3 skinless, boneless chicken breast halves
½ cup distilled white vinegar
1 cup olive oil
1 clove crushed garlic
1 (12 ounce) package manicotti pasta
6 tablespoons butter
2 cups heavy whipping cream
¼ teaspoon ground nutmeg
1 teaspoon ground black pepper
1 ½ cups grated Parmesan cheese
1 teaspoon salt
1 pint part-skim ricotta cheese
1 egg
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh marjoram
1 tablespoon chopped fresh basil

  • Meanwhile, melt butter or margarine in a small saucepan over medium-high heat. Add heavy cream, salt, nutmeg, and ground black pepper, and stir until sauce thickens. Reduce heat to low. Add grated Parmesan cheese, and stir until the cheese melts. Set Alfredo sauce aside.
  • In a large bowl, mix together ricotta cheese, egg, oregano, marjoram, and basil. Mix in cooked chicken.
  • Stuff cooked manicotti shells with chicken and ricotta mixture. Cover the bottom of a 9x13 inch baking dish with half of the Alfredo sauce. Place stuffed shells on top of sauce. Pour remaining sauce over shells. Top with one cup shredded mozzarella cheese. Cover with aluminum foil.
  • Bake at 350 degree F (175 degree C) oven for 45 minutes. Let stand 10 minutes before serving.

CHICKEN MANICOTTI

When one of my friends came home from the hospital with her newborn, I sent over this freezer casserole. She and her family raved over how good it was. Try substituting olives for mushrooms or using veal instead of chicken. -Jamie Valocchi, Mesa, Arizona

Time 1h15m

Yield 14 stuffed manicottis, 7 serving(s)

Number Of Ingredients 9

1 (16 ounce) jar alfredo sauce
1 1/2 cups water
1 teaspoon garlic powder
1 lb chicken breast tenders, raw and unbreaded
1 tablespoon italian seasoning
1 (8 ounce) box manicotti pasta, uncooked
2 cups mozzarella cheese, shredded (8oz)
1 chopped tomato
1/3 cup basil pesto

Steps:

  • 1) Heat oven to 375. In medium bowl, mix pasta sauce, water, and garlic powder. In ungreased 13x9-inch baking dish, spread about one-third (1 cup) of the pasta sauce mixture.
  • 2) If there are not 14 chicken tenders in your package, cut the larger tenders in half until you get 14 total (because there are 14 manicotti shells to stuff). Sprinkle the italian seasonings over the raw shicken tenders. Stuff the chicken tenders into the uncooked manicotti shells. Place shells on pasta sauce mixture in baking dish. Pour remaining pasta sauce mixture evenly over shells, covering completely.
  • 3) Cover with foil. Bake 45 to 50 minutes. Sprinkle with cheese (and extra italian seasonings if desired). Bake uncovered 2 to 4 minutes longer until cheese is melted.
  • Optional: Top with tomato and pesto before serving.

CHICKEN ALFREDO MANICOTTI

Chicken Alfredo Manicotti image

We save some time by piping the chicken, cheese and spinach filling directly into uncooked manicotti shells, then letting them bake to perfection in a creamy, rich Alfredo sauce. Comfort pasta at its best.

Time 1h30m

Yield 6 servings

Number Of Ingredients 19

6 strips thick-cut bacon, diced
3 cloves garlic, minced
1 large leek (about 10 ounces), white and light green parts, thinly sliced
2 1/2 cups half-and-half
1/2 cup freshly grated Parmesan
Pinch crushed red pepper flakes
Juice of 1/2 lemon
4 ounces cream cheese, at room temperature
1/2 cup fresh parsley leaves, chopped, plus more for garnish
Kosher salt and freshly ground black pepper
One 10-ounce box frozen chopped spinach, thawed and drained
2 1/2 cups ricotta cheese (about 1 pound)
1 cup diced rotisserie chicken
3/4 cup shredded Italian blend cheese
Pinch crushed red pepper flakes
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
One 8-ounce box manicotti
1/2 cup shredded Italian blend cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • For the Alfredo sauce: Cook the bacon in a large skillet over medium-high heat until crisp and brown, 7 to 8 minutes. Transfer to a paper towel-lined plate and reserve.
  • Add the garlic and leeks to the skillet with the remaining bacon fat and cook until translucent, about 2 minutes. Add the half-and-half, Parmesan, crushed red pepper and lemon juice and bring to a simmer. Add the cream cheese and cook until the sauce is thickened and the cheese is melted and fully incorporated, about 5 minutes. Remove from the heat, stir in the parsley and season with salt and black pepper.
  • For the filling: Add the spinach, ricotta, chicken, Italian blend cheese, crushed red pepper, lemon juice, 1 teaspoon salt and a few grinds of black pepper to a large bowl and mix until fully combined. Transfer the mixture to a large disposable piping bag (or resealable plastic bag) and snip a large hole at the end of the bag.
  • For the pasta: Spoon 1 cup of the sauce on the bottom of a flameproof (not glass) 9-by-13-inch baking dish. Pipe the filling into both ends of the uncooked manicotti shells until filled and arrange them in the baking dish. Top with the remaining sauce, reserved bacon and Italian blend cheese. Cover with foil and bake until the sauce is bubbly and the pasta is cooked, 30 to 40 minutes.
  • Remove the baking dish from the oven and remove the foil. Turn the oven to broil. Broil until the top is golden brown, 3 to 4 minutes. Sprinkle with more chopped parsley.

STUFFED MANICOTTI ALFREDO

Stuffed Manicotti Alfredo image

I have only had this at a restaurant once at a place in Louisville called The Old Spaghetti Factory. It was so good, I stuffed myself bigger than the Manicotti! So, I came home and started playing around with a couple of recipes and this resulted. I think it's a delicious alternative to the heavy tomato sauce that's usually on Manicotti for the veggie-worshipers, there's no meat. Serve with a green salad and some garlic bread for a delicious meal. Looks like a lot of work, but it's really not and goes fairly quick. WELL WORTH IT!

Time 1h20m

Yield 5 serving(s)

Number Of Ingredients 14

10 manicotti, cooked and drained
16 ounces ricotta cheese
1/2 cup parmesan cheese
4 cups mozzarella cheese
1 egg, beaten
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 cup real butter (no subs!)
1 cup cream (half & half will work in a pinch)
1/2-3/4 cup parmesan cheese
1 pinch salt and pepper
garlic powder, to taste

Steps:

  • Prepare the alfredo sauce. Melt the butter in a med. saucepan. Whisk in cream and Parmesan cheese and seasonings. Simmer for 15 minutes on low heat, being careful not to boil or let stick. Remove from heat.
  • Preheat the oven to 375 degrees.
  • Prepare the filling. In a small bowl, stir together ricotta, 2 1/4 cups mozzarella cheese, Parmesan cheese, egg and seasonings.
  • Make sure shells are drained well.
  • Spread a thin layer of alfredo sauce in the bottom of a 9x13 baking dish. Using a pastry bag or zip-top bag, fill the shells and arrange them on the sauce. Pour the remaining sauce on top of the shells. Cover and bake for 35-40 minutes. Uncover and sprinkle with the remaining mozzarella cheese. Bake 10 minutes more or until cheese is just melted, but not browned and manicotti shells are heated through.
