pink in the center, and the juices run clear, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove to the cooling rack; sprinkle lightly with salt.
- Top each piece of chicken (still on cooling rack) with 2 tablespoons of marinara sauce and 1 tablespoon of mozzarella cheese.
- Bake in the preheated oven until cheese is melted, 3 to 5 minutes. Remove from oven; place chicken on buns.

- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Butter the slider rolls and place them on the prepared baking sheet.
- Make a breading assembly line with three separate dishes. Pour the flour in a dish then season with garlic powder, sea salt, and freshly cracked pepper, to taste; mix until well combined. Beat the egg and milk together in a bowl; whisk well. Combine the Italian panko crumbs together in a separate dish with the parmesan; mix well.
- Prepare the chicken by slicing the chicken breasts in half lengthwise (place your hand on the chicken breast then carefully cut horizontally) then cut each portion in half.
- Dredge the chicken by dipping each piece of chicken completely in the flour, followed by the egg, and lastly the Panko/Parmesan mixture. Set on a plate and repeat with the remaining pieces of chicken. Place the plate in the refrigerator for 30 minutes. Side Note: Don’t skip this step because it helps the breading stay adhered to the chicken.
