CHICKEN CHEDDAR CORN CHOWDER



Chicken Cheddar Corn Chowder image

This rich, creamy soup features tender chunks of chicken, crispy bacon, plenty of potatoes and corn, and lots of cheddar cheese. True comfort food on a chilly day.

6 slices bacon
1 red bell pepper diced
2 cloves garlic, minced
1/2 cup onion, diced
6 cups chicken broth
3 medium potatoes, peeled and diced
2-3 cups cooked, shredded chicken
1 1/2 cups of frozen corn (or canned)
1/2 cup flour
2 cups half and half
2 cups shredded cheddar cheese
Salt and pepper, to taste
Fresh parsley, for garnish

Steps:

  • In a large Dutch oven, cook bacon until crisp. Remove from pan; crumble and set aside.
  • Add the red pepper, garlic and onion to the pot and cook until vegetables are just tender. Stir in the chicken broth and bring to a boil. Add the diced potatoes and cooked chicken to the pot and simmer until the potatoes are tender, about 10 minutes.
  • In a medium bowl, whisk together the flour and half and half until smooth. Gradually stir the flour mixture into the soup, stirring constantly until soup thickens. Stir in the corn and .
  • Simmer for an additional 10-15 minutes. Remove from heat and stir in cheese and reserved bacon. Season with salt and pepper, to taste. Garnish with fresh chopped parsley, and additional cheese and bacon, if desired.

4 spring onions, trimmed and thinly sliced
850ml chicken stock
250g potatoes, diced
300ml skimmed milk
250g skinless, boneless chicken breast, cut into small pieces
140g frozen or canned sweetcorn
410g can Puy lentils or green lentils, rinsed and drained
chopped chives, to serve (optional)

Steps:

  • Place the spring onions in a large pan with 6 tbsp stock and seasoning. Cover and cook for 2-3 mins until softened. Add the potatoes, the rest of the stock and the milk. Bring to the boil and simmer gently, partially covered, for 10 mins or until the potatoes are just tender. Ladle out about a quarter of the mixture into a blender and whizz until smooth. Stir back into the pan.
  • Add the chicken, sweetcorn and lentils to the pan and cook for 5-7 mins more or until the chicken is cooked. Check the seasoning and serve in warm bowls, scattered with chopped chives (if using).

2 cups low sodium chicken broth (or chicken stock)
1 cup dried brown lentils, sorted and rinsed
1 cup chopped yellow onion
1 celery, diced
2 carrots, diced
1 teaspoon salt (to taste)
1/2 teaspoon paprika
1/4 teaspoon dried oregano
1/4 teaspoon fresh ground black pepper
2 cups chopped cooked seasoned chicken
1 medium zucchini, cut in half lengthwise and diced
1 tablespoon chopped fresh parsley
crumbled feta cheese, for topping

Steps:

  • In a large soup pot over high heat, bring the water, stock, lentils, onions, celery, carrots, salt, paprika, oregano, and pepper to a boil.
  • Decrease heat to med-low and simmer, covered, for 45 minutes, stirring occasionally.
  • Add in the chicken, zucchini, and parsley; simmer, covered, until the vegetables are tender and the flavors are blended, 15-20 minutes; taste and adjust seasoning.
  • Ladle into bowls and sprinkle feta on top.

This quick chicken and sweetcorn soup is a perfect way to use up scraps of chicken leftover from a roast. Use fresh stock instead of stock cubes if you like. Each serving provides 124 kcal, 11g protein, 11g carbohydrates (of which 3.5g sugars), 3.5g fat (of which 1g saturates), 1.5g fibre and 1.7g salt.

1½ chicken stock cubes
198g tin sweetcorn, drained
100g/3½oz skinless cooked chicken meat, cut into small pieces
25g/1oz cornflour
6 spring onions, trimmed and finely sliced
1 large free-range egg, well beaten
freshly ground black pepper
freshly chopped parsley, to garnish (optional)

Steps:

  • Put the stock cubes in a large saucepan and pour in 900ml/1⅔ pints water. Bring to the boil, stirring occasionally to dissolve the stock cubes. Add the sweetcorn and chicken and simmer gently for 3 minutes, stirring regularly.
  • Mix the cornflour with 3 tablespoons cold water in a small bowl. Stir the spring onions and the cornflour mixture into the stock and cook, stirring constantly, for 3-4 minutes, or until thickened. Season to taste with pepper. Remove the pan from the heat.
  • Pour the beaten egg over the hot soup and very lightly stir with a fork to distribute the egg strands. Ladle the soup into warmed bowls and scatter with parsley, if using.
