EASY AUTHENTIC CHICKEN LARB GAI RECIPE

Delicious minced meat salad made authentically via Lao recipe.

1 pound of ground chicken
1/2 cup of cooked chicken skin, sliced (found at asian markets)
1 tablespoon of cooking oil
1 lime, juiced
2 inch pieces of lemon grass
2 tablespoon of khao khua (toasted rice powder)
2 tablespoons fish sauce
2 cloves garlic, minced
1/4 cup of scallions, chopped
1/4 cup of cilantro, chopped
1/4 cup of spearmint, chopped
2 thai chilis, chopped
1 tablespoon of crushed dried chilli

Steps:

  • Get the scallions, cilantro, spearmint, chilis, lemon grass, and chilis ready. Ensure that you have the scallions, cilantro, spearmint, and garlic minced. The Thai chilis need to be chopped and ready. On medium high heat, add the cooking oil. Once the oil is heated, add in the ground chicken. Next, add in the padaek (fermented fish sauce). Keep on cooking the meat. Ensure that you are chopping the meat in the pan to separate the ground chicken as much as possible. Once the ground chicken is cooked through, take it off of the heat and try to continue to break up the ground chicken with a fork or other cooking utensil. With the chicken still warm, add in the lime juice. in the skillet. Next, and most importantly, add in the khao khua (toasted rice powder). After that, add in the dried, crushed chilli. Finally, mix in the chicken skin and the rest of the herbs.

1 pound ground chicken
2 tablespoons canola oil
2 shallots, thinly sliced
2 green or red fresh chiles, seeded and chopped
2 garlic cloves, minced
2 tablespoons lime juice
3 tablespoons fish sauce
1 tablespoon sweet chili sauce
2 teaspoons brown sugar
1 to 2 teaspoons Sriracha chili sauce
1/4 cup fresh cilantro leaves
2 tablespoons minced fresh mint
Hot cooked sticky rice
Boston lettuce leaves, optional

Steps:

  • In a large skillet, cook chicken over medium heat until no longer pink, 8-10 minutes, breaking it into crumbles; drain. In the same skillet, heat oil over medium heat. Add shallots and chiles; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Stir in the cooked chicken, lime juice, fish sauce, chili sauce, brown sugar and Sriracha. Cook and stir until heated through. Stir in cilantro and mint. Serve with rice and, if desired, lettuce leaves.

This very typical Lao dish may also be made with fish, pork, beef, or, in Southeast Asian tradition, water buffalo meat. While laap is often made with raw meat or fish, our chicken-based rendition is stir-fried, as it was when Lao cooks served it to us. A powder made from toasted glutinous rice subtly flavors the dish.

Number Of Ingredients 10

4 tablespoons raw Thai glutinous rice
1 pound skinless boneless chicken breasts
2 teaspoons vegetable oil
1/4 cup minced scallion
1/4 cup fresh mint
3 tablespoons coarsely chopped fresh cilantro
3 tablespoons fresh lime juice
1 tablespoon Asian fish sauce
1 to 2 small (1-inch) fresh Asian chiles such as bird or Thai, minced
Accompaniments:sticky rice ; fresh mint, basil, and cilantro leaves; coarsely chopped tomato and English cucumber

Steps:

  • Cook rice in a dry small heavy skillet over moderately high heat, stirring constantly, until golden brown, 4 to 6 minutes (rice will smoke). Grind to a coarse powder in an electric coffee/spice grinder or with a mortar and pestle.
  • Thinly slice chicken crosswise and cut slices into thin strips. Season chicken with salt. Heat oil in a wok or heavy skillet over high heat until hot but not smoking, then stir-fry chicken until cooked through, about 2 minutes. Remove chicken from heat and stir in 2 tablespoons rice powder, reserving remainder for another use. Add remaining ingredients and stir well.
  • Mound chicken on a platter and serve with a basket or bowl of sticky rice and plate of herbs, tomato, and cucumber.

  • In a dry saute pan, add the rice and the kaffir lime leaf and toast, stirring constantly, over high heat until the rice has a deep brown colour (see video for colour). Remove from heat immediately and transfer into a mortar and pestle or a coffee grinder. Grind until fine (yes, grind the lime leaf too), but if using a coffee grinder, be careful not to over-grind—you don't want it to look like flour, you still want a bit of grittiness to it.
  • To make the laab : In a wide pot or saute pan, add the water or stock and bring to a simmer. Add ground chicken and 1 tsp of the fish sauce, then cook, stirring constantly to break up any big lumps, just until it is done. Remove from heat, then, using the pot as your salad bowl, add the shallots and stir to wilt slightly and to make sure all the shallot layers are separated. Then add fish sauce, lime juice, chili flakes, and toasted rice powder; stir to mix well. Then add green onions and sawtooth coriander and/or cilantro and stir to mix.
  • Tip: If you're not serving right away, hold the toasted rice powder and stir it in just before serving, otherwise the toasted rice powder will absorb all the dressing and make the salad seem dry, and the toasted rice powder will become slightly mushy.
  • Plate and sprinkle the mint on top. Garnish with a couple of dried chilies if you want, and sprinkle with some crispy chicken skin (which you can make in minutes!). Serve warm or room temp with sticky rice and fresh, crunchy vegetables such as iceberg lettuce, cucumber, long beans, Belgian endive.
