This is a take on a recipe from the Better Homes and Gardens Magazine, January 1997. The original recipe calls for turkey, which we use occasionally, but we love to have this at other times throughout the year with chicken.

1/2 cup onion, chopped
4 ounces reduced-fat cream cheese, softened (Neufchatel)
1 tablespoon water
1 teaspoon ground cumin
1/4 teaspoon pepper
1/8 teaspoon salt
4 cups cooked turkey breast or 4 cups cooked chicken breasts, shredded
12 (7 -8 inch) flour tortillas
nonstick spray coating
1 (10 3/4 ounce) can low-sodium condensed cream of chicken soup
1 (8 ounce) carton light sour cream
1 cup 2% low-fat milk
2 -4 tablespoons pickled jalapeno peppers, finely minced (May substitute 1-4 oz can diced green chilies, if you prefer it more mild)
1/2 cup Mexican blend cheese (I use Sargento brand)
1/4 cup cilantro (optional) or 1/4 cup parsley, minced (optional)
1/4 cup tomatoes, chopped (optional)
1/4 cup sweet red pepper, chopped (optional)

Steps:

  • In a small saucepan cook onion, covered, in a small amount of water over medium heat until tender; drain.
  • In a medium mixing bowl, stir together the cream cheese, the 1 tablespoons.
  • water, cumin, pepper, and salt.
  • Stir in the cooked onion and chicken.
  • Wrap the tortillas in foil.
  • Heat in a 350 degree oven for 10 to 15 minutes or until softened (if using a microwave, wrap the tortillas in a microwave-safe paper towel and micro-cook on high for 30 to 60 seconds until softened).
  • Meanwhile, spray a 9 x 13 baking dish with non-stick coating.
  • For each enchilada, spoon approximately 1/4 cup of the chicken mixture onto one tortilla; roll up.
  • Place the tortilla, seam side down, in the baking dish.
  • Repeat with the remaining filling and tortillas.
  • For the sauce, in a medium mixing bowl combine soup, sour cream, milk, and jalapeno peppers; pour mixture over the enchiladas.
  • Bake covered, in a 350 degree oven for about 40 minutes or until heated through.
  • Sprinkle with the cheese.
  • Bake the enchiladas, uncovered, for 4 to 5 minutes more until the cheese is melted.
  • Garnish with cilantro, parsley, tomatoes, and sweet peppers if desired.
  • NOTE: Usually I don't have chicken prepared in advance, so I use 4 chicken breast halves and sprinkle them with salt, pepper, and cumin.
  • I either saute these or grill them until no longer pink.
  • I shred the meat and proceed as usual with the recipe.
  • The time to make does not include this step.

3 cups cubed cooked turkey
1 cup chicken broth
1 cup cooked long grain rice
2 plum tomatoes, chopped
1 medium onion, chopped
1/2 cup canned chopped green chilies
1/2 cup sour cream
1/4 cup sliced ripe or green olives with pimientos
1/4 cup minced fresh cilantro
1 teaspoon ground cumin
8 flour tortillas (10 inches)
1 can (28 ounces) green enchilada sauce, divided
2 cups shredded Mexican cheese blend, divided

Steps:

  • In a large saucepan, combine the first 10 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Remove from the heat. , Place 1/2 cup turkey mixture down the center of each tortilla; top each with 1 teaspoon enchilada sauce and 1 tablespoon cheese. Roll up and place seam side down in a greased 13x9-in. baking dish. Pour remaining enchilada sauce over top; sprinkle with remaining cheese. , Cover and bake at 350° for 30 minutes. Uncover; bake 8-10 minutes longer or until bubbly.

I love enchiladas and what better way to use up some of the Holiday chicken or turkey. Make the enchiladas as hot or as mild as you like. I like to prepare the enchilads early in the day put them in the fridge, take out 1/2 hour before baking. I like my veggies crunchy so I do not prefry the ingredients but if you wish fry the veggie in a bit of oil until softened. You may use lite chesse and low fat sour cream. Sub with 2% cottage cheese for the sour cream if you wish. Nice to have a green salad along side

1/2 cup sweet onion, chopped
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
1/2 cup yellow pepper, chopped
2 garlic cloves, minced
1 1/2 cups cooked chicken, chopped
1 1/2 cups salsa, hot
3/4 teaspoon cumin
1 1/2 cups mozzarella cheese, shredded
1 cup sour cream
4 whole wheat tortillas or 4 flour tortillas
19 ounces black beans, Drained and rinsed

