SMOTHERED CHICKEN WITH SPINACH, POTATOES, AND MUSHROOMS

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Oil a baking dish.
- Combine flour, garlic powder, onion powder, paprika, poultry seasoning, salt, and black pepper in a large resealable plastic bag. Add chicken and toss to coat well. Shake off excess breading.
- Heat olive oil in a skillet over medium-high heat. Brown chicken on both sides, 5 to 10 minutes. Transfer to the prepared baking dish. Cook and stir potatoes in the same skillet until almost tender, 3 to 5 minutes. Transfer to the baking dish.
- Add butter to the same skillet over medium-high heat. Saute mushrooms for 2 minutes. Add green onions and garlic and saute until garlic is browned, about 3 minutes. Add soup, broth, and sherry. Bring to a boil and cook until sauce thickens, about 5 minutes. Add spinach and cook until wilted, 2 to 3 minutes.
- Pour sauce over chicken and potatoes in the baking dish. Top with mozzarella and Parmesan cheeses. Cover dish with aluminum foil.
- Bake in the preheated oven for 20 minutes. Remove aluminum foil and bake for 20 minutes more.

CHICKEN AND MUSHROOM POCKETS (PAULA DEEN)
This is from the May /June 2009 issue of Paula Deen's magazine under party menus "Meet the Parents Menu" as the appetizer. I made these for my family and guests and they all really enjoyed them. I didn't tell my husband and he said they seemed more upscale than most appetizers. The secret is the filling for the pockets. This is a delightful little mouthful. This is made for a party so it makes a lot of pockets. Enjoy ChefDLH!

Steps:
- In a large skillet melt butter over medium heat.
- Add mushroom, onion and garlic.
- cook for 6 to 7 minutes or until mushrooms are tender.
- Reduce heat to low and add chicken and cream cheese, stirring until cream cheese is melted and smooth.
- Remove from heat and stir in cheese and pepper.
- Let mixture cool for 20 minutes.
- Preheat oven to 375 degrees.
- Line baking sheets with parchment paper.
- On a clean flat surface unroll one can of dough. Cut the dough lengthwise into 3 equal parts making 15 squares. Spoon about 1 tablespoon filling onto center of each square. Pull up the corners of dough over filling, pressing dough together gently to seal.
- Repeat procedure with remaining dough and filling.
- Place on prepared baking sheets.
- Bake for 10 -12 minutes or until golden brown.
- Serve immediately.
- NOTE: be sure to use unperforated crescent roll dough.
- Cooking time includes cooling time for the mixture.

- Drain potatoes and spread on a kitchen town to pat dry. Heat a cast iron skillet or heavy bottom skillet over medium heat. Add 2 tablespoons of butter and olive oil to the skillet. Add potatoes to skillet and toss in butter. Cook potatoes for 10 - 15 minutes, stirring occasionally until potatoes are golden brown. Transfer potatoes to a plate and set aside.
- Pour flour into a bowl. Raise heat to medium-high heat. Season chicken with salt and pepper. Coat chicken lightly with flour, shaking off any excess. Add chicken to the skillet, cook on each side for 3 minutes or until cooked through and golden brown. Transfer to plate with potatoes.
- Add 2 tablespoons of butter to the skillet. Add mushrooms to the skillet and cook for 5 - 7 minutes. Add red wine to deglaze the pan, scraping the brown bits from the bottom of the skillet. Add heavy cream, garlic, shallots, and thyme. Bring to a simmer and let reduce by half.

- Beat chicken breast until even in thickness. In a bowl, combine seasonings for chicken. Season both sides of the chicken breasts.
- Over med/high heat, heat 2 Tbsp oil in a skillet. Sear chicken 2-3 minutes per side. Turn heat down to low and cook another 5-6 minutes, until the chicken is tender and fully cooked.
- Meanwhile, peel the potatoes slice into thin slices. Over medium/high heat, saute the potato for about 10 minutes or until potatoes are tender. Season the potatoes with salt and pepper.
- Remove the chicken from the skillet and cover to keep warm. In the same skillet, saute the mushrooms with chopped onions and minced garlic. Cook until mushrooms are golden, salt and pepper to taste.
