12 rhodes southern-style biscuits or 12 buttermilk biscuits, thawed but still cold
1 1/2 tablespoons vegetable oil
1 large onion, minced
3 carrots, peeled and sliced
2 stalks celery, sliced
4 tablespoons butter
1/2 cup flour
1 1/2 cups milk
2 cups chicken broth
2 teaspoons poultry seasoning
3 -4 cups rotisserie-cooked chicken, shredded
3 tablespoons minced fresh parsley
salt & pepper

Steps:

  • Heat the oil in a 3 quart sauce pan.
  • Add onion, carrots and celery and saute until tender.
  • Set vegetables aside with chicken.
  • In the same sauce pan, melt butter then stir in flour and simmer for 1 minute while stirring.
  • Combine milk, chicken broth, and poultry seasoning and slowly add to flour mixture while stirring.
  • Simmer for a few minutes until thicker. Salt and pepper to taste.
  • Take the pan off the burner and add vegetables and chicken, coating everything well.
  • Stir in the parsley.
  • Pour the filling into a sprayed 9x13-inch baking pan.
  • Bake at 400°F 18 minutes.
  • Remove from oven and put the 12 thawed biscuits, spaced evenly, on top of the bubbling mixture.
  • Bake for another 10-15 minutes or until biscuits are golden brown.

¼ cup butter
2 cloves garlic, minced
½ cup chopped onion
½ cup chopped celery
½ cup chopped baby carrots
½ cup all-purpose flour
2 teaspoons white sugar
1 teaspoon salt
1 teaspoon dried basil
½ teaspoon ground black pepper
4 cups chicken broth
1 (10 ounce) can peas, drained
4 cups diced, cooked chicken meat
2 cups buttermilk baking mix
2 teaspoons dried basil
⅔ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a skillet, melt the butter over medium-high heat. Cook and stir the garlic, onion, celery, and carrots in butter until tender. Mix in the flour, sugar, salt, 1 teaspoon dried basil, and pepper. Stir in broth, and bring to a boil. Stirring constantly, boil 1 minute, reduce heat, and stir in peas. Simmer 5 minutes, then mix in chicken. Transfer mixture to the prepared baking dish.
  • In a medium bowl, combine the baking mix and 2 teaspoons dried basil. Stir in milk to form a dough. Divide the dough into 6 to 8 balls. On floured wax paper, use the palm of your hand to flatten each ball of dough into a circular shape; place on top of chicken mixture.
  • Bake in the preheated oven for 30 minutes. Cover with foil, and bake for 10 more minutes. To serve, spoon chicken mixture over biscuits.

¼ teaspoon dried thyme leaves, crushed
¼ teaspoon ground black pepper
4 cups cooked cut-up vegetables*

Steps:

6 tablespoons butter
1 onion, chopped
½ cup flour
3 cups chicken broth
1 teaspoon salt
1 teaspoon pepper
1 cup heavy cream
2 ½ cups frozen mixed vegetable
1 rotisserie chicken, shredded
2 tubes biscuit dough, 8 biscuits each

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large pot over medium-high heat, melt the butter.
  • Add the onion, stir until softened. About 1 minute.
  • Whisk in the flour, stirring constantly to prevent the flour from browning. About 1 minute.
  • Whisk in the chicken broth, salt, and pepper. Continue to whisk until no lumps remain.
  • Whisk in the heavy cream. Bring to a light simmer until the sauce has thickened slightly. Test for additional salt/pepper.
  • Add the mixed vegetables and shredded chicken, stir until fully incorporated.
  • Transfer to a 9x13-inch (23x33 cm) baking dish.
  • Evenly top with 12 pieces of biscuit dough (you will have extra biscuits, which can be baked off separately).
  • Bake in a preheated oven for 20 minutes, until the biscuits are golden and the gravy mixture is bubbling.
  • Cool slightly before serving.

1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup milk
1 garlic clove, pressed
1 1/2 cups cooked chicken
1 cup frozen mixed vegetables
1/2 cup onion, chopped
1/2 cup celery, chopped
2 (7 1/2 ounce) packages buttermilk biscuits
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350.
  • Combine soup, milk and garlic in bowl with whisk. Add chicken and vegetables. Chop onion and celery and add to soup mixture.
  • Separate each package of biscuits into 10 pieces. Cut each biscuit into quarters and add to soup mixture. Stir gently.
  • Pour into deep dish baker (9x9 pan would work here!). Sprinkle with cheese.
  • Bake 25-30 minutes or until lightly browned and biscuits are cooked through. Let stand 5 minutes before serving.

