CHICKEN TAGINE WITH OLIVES AND PRESERVED LEMONS
This rich and fragrant chicken stew is laden with complex flavors and spices reminiscent of the sort you might encounter in a mountainside cafe in Morocco. Save yourself the cost of a plane ticket, however, and make this at home. First, rub the chicken with a redolent combination of garlic, saffron, ground ginger, paprika, cumin, turmeric and black pepper, then pop it into the refrigerator for 3 to 4 hours to marinate. Once that's done, brown the chicken parts, and remove from the pan, making room for a pile of sliced onions that you'll sauté until golden brown. Nestle a cinnamon stick into the tangle of onions, pile the chicken parts on top and scatter with slices of preserved lemons and olives, a combination of green and kalamata. Add a bit of chicken stock and lemon juice, then cook over low heat until the chicken is cooked through, and your house smells amazing.

- Mix garlic, saffron, ginger, paprika, cumin and turmeric together. If not using kosher chicken, add 1/2 teaspoon salt. Add pepper to taste. Rub chicken with mixture, cover, refrigerate and marinate 3 to 4 hours.
- Heat oil in heavy skillet. Add chicken, and brown on all sides. Remove to platter. Add onions to skillet, and cook over medium-low heat about 15 minutes, until lightly browned. Transfer to tagine, if you are using one, or leave in skillet. Add cinnamon stick.
- Put chicken on onions. Scatter with olives. Quarter the lemons, remove pulp and cut skin in strips. Scatter over chicken. Mix stock and lemon juice. Pour over chicken.
- Cover tagine or skillet. Place over low heat, and cook about 30 minutes, until chicken is done. Scatter parsley on top, and serve.

- Heat 1 tbsp oil in a wide, shallow casserole dish or ovenproof pan. Season the chicken and cook, skin-side down, for 8-10 mins, until crispy. Flip over and cook for another 5 mins. Transfer to a plate. Heat oven to 170C/150C fan/gas 3.
- Add the rest of the oil and the onion to the pan. Stir for a few mins, then add the garlic and Moroccan spice mix. Stir, scraping any bits of onions and chicken from the bottom, until the spices smell fragrant. Add the preserved lemon, tomatoes, stock cube, honey, vinegar and 750ml water. Bring to the boil, then place the chicken on top. Cover with a lid or foil and transfer to the oven for 1 hr.
- Uncover, place the olives and lemon slices on top and drizzle the lemons with a little oil. Return to the oven for 20 mins, or until the sauce has reduced a little (you can do this on the hob if you're short on time). Check the seasoning, adding a squeeze of lemon, more honey or salt if you think it needs it. Scatter over the pomegranate seeds, feta and mint, and serve with couscous.

