In our house, chicken potpie is a year-round staple. For a springtime feel, we use leeks and mushrooms and a lighter phyllo dough crust. If you don't have gruyere, try Parmesan. -Andrea Stewart, Toronto, Ontario

6 tablespoons olive oil, divided
2 medium leeks (white portion only), thinly sliced
1 cup sliced fresh mushrooms
1 tablespoon all-purpose flour
1 cup chicken stock
1 can (5 ounces) evaporated milk
3 cups cubed cooked chicken
3/4 cup plus 2 tablespoons shredded Gruyere cheese, divided
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
10 sheets phyllo dough (14x9-inch size)

Steps:

  • Preheat oven to 350°. In a large skillet, heat 2 tablespoons oil over medium-high heat. Add leeks and mushrooms; cook and stir 3-4 minutes or until vegetables are tender. Stir in flour until blended; gradually stir in stock and milk. Bring to a boil, stirring constantly; cook and stir 3-4 minutes or until thickened. Stir in chicken, 3/4 cup cheese, thyme, salt and pepper., Brush a 9-in. pie plate with some of the remaining oil. Place one sheet of phyllo dough into prepared pie plate, allowing ends to extend over edges of dish; brush with oil. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) Layer with seven additional phyllo sheets, brushing each layer with oil and rotating sheets to cover the pie plate. Transfer chicken mixture to crust., Gently fold in ends of phyllo over filling, leaving an opening in the center. Crumble the remaining phyllo sheets over filling; sprinkle with remaining cheese. Brush edges with remaining oil. Bake 30-35 minutes or until golden brown.

2 large knobs of butter
1 large leek, washed and chopped into 2cm pieces
200g mushrooms, roughly chopped
4 x 250g chicken breast fillets, cut into bite-sized pieces
250ml chicken stock
1 tbsp cornflour
100ml double cream
2 large handfuls of baby spinach leaves
About 6 sheets of filo pastry
Drizzle of olive oil
Salad or veg, to serve

Steps:

  • Preheat your oven to 190°C (fan 170°C, gas mark 5). Heat the butter in a large frying pan over a medium to high heat. Add the leek and mushrooms and fry for 2-3 minutes until they just start to soften. Crank up the heat to high, add the chicken pieces and fry for a further 2 minutes - the chicken won't be cooked through at this point - then pour in the chicken stock and let it come to a simmer.
  • Meanwhile, mix the cornflour with 2 tablespoons of water until smooth, then pour into the pan, along with the cream. Bring back to the boil, stirring gently, and cook until the sauce thickens. Remove from the heat and stir in the spinach, then tip the whole lot into a pie dish about 28cm x 15cm. Set aside to cool a little.
  • Take a sheet of filo and roughly crumple it in your hands - there is no right or wrong to this method! Place the crumpled filo on top of the chicken filling in the pie dish and repeat with the remaining filo sheets.
  • Drizzle the pastry with olive oil, then bake the pie for about 20 minutes, by which time the filo will have crisped up and turned golden brown in places. Serve up your pie with fresh salad or some vegetables.

Low fat but yummy chicken and leek pie

Steps:

  • Prep the leeks- Chop off the dark green part then slice length ways. Rinse thoroughly to get rid of any mud. Once clean, chop the leeks in to small semi circles.
  • Put a splash of olive oil in a pan and sweat the leeks, don't colour them.
  • Whilst the leeks are cooking, prep the chicken. Dice in to bite sized chucks and add to the leeks.
  • Crush in the garlic and add a splash of lemon juice. Once the chicken is starting to cook, add the chicken stock. (Note, don't cook the chicken all the way through before adding the stock as it tends to dry out). Next, add the cream cheese. Stir continously to avoid curdling/ splittling.
  • Once the sauce has reduced by half, transfer to an oven dish and allow to cool for 10 - 15 mins.
  • Once cool, brush the outer rim of the over dish with olive oil. Lay the filo pastry a sheet at a time over the dish. Brush the joins and the edges with olive oil.
  • Bake in the oven (180 degrees for a fan oven) for around 35 minutes until the filo has gone golden and crispy. Serve with mash and veg for a filling midweek meal :-)

