BAKED CHICKEN NUGGETS

- Preheat oven to 400 degrees F (200 degrees C).
- Cut chicken breasts into 1 1/2-inch sized pieces. In a medium bowl, mix together the bread crumbs, cheese, salt, thyme and basil. Mix well. Put melted butter in a bowl or dish for dipping.
- Dip chicken pieces into the melted butter first, then coat with the breadcrumb mixture. Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.

- Heat 1 inch oil to 350 degrees F (175 degrees C) in a large skillet or saucepan.
- Stir together the flour, garlic salt, and pepper in a bowl. Dip the chicken pieces individually into the beaten eggs before pressing into the flour mixture to coat; shake off the excess flour. Place the coated chicken pieces onto a plate until all the chicken has been coated.
- Cook the chicken in batches in the hot oil until golden brown and no longer pink in the center.

- In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs.
- Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs.
- Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup.

Steps:
- Mix chicken, cream cheese, chives, milk, and salt in a medium bowl (mixing with hands works best) to make filling, and store in a 1 qt freezer bag.
- Put crouton crumbs in another 1 qt bag, attach it to bag of chicken filling, and freeze.
- Refrigerate crescent rolls.
- To prepare for serving, thaw chicken mixture.
- Preheat oven to 350°F.
- Unroll crescent rolls.
- Each tube will contain 4 rectangles of dough with a diagonal perforation.
- Press dough along each perforation so the rectangle halves will not separate.
- Place about 1/4 cup of the chicken mixture into the center of each rectangle.
- Fold dough over the filling, and pinch the edges to seal tightly.
- Dip each packet in melted margarine, and coat with crouton crumbs.
- Place packets on a baking sheet.
- Bake for 20 minutes or until golden brown.
- Packets are good either hot or cold.
CHICKEN NUGGETS - OAMC
This is the way I make my chicken nuggets. My kids love these and I try to keep some on hand in the freezer for quick snacks and meals. The technique came from the 30 day gourmet cookbook. This is an estimate on the crumbs. I normally do a whole bunch of chicken at once and just kind of eyeball the amounts.

- Preheat oven to 375 degrees.
- spray a baking sheet with cooking spray and set aside.
- Cut chicken into slices and then into "nugget" sized pieces.
- In a medium bowl, mix together the ranch dressing and the milk.
- put chicken pieces into bowl with milk mixture.
- Crush the ritz crackers into fine crumbs. I use my food processor.
- Place cracker crumbs and paprika in a large zipper type baggie. Seal and shake to mix together.
- Place a few of the chicken pieces into the bag of coating mix. Seal bag and shake to coat.
- Place nuggets on prepared baking sheet.
- Repeat until all chicken has been coated.
- Bake for 15-20 minutes or until chicken is done.
- Remove from oven and cool. I like to flash freeze before placing in a freezer bag and freezing.
- To serve:.
- Place frozen nuggets on a baking sheet and bake at 400 degrees for 5-10 minutes or until heated through. You can heat in the microwave, but they don't turn out as crispy.
- Note: Flash freezing just means to place the items on a baking sheet, not touching, and put in the freezer until firm. This keeps them from sticking together in one big clump.

- Pulse 2 1/2 cups corn flakes in a food processor until fine crumbs form (or take a rolling pin to them in a large zip-loc bag). In a shallow bowl, stir together 3/4 cup crumbs and 1/4 cup finely grated parmesan.

- Mix the chicken: Line a baking sheet with parchment paper. Mix the ground chicken in a bowl with the garlic powder, onion powder, 1/2 tsp of the salt, and pepper.
- Dredge and form nuggets: Add the beaten eggs to a shallow bowl. Whisk the flour, cornstarch, and remaining 1/2 tsp of salt in a separate shallow bowl. Scoop about 1 to 2 tbsp of the chicken mixture and form it into a ball. Roll it through the flour mixture, then through the beaten egg, and again through the flour. I used a small ice cream scoop to get even sized nuggets. Flatten the ball and form it into your desired nugget shape. Place the nugget on your prepared baking sheet and repeat with the remaining chicken mixture.
- Fry: Heat the oil in a heavy bottomed pot over medium heat to 375F. Fry the nuggets, in batches, for 4-5 minutes or until cooked through and golden brown. I did about 5 or 6 nuggets at once. Use a slotted spoon to scoop the nuggets out and place them on a rack to cool down, or a paper towel lined plate.