Steps:

  • Mix together the onion, peppers, garlic, cumin and chicken/turkey.
  • Lay out the tortillas flat & open.
  • Distribute the mixed vegggies evenly down the center of the four tortillas .
  • Place a couple of tbsp of the salsa over the veggies.
  • Add a tbsp or so of the cheese.
  • Fold the sides of each tortilla over so they overlap and place folded side down in a casserole large enough to hold all four tortillas and the black beans.
  • Place the tortillas side by side in a lightly greased casserole leaving room around the edges for the black beans.
  • Place the black beans around the edges of the casserole (around the tortillas).
  • Pour the remaing Salsa over the tortillas and the beans, cover the edges so they do not get dry.
  • Sprinkle the remaining cheese over all.
  • Add the sour cream.
  • Cover with foil and bake for 20 minutes in a 375 oven.
  • Remove foil and let the chesse get golden.
  • Serve nice and HOT.

1 1/2-2 lbs chicken breasts
1 (15 ounce) can black beans, drained (optional)
2 cups dry rice, cooked
4 ounces tomato paste
1 1/2 cups milk
2 cups shredded cheddar cheese
3 tablespoons butter or 3 tablespoons margarine
1 1/2 cups milk
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1 tablespoon sugar or 1 tablespoon stevia
1/2 teaspoon cayenne pepper
1/2 tablespoon cumin
1 teaspoon salt
1/2 tablespoon cornstarch

Steps:

  • Dice and brown chicken breast in butter until cooked. Cook rice. Add sauce, black beans and tomato paste to pan of cooked chicken. Simmer until slightly thickened. Stir in grated cheese. Ladle chicken and sauce over rice and top with additional shredded cheese and sour cream as desired. (You may alternatively stir rice into sauce and combine right away.).
  • Rice: combine 2 cups white rice and 3 cups water, bring to a light boil. Cover and reduce heat to medium - low. Simmer covered 20 minutes or until all water is absorbed. Fluff with fork.

3 cups leftover cooked dark turkey meat, shredded
1/2 cup onion, finely diced (to taste)
4 -5 garlic cloves, fresh minced (to taste)
3 cups enchilada sauce, divided (recipezaar Texas Red Enchilada Sauce)
1 tablespoon chili powder
2 teaspoons ground cumin
2 -3 jalapeno peppers, chopped fine (optional)
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced (optional)
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1 (8 ounce) package cream cheese (any type will work)
8 -10 small flour tortillas, warmed (smaller size 6-8-inch)
1 (14 1/2 ounce) can diced tomatoes, undrained and diced
1 cup cheddar cheese, shredded (more if desired)
1 tablespoon olive oil

Steps:

  • Preheat oven to 350.
  • Heat a skillet to medium, add some oil and saute the onions for a few minutes then add the peppers and garlic and saute until the onion become translucent.
  • Add Tomatoes, seasonings, Stir to combine.
  • Add Turkey and 1 cup of enchilada sauce - stir - simmer until some of the liquid has evaporated (not too juicy any more).
  • Add cream cheese and stir until well incorporated. Simmer for a few minutes longer.
  • In a 9X13" pan add 1 cup of enchilada sauce and coat bottom of pan.
  • Add about 1/4-1/3 cup of meat mixture to each tortillia - roll tortilla and place seem side down in a baking dish (just roll, don't fold ends).
  • Pour remaining Enchilada sauce over the top of the tortillas.
  • Sprinkle cheese over the top.
  • Bake i for about 20-30 minutes until cheese is melted and side are bubbling slightly.
  • Variations - Add a can of black beans (rinsed and drained) to the meat mixture after incorporating the cream cheese.
  • Toppings (suggestions) - Salsa, lettuce, Chopped Olives, Chopped Onion, Chopped tomatoes, chopped jalapeno's.

I found this recipe in an old Betty Crocker grocery store recipe book (my friend gave me a huge pile of them, so I have made quite a few). This is a very different and much lower fat version than the ones that use cream of chicken soup. My whole family enjoyed these, even the 5 year old!

