SUPER EASY BAKED CHICKEN PARMESAN FOR TWO



Super Easy Baked Chicken Parmesan for Two image

This recipe is based off of a Cooking Light recipe, but it is not pan fried at all. You could easily double this recipe, but I cook for two, so this is perfect for us. I serve this with veggies and crescent rolls.

1 tablespoon parmesan cheese, grated (the powdery kind)
2 tablespoons Italian seasoned breadcrumbs
1/8 teaspoon salt
1 large egg, lightly beaten
2 (5 ounce) boneless skinless chicken breasts, pounded to 1/4 inches
3/4 cup spaghetti sauce (tomato-basil is good)
1/2 cup mozzarella cheese, grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Lightly spray a pie plate or a foil-lined baking sheet with cooking spray; set aside.
  • Combine Parmesan, breadcrumbs, and salt in a shallow dish (I use a paper plate). Place egg in a separate shallow dish.
  • Dip each side of each chicken breast in egg, then dredge in the breadcrumb mixture. Place on prepared pan.
  • Bake for 18 minutes, flipping once halfway through, until done.
  • Take the chicken out and switch the oven to BROIL.
  • Divide the sauce evenly and pour over each piece of chicken. Sprinkle evenly with the mozzarella cheese.
  • Broil 2 minutes or until the cheese melts.

2 boneless skinless chicken breasts (about 8oz)
1/4 teaspoon salt
1 egg (beaten)
1/2 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese
1/4 cup olive oil
2 slices mozzarella cheese
1 (14 ounce) jar pasta sauce

Steps:

  • Preheat Oven to 400 degrees F.
  • Place chicken breasts between 2 sheets of plastic wrap (1 at a time) and pound to 1/2 - 1/4 inch & then salt.
  • In bowl mix Breadcrumbs & 1/4 Cup Parmesan Cheese.
  • In separate bowl beat egg.
  • Heat 1/4 cup of olive oil in a large sauté pan on medium-high heat.
  • Dip chicken breasts 1 at a time in egg & then breadcrumb mix.
  • Place coated chicken breasts in oil and turn heat down to medium.
  • Fry chicken breasts 3-4 minutes per side.
  • Thickly coat bottom of a baking dish (large enough to fit both chicken breasts) with pasta sauce.
  • Place chicken breasts on top of sauce in baking dish.
  • Spread more sauce over top of the chicken, and then place 1 slice over top of each chicken breast.
  • Sprinkle remaining 1/4 Cup of Parmesan cheese over top of everything.
  • Bake for approximately 10-12 minutes (or until mozzarella begins to brown).
  • Perfect served over pasta with remaining sauce!

Next, saute the garlic in the 2 tablespoons of oil in a medium skillet until fragrant but not burned, about 2 minutes over medium heat. Stir in the tomatoes, then bring to a simmer. Simmer for 10-15 minutes, until slightly thickened. Off heat, stir in the basil, sugar, salt and pepper to taste. Cover to keep warm.
  • For the chicken and spaghetti: adjust an oven rack to be 4 inches from the broiling element. Turn the broiler to high.
  • Spread the flour in a shallow dish. Beat the egg in a second shallow dish. Combine the bread crumbs and Parmesan in a third shallow dish. Pat the chicken dry with paper towels, then season with salt and pepper. Dredge each chicken breaset in the flour, then egg, then bread crumbs.
  • Heat the oil in a 10" large skillet over medium-high heat until the oil shimmers. Gently lay the chicken in the oil, and cook until golden brown on each side and the chicken registers 160 degrees (about 4-6 minutes per side). Place the chicken breasts on a baking sheet.
