CHICKEN MUSHROOM PESTO SANDWICH WITH AVOCADO
A delicious way to use leftover chicken, with sauteed mushrooms and onion, melted cheese, and avocado. Accented with pesto spread, on a crusty roll. Vary ingredient quantities to suit what you have, and what you like. Makes a light supper or hearty lunch when accompanied with soup or salad. Recipe is for a single sandwich, but can easily be multiplied.

Steps:
- Combine mayo, mustard, and pesto. Spread lightly on each half of the sandwich roll.
- Heat oil in small skillet. Saute mushrooms and onions until tender. Remove from heat.
- Assemble sandwich: On bottom, place sliced chicken. Top with sauteed onions and mushrooms, with cheese slice on top of all. Place loaded sandwich bottom and top on baking sheet, and place in 350F oven. Heat until cheese is melted. (You could also heat on the rack of a toaster oven).
- Remove from oven. Add avocado, salt and pepper to taste. Top with other half of roll.

CHICKEN PESTO SANDWICH
There are some wonderful posted recipes for basil-pesto! or use the store-bought kind. If you feel up to it bake your own bread!! You can also use just the chicken pesto portion of the recipe and serve as a main dish over pasta.

Steps:
- Mix the pesto and mayo.
- Cut the bread in half.
- Spread the pesto mayo on the bread.
- Layer the chicken first,then the fresh lettuce, and the tomato wedges.
- Sprinkle with the grated cheese.
- Note:This sandwich is really good with the fresh veggies but if you want a little more flavor, I sometimes like to do the following.
- In a small pan heat up the olive oil over low heat, add the garlic and the tomato.
- Sprinkle with oregano, basil,parsley and salt.
- Cook the tomato for about 10 minutues.
- Add over the chicken.

- Flatten chicken to 1/4-in. thickness; sprinkle with salt and pepper. In a large skillet, cook chicken in 1 tablespoon oil for 5-10 minutes on each side or until juices run clear., Meanwhile, for pesto, combine the basil, nuts, garlic, salt and Parmesan cheese in a blender or food processor; cover and process until well blended. - Combine chicken, olive oil, garlic, red pepper flakes, salt, and black pepper in a large bowl; toss to coat.
- Heat a large pot or Dutch oven over medium-high heat. Add chicken mixture and cook, stirring frequently, until chicken begins to brown, about 5 minutes. Add yellow bell pepper, onion, zucchini, and balsamic vinegar and cook until onion begins to soften, about 5 minutes.