1 cup mild green chili salsa (salsa verde)
1/4 cup fresh cilantro stem
1 tablespoon lime juice
2 cloves garlic
2 cups chopped cooked chicken or 2 cups cooked turkey
3/4 cup shredded mozzarella cheese
6 flour tortillas (6-8 inches in diameter)
1 medium lime, cut into wedges (optional)

Steps:

  • Heat oven to 350.
  • Spray rectangular 11x7 baking dish with cooking spray.
  • Place green sauce, cilantro, parsley, lime juice and garlic in blender or food processor.
  • Cover and blend on high speed about 30 seconds or until smooth.
  • Reserve half of mixture.
  • Mix remaining sauce mixture, chicken (or turkey) and 1/4 cup of the cheese.
  • Spoon about 1/4 cup chicken (or turkey) mixture onto each tortilla.
  • Roll tortilla around filling, place seam side down in baking dish.
  • Pour reserved sauce mixture over enchiladas.
  • Sprinkle with remaining 1/2 cup cheese.
  • Bake uncovered 20-25 minutes or until hot.
  • Serve with lime wedges.

I have made these with both cooked turkey or chicken, please use only Campbell's Cream of Chicken Soup for this any other brand of soup will not produce the best flavor! This recipe can easily be doubled but you will need to bake it in two 13 x 9-inch baking dishes --- if you prefer lots of sauce, then use 3 cans soup with 1-1/2 cups sour cream and increase the cheddar cheese slightly.

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch casserole dish.
  • In a bowl mix together the undiluted chicken soup, with sour cream, 1-1/2 cups cheddar cheese, seasoned salt and black pepper.
  • In a saucepan heat butter over medium heat, add in the onion, garlic, red or green bell pepper and chili powder; saute for about 3 minutes.
  • Add in the chopped chicken, green chilies (with their juice) mushrooms pieces and about 1/2 cup of the soup/sour cream mixture; mix to combine; bring to a boil and simmer for about 5 minutes, then season with more salt and pepper to taste.
  • Spread about half of the soup/chicken mixture onto the bottom of the casserole dish.
  • Heat the tortilla shells for about 30 seconds in the microwave to soften.
  • Spread about 1/4 to 1/3 cup of the chicken mixture along one side of each tortilla, then roll up each tortilla (there is no need to enclose the sides of the rolled tortillas).
  • Place seam-side down in the baking dish.
  • Spread remaining soup mixture over the enchiladas, use a spoon to spread the mixture out evenly.
  • Sprinkle 1-2 cups or cheddar cheese over the soup mixture.
  • Covered with foil and bake for about 25 minutes.
  • Remove the foil then bake uncovered for another 10-12 minutes.
  • Delicious!

8-10 6" corn or flour tortillas
4-6 clove minced garlic
3/4 c chopped onion (white or sweet)
2 c fresh chopped cilantro (1 cup for sauce, the other for garnish) can be omitted entirely or substitute fresh parsley if you do not like cilantro
3 Tbsp butter or margarine
3/4 tsp black pepper (more or less to taste)
3-4 Tbsp flour
16 oz sour cream (12oz for sauce)
2 c chicken broth
4 c shredded monterey jack cheese
1-2 4oz can(s) diced jalapenos &/or green chilies
3-4 c coarsely chopped chicken or turkey (great for holiday leftovers)
3-4 stalk(s) sliced green onion (optional for garnish)
slice black olives (optional for garnish)
diced tomato (optional for garnish)

Steps:

  • 1. Wrap tortillas in foil & warm 10-15 min in 350° oven.
  • 2. In a sauce pan, sauté onion & garlic in butter over medium heat until tender & fragrant. Mix in black pepper & 1 cup of the cilantro (or parsley, if using) towards end of sautéing.
  • 3. Add 12oz of the sour cream, flour, chilies & chicken broth. Stir to combine thoroughly until thickened & bubbly. Remove from heat & stir in half (2 cups) of the cheese.
  • 4. In a separate bowl, add chicken or turkey & mix 1 cup (or more to ensure poultry is coated) of the sauce. Place approximately 1/4 cup of filling mixture atop each tortilla; roll up & arrange (seam side down) in a lightly buttered baking dish. Top rolled tortillas with remaining sauce.
  • 5. Bake, covered for 35 minutes in a 350° oven. Remove cover, top with remaining cheese & bake uncovered for an additional 5 minutes or until cheese is completely melted.
  • 6. Garnish with optional ingredients & top with remaining sour cream. This goes very well with salsa verde, chunky salsa or red hot sauce.