Easy Peasy Chicken, Mushroom and Leek Pie image

Deliciously tender chicken breast, umami-rich mushrooms, sweet leeks and a wonderfully rich and creamy sauce, topped off with a super simple filo pastry crust... this Easy Peasy Chicken, Mushroom and Leek Pie is unbelievably tasty, yet super simple to make. It's set to be your new family favourite!

2 tablespoons olive oil (plus extra for brushing the pastry (see Note 1))
1 large leek (sliced)
250 g chestnut mushrooms (quartered)
800 g diced chicken breast
200 ml chicken stock ((from a cube is fine - I used 1 Kallo Organic stock cube))
150 g crème fraîche
Black pepper (to taste)
3 sprigs of fresh thyme
200 g ready rolled filo pastry

Steps:

  • Preheat your oven to 200C / 180C fan / gas mark 6 / 400F.
  • Place 1 tablespoon of the olive oil, the sliced leeks and the quartered mushrooms into a wide ovenproof pan (see Note 2) and fry over a fairly high heat, stirring regularly, for 3 minutes or until lightly browned.
  • Tip the mushrooms and leeks onto a plate and add the remaining 1 tablespoon of olive oil to the pan. Allow the pan to heat back up again and then fry the diced chicken for 4 minutes, or until lightly browned on most sides. (The chicken should NOT be fully cooked at this point.)
  • Return the mushrooms and leeks to the pan and add the chicken stock. Bring to the boil, then turn right down low.
  • Allow the pie filling to simmer gently for 2 minutes, then add the crème fraîche, black pepper and thyme and stir to combine. When the crème fraiche is fully stirred in, turn the heat off.
  • Leave the pan to cool for 2 minutes, then top with scrunched up sheets of filo pastry: simply take each sheet of filo pastry, scrunch it up in your hand and plop it gently on top of the filling. Repeat until the pie is completely covered, then lightly brush with a little olive oil (or melted butter).
  • Place the pie into your pre-heated oven for 20 minutes, or until the pie is golden brown on top and the filling is bubbling (see Note 3).
  • Serve the chicken pie with your favourite green vegetables, such as green beans, broccoli, cabbage, kale, peas or asparagus

75g butter
2 leeks, halved lengthways and sliced
300g chestnut mushrooms, sliced
25g flour
300ml chicken stock
300g cooked chicken, shredded
75ml double cream
2 tbsp wholegrain mustard
small handful parsley
6 sheets of filo pastry
60ml olive oil
1 tsp thyme leaves
1 tsp nigella seeds
cabbage and mash, to serve (optional)

Steps:

  • Heat a third of the butter in a large saucepan, cook the leeks for 10 mins or until softened, then tip onto a plate and repeat with another third of the butter and the mushrooms. Heat the remaining butter in the same saucepan and, once melted, stir in the flour and cook the sandy paste for 1 min, then stir in the chicken stock a ladleful at a time. Leave on a low heat to simmer for 5 mins, then stir the chicken, leek, mushrooms, cream and mustard into the sauce, add the parsley and season with salt and cracked black pepper. Spoon into a 20cm pie dish and leave to cool.
  • Heat oven to 190C/170C fan/gas 5. Lay a sheet of filo on a chopping board and brush with olive oil, then place on top of the pie with the corners resting on the sides of the dish, then repeat the process, placing the next sheet slightly off-centre - the idea is to fan the sheets of filo. Brush every layer with oil, and on the last layer sprinkle over salt, thyme leaves and nigella seeds. Press the pastry gently into the edge of the dish. Bake for about 1 hr until the pastry is deep golden, then remove from the oven and serve with buttered cabbage and mashed potato, if you like.
