Baked Chicken Meatballs image

The BEST healthy baked chicken meatballs with spinach. Made in the oven, serve these easy chicken meatballs with pasta, zoodles, or sandwich rolls.

1 large egg
1 pound ground chicken ((I like 93% lean))
1/2 cup whole wheat panko breadcrumbs
1/3 cup Parmesan cheese (finely grated )
2 tablespoons extra-virgin olive oil (divided)
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
2 tablespoons tomato paste (divided)
3 tablespoons flat-leaf parsley (finely chopped )
2 1/2 cups fresh spinach (lightly packed )
Tomato sauce
Cooked whole wheat pasta, zucchini, or other vegetable noodles
Buns (for sandwiches)
Toothpicks (to serve as an appetizer)

Steps:

  • Place a rack in the upper third of the oven and preheat to 400 degrees F. Lightly coat a 9x13-inch baking dish or rimmed baking sheet with nonstick cooking spray.
  • Beat the egg in the bottom of a large bowl. Add the chicken, breadcrumbs, Parmesan, 1 tablespoon olive oil, oregano, garlic powder, onion powder, salt, red pepper flakes, fresh parsley, and 1 tablespoon tomato paste. Finely chop the spinach so that it is in small bits, then add it to the bowl.
  • With a fork or your hands, mix until well combined, being careful not to compact the meat.
  • Shape the mixture into 12 meatballs and arrange them in the prepared baking dish, 1-inch apart, so they do not touch.
  • Whisk together the remaining 1 tablespoon of olive oil and 1 tablespoon of tomato paste in a small bowl. It won't be perfectly smooth but will bake up just fine. Brush over the top of the meatballs.
  • Bake the meatballs in the upper third of the oven for 18 to 22 minutes until cooked through. Serve hot with pasta, zucchini noodles, inside a hoagie bun, or any way you choose!

¼ large onion
2 jalapeno peppers, seeded
1 (1 inch) piece fresh ginger, peeled
2 garlic cloves, peeled
1 pound ground chicken
⅓ (10 ounce) package frozen spinach, thawed, not drained
½ cup grated Asiago cheese
¼ cup crumbled feta cheese
½ teaspoon salt
½ teaspoon dried basil
¼ teaspoon ground turmeric

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease 2 baking sheets with cooking spray.
  • Combine onion, jalapeno peppers, ginger, and garlic in a food processor; pulse until coarsely chopped.
  • Place onion mixture, chicken, spinach, Asiago cheese, feta cheese, salt, basil, and turmeric in a large bowl. Mix together gently. Form mixture into balls. Arrange balls about 1/2 inch apart on the baking sheets.
  • Bake in the preheated oven until no longer pink in the center, about 15 minutes.

I was just looking for something different and this is what I came up with. The higher cooking temp helps to keep the chicken moist. You can keep these on warm in a crock pot for a party by adding enough chicken broth to cover the bottom of the crock.

Number Of Ingredients 11

1 head garlic, roasted
1 cup fresh spinach, chopped fine
1/4 cup asiago cheese, grated
1/2 cup mozzarella cheese, shredded
1 tablespoon lemon juice
1/4 cup olive oil
1 egg
1 teaspoon salt
1 teaspoon pepper
1 lb ground chicken
1 cup seasoned bread crumbs

Steps:

  • Roast garlic by slicing off the top of the head and coating with 1T olive oil.
  • Wrap in foil, place on cookie sheet and bake 40 minuted until soft.
  • Let cool and then squeeze the garlic out of each clove an into a large mixing bowl.
  • In the same bowl, add chopped spinach, cheeses, lemon, olive oil, egg, salt and pepper.
  • Gently mix in chicken and breadcrumbs until well combined.
  • Chill mixture for approx 30 minutes. It will make it easier to scoop.
  • Using an ice cream scoop, or similar device, scoop balls onto a foil lined baking sheet and bake at 400 for approx 20 minutes or until golden brown.

This recipe calls for a mix of ground pork and groound beef, but you can use all beef if you want. This can also be made into burgers or moatloaf. This is best if you mix it the night before cooking. Prep time does not include time to raost garlic.

1 1/2 lbs lean ground beef
4 slightly beaten eggs
1 cup chopped fresh parsley
2 heads roasted garlic, mashed
1 1/2 cups grated pecorino romano cheese
1 cup Italian seasoned breadcrumbs
2 teaspoons black pepper
2 teaspoons cayenne pepper
1 teaspoon kosher salt

Steps:

  • In a large bowl combine ground veal, ground pork, and ground beef. Add eggs, parsley, garlic, cheese, bread crumbs, black pepper cayenne pepper, and salt; mix well.
  • Shape into meatballs (golf ball size).
  • Place meatballs on a baking sheet and bake in a 350 degree oven about 35 minutes until done, turning once.

1 egg
1/2 cup panko breadcrumbs
1/2 cup grated Parmesan
2 tablespoons olive oil (optional - makes meatballs more moist and yummy)
1/2 teaspoon each garlic powder and onion powder
1/2 teaspoon salt
black pepper to taste
additional seasonings optional (I added a pinch of this Go-To seasoning from What's Gaby Cooking)
8 ounces spaghetti, linguine, or cappellini (regular or whole wheat)
1 stick (1/2 cup) Land O Lakes® Butter
3 cloves garlic, minced
1 teaspoon lemon zest
3-4 ounces fresh spinach, chopped
about a cup of fresh parsley, chopped
1/2 cup grated Parmesan
1/4 cup water or white wine (more or less as needed)
a squeeze of lemon juice, salt, and pepper to finish

Steps:

  • Preheat the oven to 400 degrees. Mix all the meatball ingredients until well combined. Roll into 30 small balls. Place on a baking sheet lined with foil and sprayed with oil to prevent sticking. Bake for 25-30 minutes.
