BAKED PORK CHOPS AND RICE
Growing up, this was a staple in my home. This is a great recipe because the pork and rice cook in the same dish. The rice is flavorful and the pork chops come out nice and tender.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Melt butter in a large skillet over medium heat; cook and stir onion until golden brown, 15 to 20 minutes. Transfer onion to a plate.
- Sprinkle seasoned salt over all sides of each pork chop. Place pork chops in the same large skillet and cook until browned, 1 to 2 minutes per side.
- Mix beef consomme and water together in a 9x13-inch baking dish. Pour rice into the broth mixture; add caramelized onion. Gently arrange pork chops over rice in a single layer. Cover baking dish with aluminum foil.
- Bake in the preheated oven until pork is cooked through, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

SIMPLY OVEN BAKED PORK CHOPS AND RICE
This is DH's recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.

Steps:
- Stir together soup, water, rice and 1/4 teaspoons pepper in a 3 quart casserole.
- Add onions.
- Salt and pepper chops and place on top of rice.
- Cover and bake at 350* for 1 1/4 hours or until meat is done and liquid is absorbed.
- Remove from oven and let rest 5 minutes.

CHICKEN OR PORK CHOPS IN RICE

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Sprinkle dry soup mix over bottom of a 13x9 inch baking dish. Pour rice over soup mix.
- 3. Mix 1 can of water to 1 can of soup and pour over rice.
- 4. Season chicken or pork and place on top of rice.
- 5. Mix 1 can of water to 1 can of soup and pour over chicken or pork.
- 6. Cover with aluminum foil and bake for 1 to 1-1/2 hours or until rice is tender.
CHICKEN ATOP RICE
This recipe comes from Pillsbury Kitchens' Family Cookbook. Chicken is baked on top of a rice mixture. There are variations to this recipe using stuffing instead of rice, and pork chops instead of chicken.

- Heat oven to 375 degrees. In 13x9 inch pan, combine first 7 incredients, mix well. Arrange chicken on the rice mixture, skin side up, drizzle with butter. Sprinkle with 1/2 teaspoon salt, paprika and poultry seasoning. Bake uncovered at 375 degrees for 1 hour or until chicken is tender.
- Tips: For chicken atop dressing, substitute 8-oz pkg. herb-seasoned stuffing mix for rice. Omit first 1/2 teaspoon salt. Bake covered with foil at 375 for 1 hour; remove foil and bake 30 minutes longer. This makes a moist dressing. If you prefer a drier dressing, decrease water to 1 1/2 cups.
- Wild rice can be substituted for half of rice.
- For pork chops atop rice, in large skillet, brown 6 pork chops. Arrange pork chops on rice mixture, omit butter.
