¾ cup creamy peanut butter
¾ cup coconut milk
4 spring onions, roughly chopped
3 cloves garlic, peeled
10 g ginger, peeled
2 fresh Serrano chilies, roughly chopped
1 teaspoon curry powder
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon salt
2 tablespoons soy sauce
1 lime, juiced
8 boneless, skinless chicken thighs, diced
⅓ cup peanuts, chopped
½ cup coconut milk
Bamboo or wooden skewer

Steps:

  • In a food processor, blend the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth paste; this should make about 2 cups. Reserve half of the marinade and pour the other half over the chicken thighs. Mix and chill for 2 hours or overnight.
  • Preheat the oven to 425˚F (220˚C). Line a baking tray with parchment paper.
  • Skewer the marinated chicken onto bamboo skewers, then arrange the skewers so their ends rest on the edges of the baking tray, allowing the chicken to be suspended. Bake the chicken skewers for 15-20 minutes, until slightly dark brown on the edges and cooked through.
  • With no oil in the pan, toast the chopped peanuts on low to medium heat, stirring constantly until the peanuts turn golden brown, 2-3 minutes. Add in the reserved marinade and the coconut milk. Stir and cook until thick and very aromatic, 5-10 minutes.
  • Serve the chicken skewers with the sauce on the side.

Steps:

  • In a saucepan, combine the first five ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until onion is tender and sauce is slightly thickened. Remove from the heat; set aside. , In a large bowl, combine the egg, bread crumbs, parsley, Italian seasoning, salt and pepper. Add beef and mix well. Divide into 12 portions. These Chicken Kabobs are made with chicken breasts, a flavorful chicken kabob marinade and vegetables. This colorful meal is easy to make on the grill or in the oven.

¼ cup olive oil
¼ cup low sodium soy sauce
3 tablespoons lemon juice
2 tablespoons brown sugar (or honey)
1 tablespoon Worcestershire sauce
2 cloves garlic (minced)
1 teaspoon Italian seasoning (or dried oregano)
¼ teaspoon black pepper
1 ¼ pounds boneless skinless chicken breasts (cut into 1-inch pieces)
2 small or 1 medium zucchini (sliced into ½-inch thick rounds)
1 red bell pepper (cut into 1-inch pieces)
1 yellow bell pepper (cut into 1-inch pieces)
1 small red or yellow onion (cut into 1-inch chunks with a few layers still together)
1 ½ tablespoons olive oil
salt and pepper (to taste)

Steps:

  • If using wooden skewers, soak them in a dish of warm water for at least 20 minutes.
  • Combine the chicken marinade ingredients in a zip-top bag or dish: olive oil, soy sauce, lemon juice, brown sugar, Worcestershire sauce, garlic, Italian seasoning and black pepper. Squish to mix in the bag or whisk if using a dish.
  • Add the chicken pieces to the marinade. Make sure that all of the chicken is coated with the marinade. Refrigerate for at least 30 minutes and up to 4 hours.
  • Place the zucchini rounds and chopped bell peppers in a baking dish or bowl. Drizzle with the 1 ½ tablespoons of olive oil and sprinkle with salt and pepper; toss gently to coat. Add the onion to the bowl last and mix in very gently so that the onion layers stay together as best as possible.
  • Put the chicken and vegetables on the skewers, dividing evenly between the 8 skewers and arranging the vegetable pieces in between the chicken pieces. Aim to put about 3 chicken pieces and 2-3 pieces of each vegetable per skewer. Discard all of the used marinade that held the chicken.
  • Grill over medium heat for 12-18 minutes, turning every few minutes to cook all sides evenly. Kabobs are done when chicken is cooked through to an internal temperature of 165° F.

Sauce:
1/4 cup low-sodium soy sauce
1/4 cup dry sake
1/4 cup sugar
2 tablespoons sherry vinegar, plus more, for seasoning
Meatballs:
1 1/2 pounds ground chicken or turkey, preferably dark meat
1 tablespoon minced shallot
1 tablespoon minced fresh ginger
1 teaspoon minced garlic (1 small clove)
1 teaspoon kosher salt
1 teaspoon toasted sesame oil
For serving:
Sesame seeds
Thinly sliced scallion greens
Steamed rice (optional)

Steps:

  • For the sauce:
  • In a small saucepan, combine the soy sauce, sake, sugar and vinegar and bring to a boil. Boil over high heat until thickened to a glaze, 2 to 3 minutes. Taste and season with a fresh splash of vinegar, if you like.
  • For the meatballs:
  • Preheat the grill for at least 10 minutes, preparing to grill over moderately high heat, and soak 8 double-pronged bamboo skewers or 16 single skewers in water.
  • In a bowl, use your hands to mix together all of the ingredients except for the sesame seeds and scallion greens.
  • Form the meat mixture into 16 meatballs. Thread the meatballs onto the skewers, leaving just a little space in between and flatten slightly.
  • Oil the grates well and grill the meatball skewers until light grill marks form, 3 to 4 minutes. Flip and grill for 2 minutes longer, until the outside of the meatballs looks cooked.
  • Brush the sauce over the meatballs, flip and brush the other side. Flip them and brush them with the sauce constantly for about 1 minute, until glazed and cooked through. If the sauce darkens too quickly, reduce the heat or move the skewers to a cooler part of the grill.
  • To serve:
  • Transfer the skewers to a platter and sprinkle with sesame seeds and sliced scallions. Serve over rice, if desired.

