Steps:
- In a food processor, blend the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth paste; this should make about 2 cups. Reserve half of the marinade and pour the other half over the chicken thighs. Mix and chill for 2 hours or overnight.
- Preheat the oven to 425˚F (220˚C). Line a baking tray with parchment paper.
- Skewer the marinated chicken onto bamboo skewers, then arrange the skewers so their ends rest on the edges of the baking tray, allowing the chicken to be suspended. Bake the chicken skewers for 15-20 minutes, until slightly dark brown on the edges and cooked through.
- With no oil in the pan, toast the chopped peanuts on low to medium heat, stirring constantly until the peanuts turn golden brown, 2-3 minutes. Add in the reserved marinade and the coconut milk. Stir and cook until thick and very aromatic, 5-10 minutes.
- Serve the chicken skewers with the sauce on the side.

- If using wooden skewers, soak them in a dish of warm water for at least 20 minutes.
- Combine the chicken marinade ingredients in a zip-top bag or dish: olive oil, soy sauce, lemon juice, brown sugar, Worcestershire sauce, garlic, Italian seasoning and black pepper. Squish to mix in the bag or whisk if using a dish.
- Add the chicken pieces to the marinade. Make sure that all of the chicken is coated with the marinade. Refrigerate for at least 30 minutes and up to 4 hours.
- Place the zucchini rounds and chopped bell peppers in a baking dish or bowl. Drizzle with the 1 ½ tablespoons of olive oil and sprinkle with salt and pepper; toss gently to coat. Add the onion to the bowl last and mix in very gently so that the onion layers stay together as best as possible.
- Put the chicken and vegetables on the skewers, dividing evenly between the 8 skewers and arranging the vegetable pieces in between the chicken pieces. Aim to put about 3 chicken pieces and 2-3 pieces of each vegetable per skewer. Discard all of the used marinade that held the chicken.

- For the sauce:
- In a small saucepan, combine the soy sauce, sake, sugar and vinegar and bring to a boil. Boil over high heat until thickened to a glaze, 2 to 3 minutes. Taste and season with a fresh splash of vinegar, if you like.
- For the meatballs:
- Preheat the grill for at least 10 minutes, preparing to grill over moderately high heat, and soak 8 double-pronged bamboo skewers or 16 single skewers in water.
- In a bowl, use your hands to mix together all of the ingredients except for the sesame seeds and scallion greens.
- Form the meat mixture into 16 meatballs. Thread the meatballs onto the skewers, leaving just a little space in between and flatten slightly.
- Oil the grates well and grill the meatball skewers until light grill marks form, 3 to 4 minutes. Flip and grill for 2 minutes longer, until the outside of the meatballs looks cooked.
- Brush the sauce over the meatballs, flip and brush the other side. Flip them and brush them with the sauce constantly for about 1 minute, until glazed and cooked through. If the sauce darkens too quickly, reduce the heat or move the skewers to a cooler part of the grill.
- To serve:
- Transfer the skewers to a platter and sprinkle with sesame seeds and sliced scallions. Serve over rice, if desired.

- In a medium pot, combine all ingredients for glaze and bring to a boil until the bubbles start to become sticky and glossy.

- Make the keto teriyaki sauce. Set it aside to cool.
- In a large mixing bowl, add ingredients from chicken to egg yolk.
- Grate the ginger and squeeze the juice into the bowl. You should have about 1 tbsp ginger juice. Grate the shallot and add the entire mixture into the bowl.
- Stir the meat (I use a pair of chopsticks) in one direction until they become very sticky, about 2 minutes. If you have a stand mixer, use it to help you bind the meat together.
- Line a large sheet pan with parchment. Use a cookie scoop to form 13 meatballs and place them on the sheet. My scoop is about 3 tbsp per scoop.
- Grease your hands with some olive oil. This will prevent the meat from sticking to your hands. Shape the meatballs into a smooth surface.
- Flatten the meatballs into small patties (about ½-inch thick). Pan fry them with avocado oil over medium heat about 2.5 minutes on the first side. Flip the patties and brush with teriyaki sauce. Fry the second side for about 1.5 minutes. Flip the patties again, brush with more sauce, and fry 1.5 minutes more.
- Use a narrow flat skewer with a handle at one end and a perforated grill tray or grill grid on top of your grill surface to support the skewers or they will fall apart.
- Flatten the meatballs into small patties (about ½-inch thick) and thread them onto the skewers. Brush the grill tray with avocado oil. Cradle the entire skewer in your hand to keep the meat on the stick and place it on the grill grid.
- Grill the first side about 3-4 minutes, rotate to grill the second side about 2-3 minutes, and rotate again to grill for 15-30 seconds longer. Brush with the teriyaki sauce as you rotate the skewers.
- Brush with a thin layer of teriyaki sauce and serve over butter lettuce. Enjoy it while it's sizzling hot!