7 cups all-purpose flour, plus more for dusting
2 cups pastry flour
3 tablespoons baking powder
1 teaspoon salt
1 teaspoon baking soda
1 pound butter, cut into 1/2-inch cubes, cold
3 3/4 cups buttermilk
1 egg
1 tablespoon heavy cream
1 cup buttermilk
1 tablespoon hot sauce
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
4 chicken cutlets, pounded 1/2-inch thick
2 cups vegetable oil
2 cups plain breadcrumbs or panko
1/2 cup (1 stick) butter, soft
1/2 cup honey
Hot sauce, such as Frank's RedHot, for serving

Steps:

  • For the biscuits: Preheat oven to 400 degrees F.
  • Mix flours, baking powder, salt and baking soda in a bowl. Add cubed butter and toss. Pulse mixture in food processor until butter is pea-sized. Put this in a large bowl and add buttermilk. Mix with hands until dough comes together but still has shaggy bits, then dump onto a floured table.
  • Work with the heel of your hand pushing the dough into the table away from you and roll it back onto itself. Continue heeling and rolling until dough is smooth, but do not overmix. (Pieces of butter should still be visible.)
  • Use a rolling pin to roll the dough until it's about 1 1/2 inches thick.
  • Flour a round biscuit cutter and cut the biscuits. Flip the biscuits and place on a sheet pan.
  • Beat together the egg and heavy cream in a small bowl. Brush biscuits with egg wash.
  • Bake 22 minutes.
  • For the fried chicken cutlets: Combine buttermilk, hot sauce, salt, cayenne and black pepper in a resealable plastic bag; add chicken. Seal bag, turn to coat, and chill 1 to 3 hours.
  • Pour oil into a large skillet to a depth of 1/2-inch and heat over medium-high heat until oil bubbles immediately when a sprinkle of breadcrumbs is added. (Oil should be at 325 degrees F.)
  • Meanwhile, place breadcrumbs in a shallow bowl. Remove chicken from marinade. Dredge chicken in breadcrumbs, shaking off excess. Working in 2 batches and maintaining oil temperature, fry chicken until golden brown, crisp, and cooked through, about 3 minutes per side. Transfer chicken to a paper towel-lined baking sheet to drain.
  • For the honey butter and sandwich assembly: Whisk together the butter and honey in a bowl.
  • Split a biscuit and slather both halves with honey butter. Place a fried cutlet on bottom half and pour a generous amount of hot sauce over. Top with other biscuit half. Repeat with the remaining chicken cutlets. Save remaining biscuits for another use.

  • 1. Bake biscuits as package says.Meanwhile in a saucepan combine 4 cups broth,chicken and vegetables.Bring to a boil and reduce heat;cover and simmer for 10 minutes.

1 pound bone-in chicken breast halves
1 medium onion, chopped
1 celery rib, cut into 1/2-inch pieces
1 teaspoon salt
1 bay leaf
CREAM SAUCE:
3 tablespoons plus 1-1/2 teaspoons butter, melted
3 tablespoons plus 1-1/2 teaspoons all-purpose flour
Salt and pepper to taste
Dash ground mace
1/3 cup 2% milk
1/8 teaspoon Worcestershire sauce
BISCUITS:
2/3 cup plus 1 tablespoon all-purpose flour
1-1/4 teaspoons baking powder
1/8 teaspoon salt
2 tablespoons shortening
1/3 cup 2% milk

Steps:

  • In a large saucepan, combine the broth, chicken, onion, celery, salt and bay leaf. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until a thermometer reads 170°. , Remove chicken from broth; cool. When cool enough to handle, remove skin and meat from bones. Discard skin and bones. Cut up meat. Strain broth. Reserve vegetables and 1 cup broth; discard bay leaf. (Discard or save remaining broth for another use.) Arrange chicken and vegetables in a greased 3-cup dish., For sauce, melt butter in a saucepan. Stir in the flour, salt, pepper and mace until smooth. Gradually add the milk, Worcestershire sauce and reserved broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over chicken., For biscuits, in a small bowl, combine the flour, baking powder and salt; cut in shortening until the mixture resembles coarse crumbs. Stir in milk just until moistened. , On a floured surface, knead 8-10 times. Pat into a 1/2-in.-thick square and cut into quarters. Arrange biscuits over sauce. , Bake, uncovered, at 450° for 17-20 minutes or until biscuits are golden brown.