- In a skillet over medium heat, toast the cinnamon, peppercorns, cumin, paprika, red pepper flakes, and cloves, stirring or swirling in the pan, until they start to smoke. Remove from the heat immediately and grind to a fine powder in a spice grinder.
- In a bowl large enough to accommodate the chicken, add the oil, spice mix, ginger, cilantro, bay leaves and saffron. Mix to a paste. Add chicken, rubbing the marinade over all the pieces. Cover and refrigerate for 2 hours or overnight.
- Season chicken with salt and pepper. Remove from the bowl with marinade but do not discard any leftover marinade.
- In a tagine or large Dutch oven, over medium-high heat, add 2 tablespoons olive oil. Put in chicken pieces and lightly brown on both sides, about 5 minutes. Add onions and cook until just starting to brown about 3 minutes.
- Rinse preserved lemon well. Scoop out the flesh of the preserved lemon and discard; rinse the remaining peel well, cut into strips and add to the pan.
- Add reserved marinade, olives, and chicken stock. Now cover tightly and cook over medium-low heat for 25 to 35 minutes, or until chicken is cooked through (timing will depend on the size of your thighs).
- Remove bay leaf and discard.
- Taste juices and adjust seasoning.
- Place chicken on a warm platter. Spoon juices with the preserved lemon, olives, and onions over chicken and serve accompanied by Couscous with Apricots.
- Put the couscous in a medium bowl.
- Place apricots and scallions into a saucepan and cover with chicken stock, orange juice, and olive oil.
- Bring to a boil and pour over the couscous and stir to combine.
- Cover and let sit for 5 minutes.
- Uncover, fluff with a fork, and season with salt and pepper.
- Garnish with chopped cilantro.
CHICKEN, OLIVE AND LEMON TANGINE
This is another find from the Weekly Times, a paper I love, and also another wonderful recipe from Jeremy Vincent. I am noting some of Jeremy's suggestions and Tips as written-- If you haven't got a tagine, a saucepan or lidded casserole will suffice. The recipe method below utilises a saucepan or casserole for the cooking. If you are using a tagine, prepare the chicken to the browned stage in the saucepan, remove it from the saucepan and cook the onion and spice as below. Instead of returning the ingredients back to the saucepan with the stock, arrange (optional) sliced potato on the base of your tagine, then the chicken around the centre on top of the potato slices. Pour the onion and spiced stock over the chicken, scatter with the olives and dot with the butter and pieces of lemon before topping with the tagine lid and baking. Save the coriander and parsley for scattering on top when the dish is cooked. TIPS WITH A TAGINE The tagine doubles as both a cooking vessel and serving dish which holds the food warm. Since you won't be stirring during the cooking, take care how you arrange or layer ingredients for a beautiful table presentation. Oil is essential to tagine cooking; don't be overly cautious in using it or you'll end up with watery sauce or possibly scorched ingredients. In most recipes for 4 to 6 people, you'll need between a 1/4 to a 1/3 cup of oil (sometimes part butter), which will mix with cooking liquids to make ample sauce for scooping up with bread. Choose olive oil for the best flavour. Try not to interrupt the cooking by frequently lifting the lid to check on the food; that's best left for adding ingredients or to check on the level of liquids toward the end of cooking.

- Heat the oven to 180°C Heat the oil in a large lidded casserole or saucepan oven over medium-high heat. Season the chicken with salt and pepper; add to the saucepan and cook, turning, until browned, 12 to 15 minutes.
- Transfer the chicken to a plate. Add the onions to the saucepan; cook until golden, 10 to 12 minutes. Add the spices; cook for 2 minutes. Return the chicken to the saucepan with the stock and bring the liquid to a boil. Transfer the saucepan or casserole to the oven, and bake the chicken, covered, until tender, 35 to 40 minutes. Stir in the olives, butter, parsley, coriander and lemons into the saucepan, and cook for 6 minutes. Serve with rice or flatbread.

- Step 1Place all the marinade ingredients into the bowl of a food processor and process until finely chopped. Remove the skin from the chicken thighs.
- Place the thighs into a non-reactive dish, or plastic zip-top bag. Pour the marinade over and rub it well into the chicken. Cover, or seal, and refrigerate for 1 - 2 hours. Do not go longer than 2 hours or the marinade will start to make the chicken pieces soft.
- Step 2After you chicken has marinaded, remove the thighs from the marinade, reserving the marinade; scrape any pieces of the marinade from the chicken pieces and season them with salt and freshly ground pepper.
- Step 3Heat your cooking vessel, be it tagine (only if it's rated for stove-top use), heavy casserole pot or Dutch oven over medium-high heat; add the ghee or oil and butter; when hot, add the chicken pieces and brown for about 5 minutes. Pour over the marinade and add water as needed to have the liquid about half-way up the sides of the meat. Add half of the thyme. Bring to a simmer, reduce heat, cover with a lid and simmer for about 45 minutes, turning the chicken occasionally.

- 1. Put the chicken on a chopping board and remove the wing tips. Remove the legs and separate the thighs and drumsticks. Remove the backbone to leave the breast and wings on the double ribcage. Cut down the centre to separate the two breasts and cut each half into three pieces.
- 2. Combine chicken pieces, onion, carrot, sweet potato, almonds, chermoula and a little sea salt in a bowl. Marinate for about 1 hour.
