CHICKEN PAILLARDES & MUSHROOMS IN CREAMY COGNAC DIJON SAUCE
The French really know how to do their chicken---quick, easy, and elegant--this dish is very simple to put together and impressive served to company, or for that special romantic candlelight dinner for two! Steps:
- Season the chicken with the salt and pepper.
- Heat the olive oil and the butter in a large frying pan over medium-high heat. Add the chicken and saute until cooked through, turning once (about 5 minutes total time). Transfer to a plate, cover with foil and keep warm.
- Add the Cognac and the wine to the pan and deglaze, stirring to scrape up the brown bits. Now add the sliced mushrooms and saute for about 5 minutes until the mushrooms begin to soften and the sauce is reduced by half.
- With a slotted spoon, remove the mushrooms to the plate of chicken, and keep warm.
- Whisk in the cream, mustard and tarragon to the sauce and cook, continuing to whisk, about 2 minutes until thickened. Pour any juices that have accumulated on the plate into the sauce and whisk to combine.
- Serve the chicken topped with the mushrooms and wine sauce, garnish with the snipped parsley. Wonderful served with a tossed salad and Potatoes Dauphinoise (recipe #359440).

CHICKEN PAILLARD WITH SAUTEED MUSHROOMS
Many years ago, I needed fresh cèpes for a job. When they were delivered, it was obvious there had been some horrible, grievous misunderstanding. I had ordered two pounds and they had delivered twenty! I called and they promised to pick them up the next day. However, my boss at the time was not the sort to take imperfections lightly. This may sound deceitful, but the truth is, it wasn't worth trying to explain. I just needed to make them go away. So I had eighteen pounds and over $600 worth of mushrooms to hide-no easy feat! It was like hiding a skunk, a deliciously intoxicating skunk, but a skunk nonetheless.

- Place the flour in a shallow dish and season with salt and pepper. Season the chicken on both sides with salt and pepper.
- To cook the chicken, in a large skillet, heat 1 tablespoon each of the oil and the butter over medium-high heat until very hot. Working with 2 pieces at a time, dredge both sides of the chicken in flour, then shake off the excess flour. Without crowding, add the 2 pieces to the skillet, and brown on both sides, 2 to 3 minutes per side. Transfer to a warm platter and cover loosely with aluminum foil to keep warm. Repeat with the remaining 1 tablespoon each of oil and butter, and chicken.
- To make the sauce, pour all but 1 tablespoon of oil from the skillet. Return the skillet to the heat. Decrease the heat to medium. Add the wine, using a wooden spoon to loosen any browned bits from the bottom of the pan. Add the mushrooms, cèpes and strained liquid, thyme, and parsley. Season with salt and pepper. Cook, stirring occasionally, until the mushrooms are tender, 8 to 10 minutes. Taste and adjust for seasoning with salt and pepper. Spoon the mushrooms over the chicken and serve immediately.
- Called cèpes in French, and porcini in Italian, Boletus edulis mushrooms are extremely rich, with an earthy, assertive flavor. They are found only in the wild and not commercially farmed; their incredible flavor and limited supply bestow an intoxicating allure similar to that of black truffles. They are available fresh in season, but are available frozen or dried throughout the year. To plump and reconstitute dried mushrooms, place the mushrooms in a heatproof container. Pour over boiling water and let rest until plump and rehydrated, about 15 minutes. Using a slotted spoon, remove the mushrooms to a cutting board. Coarsely chop and set aside for later use. Strain the soaking liquid through a fine mesh sieve or coffee filter and reserve as a very flavorful cooking liquid.
CHICKEN & MUSHROOMS WITH CREAMY DIJON SAUCE
This is a very easy and tasty chicken dish, thanks to the wonderful creamy mustard sauce. To make the dish richer,use margarine or butter instead of the cooking spray. You can also use whipping cream instead of the fat-free half and half. You can use any type of mushroom, depending on your preference. I like baby bellas.

- Spray skillet with cooking spray. Heat to medium heat.
- Sprinkle chicken with thyme, rosemary (optional), salt, and pepper.
- Place chicken in the preheated skillet and cook 4 minutes on each side, or until chicken is lightly browned.
- Add the chicken stock and sherry. Bring to a boil.
- Cover and reduce heat; simmer for 10 minutes.
- Add mushrooms and cook uncovered until the mushrooms are tender.
- Remove the chicken and mushrooms from the pan; keep warm.
- Add the half and half and mustard to the skillet. Whisk together to blend. Cook 1 minute or until thoroughly heated. If desired, thicken sauce with cornstarch -- be careful -- it is easy to get it too thick.
- Return the mushrooms to the skillet, and serve the sauce and mushrooms over the chicken.

CHICKEN PAILLARDS WITH ARTICHOKES & DIJON SAUCE
Looks like a company meal but cooks up in a hurry. The page in my cookbook is well stained and scribbled having made this many times over the years. The final flavor of this dish really comes from the mustards choosen. I tend to like stronger flavors and look for a nice spicy whole-grain mustard. I often double the sauce when serving this with rice or couscous. Bon Appettit!

- Place the chicken breasts between 2 sheets of waxed paper and pound into 3/8 inch thickness. Make them thicker if desired, just be certain the breasts are an even thickness for cooking purposes. Season the chicken with a bit of salt and pepper.
- Heat 1 teaspoon of oil in a large non stick skillet over medium high heat. Cook chicken until the outside is golden brown in color and the breast is cooked through, about 2-3 minutes per side. Plate the cooked chicken and cover to keep warm. You can also keep it warm in a 200 degree oven.
- In the same pan used to cook the chicken, add the remaining teaspoon of oil and 1 tablespoon of the chicken broth. Cook the shallots until they are translucent but not browned.
- Mix the cornstarch with a tablespoon of the chicken broth. Add the remaining broth to the pan with the scallions. Add the constarch & broth mix to the pan and bring the liquid to a boil, stirring while the mix thickens.
- Mix in the two mustards and vinegar making sure they are well incorporated. Stir in the tarragon and artichokes. Let the sauce simmer 3 to 5 minutes until the artichokes are warmed through.
- To plate, spoon sauce over warmed paillards.
- Garnish with additional tarragon if desired.

- Pour milk into a wide, shallow bowl. Spread flour into a separate wide, shallow bowl. Dip each chicken breast half into milk to coat; move to the dish with the flour and press chicken into flour to coat entirely.
- Heat oil in skillet over medium-high heat. Fry chicken in hot oil until golden brown, about 3 minutes per side. Remove chicken to a plate; drain fat from the skillet and return to medium-high heat.
- Melt butter in the skillet. Saute mushrooms in hot butter until softened, about 2 minutes. Pour white wine over the mushrooms. Stir gravy, half-and-half, and mustard with the mushrooms; season with salt and pepper. Bring the liquid to a simmer and cook for 2 minutes.
- Return chicken to the skillet and cook until the chicken is no longer pink in the center and the juices run clear, about 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