¼ cup rice vinegar
¼ cup sake
¼ cup sugar
bamboo skewer, 6-inch (15cm)

Steps:

  • In a medium pot, combine all ingredients for glaze and bring to a boil until the bubbles start to become sticky and glossy.
  • Combine the ground chicken, green onions, ginger, sesame oil, and ¼ cup (60 ml) of the soy glaze in a bowl until evenly mixed.
  • If the mixture does not hold its shape when rolled into a ball, add in panko breadcrumbs, mix evenly, and re-roll the meatballs to test their structural integrity.
  • Roll about 1-inch (2 ½ cm) meatballs, then skewer 3-4 meatballs on a skewer. Repeat with remaining mixture.
  • Heat oil in a pan over medium-high heat.
  • Sear 3-4 skewers at a time and flip when the undersides are golden brown.
  • Brush the glaze on the skewers evenly and cook for about 5 more minutes, flipping every minute and brushing additional glaze as necessary.
  • Cool and serve!

1 lb ground chicken breast (or thighs or a combination)
1 tsp toasted sesame oil
2 bulbs scallions (chopped)
½ tsp coarse sea salt
¼ tsp white pepper
1 tbsp coconut aminos
1 large egg yolk
0.5 oz ginger (grated and squeezed into 1 tbsp ginger juice)
0.8 oz shallot (grated)
1-2 tbsp olive oil
1 tbsp avocado oil
1/4 cup Keto teriyaki sauce (plus some extra for serving)
1 head butter lettuce

Steps:

  • Make the keto teriyaki sauce. Set it aside to cool.
  • In a large mixing bowl, add ingredients from chicken to egg yolk.
  • Grate the ginger and squeeze the juice into the bowl. You should have about 1 tbsp ginger juice. Grate the shallot and add the entire mixture into the bowl.
  • Stir the meat (I use a pair of chopsticks) in one direction until they become very sticky, about 2 minutes. If you have a stand mixer, use it to help you bind the meat together.
  • Line a large sheet pan with parchment. Use a cookie scoop to form 13 meatballs and place them on the sheet. My scoop is about 3 tbsp per scoop.
  • Grease your hands with some olive oil. This will prevent the meat from sticking to your hands. Shape the meatballs into a smooth surface.
  • Flatten the meatballs into small patties (about ½-inch thick). Pan fry them with avocado oil over medium heat about 2.5 minutes on the first side. Flip the patties and brush with teriyaki sauce. Fry the second side for about 1.5 minutes. Flip the patties again, brush with more sauce, and fry 1.5 minutes more.
  • Use a narrow flat skewer with a handle at one end and a perforated grill tray or grill grid on top of your grill surface to support the skewers or they will fall apart.
  • Flatten the meatballs into small patties (about ½-inch thick) and thread them onto the skewers. Brush the grill tray with avocado oil. Cradle the entire skewer in your hand to keep the meat on the stick and place it on the grill grid.
  • Grill the first side about 3-4 minutes, rotate to grill the second side about 2-3 minutes, and rotate again to grill for 15-30 seconds longer. Brush with the teriyaki sauce as you rotate the skewers.
  • Brush with a thin layer of teriyaki sauce and serve over butter lettuce. Enjoy it while it's sizzling hot!

For the Meatballs:
1 pound ground meat of your choice (pork, chicken, pork, beef, veal or any combination of them)
1 large egg
1/3 cup panko breadcrumbs ((gluten free: Use GF breadcrumbs))
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 teaspoons dried parsley
For the Kabobs:
1 fresh ripe pineapple (, cut into 1-inch chunks)
1 large green bell pepper (, cut into 1-inch chunks)
1 large red bell pepper (, cut into 1-inch chunks)
1 large yellow onions (, cut into 1-inch chunks)
For the Sweet & Sour Sauce:
2/3 cup low sugar apricot, peach, or orange jam/marmalade
3 tablespoons ketchup
2 tablespoons soy sauce
2 tablespoons apple cider vinegar
1/4 teaspoon garlic powder
1 tablespoon cornstarch dissolved in 2 tablespoons water

Steps:

  • To make the sweet & sour sauce: Combine all sauce ingredients, except for the cornstarch, in a small saucepan and bring to a simmer. Stir in the cornstarch mixture and stir until thickened. Set aside until ready to use.
  • To make the meatballs, thoroughly combine all the meatball ingredients in a large mixing bowl and form the mixture into 1-inch meatballs. Yields about 24 meatballs.
  • Alternately thread six bamboo or metal skewers with the meatballs (4 on each skewer), pineapple and vegetables. Brush with about half of the sweet & sour sauce.Heat the grill to medium-high heat and brush the grill grates with some oil. Grill the kabobs about 5-6 minutes on each side or until lightly seared and the meatballs are cooked through.Brush the kabobs with remaining sweet and sour sauce and serve immediately.

  • Combine all ingredients for meatballs and mix thoroughly. You want the chia seeds evenly mixed throughout. Set aside for 20 minutes so the chia seeds have time to swell and bind. Using wet hands so the meat doesn’t stick all over your fingers, shape the mixture into 12 meatballs.
  • Thread 3 meatballs each onto the skewers. Line a baking tray with baking paper and spray with olive oil. Add the meatball skewers and spray again with olive oil. Bake at 200C for approximately 20 minutes until meatball skewers are cooked and nicely coloured.
  • Make hard boiled eggs. Place eggs in pot, cover with cold water and place on the stove over high heat. As soon as it starts to boil, reduce to a simmer and cook for 8 minutes. Tip out the hot water, replace with cold and set aside while the meatballs finish cooking.
  • Make satay sauce by frying garlic in coconut oil for 1 minute. Add the other sauce ingredients on the stove stirring over low heat until well combined and heated through. Serve skewers with boiled eggs and satay sauce.
