2 boneless skinless chicken breast halves (4 ounces each)
1 teaspoon canola oil
1 can (14-1/2 ounces) stewed tomatoes, cut up
1/3 cup julienned green pepper
1/4 cup chopped celery
1/4 cup sliced onion
1/2 to 1 teaspoon chili powder
1/2 teaspoon dried thyme
1/8 teaspoon pepper
1 cup hot cooked rice

Steps:

  • In a small nonstick skillet coated with cooking spray, cook chicken in oil over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Remove and keep warm. , In the same skillet, combine the tomatoes, green pepper, celery, onion, chili powder, thyme and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until vegetables are crisp-tender. Return chicken to pan; heat through. Serve with rice.

1 tablespoon olive oil
1 clove garlic, minced
1 onion, thinly sliced
1 stalk celery, sliced thin
1 green bell pepper, minced
2 (16 ounce) cans diced tomatoes
1 bay leaf
½ teaspoon salt
⅛ teaspoon cayenne pepper
4 skinless, boneless chicken breasts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, heat the oil over medium heat. Add the garlic, onion, celery and bell pepper. Cook, stirring occasionally, until tender (about 4 minutes). Add the tomatoes, bay leaf, salt and cayenne pepper. Cook this Creole sauce 3 minutes longer, stirring often.
  • Arrange the chicken breasts in an 8 x 11 inch baking dish. Pour the Creole sauce over the chicken.
  • Bake 15 to 20 minutes, until the chicken is tender and white throughout.

2 1/2 lbs boneless chicken thighs or 2 1/2 lbs boneless chicken breasts
2 tablespoons olive oil
1 medium onion, chopped
1 celery rib, chopped (about 1/2 cup)
1/2 cup green pepper, chopped
2 garlic cloves, crushed
6 green olives, minced
1 (14 1/2 ounce) can tomatoes, crushed
1 cup beef broth
1/4 cup chili sauce
1 bay leaf

3/4 cup Orange Juice

There's a fair amount of chopping, but a good way to satisfy a hankering for Cajun or Creole cooking. I used to make this a lot and then "upgraded" to make use of salt-free spice mixtures. There's a bit of "kick" to this. I serve over plain, sodium-free basmati rice. This is a good make-ahead meal.

2 1/2 lb chicken breasts or thighs, skin removed
3 Tbsp olive oil
1 c chopped celery
1 red bell pepper sliced
1 green bell pepper, sliced
1 medium onion, sliced
3 Tbsp olive oil
1 Tbsp garlic chopped
1 can(s) del monte no-salt diced tomatoes
1 Tbsp spicely-brand organic cajun seasoning - to taste
1 louisiana hot sauce or tabasco to taste

Steps:

  • 1. Heat 3 tbls olive oil medium high in deep skillet or saute pan.
  • 2. Place chicken in pan and brown uniformly.
  • 3. Remove from pan and set aside. Add vegetables and saute in the additional 3 tbsp olive oil until tender.
  • 4. Add chicken to pan and combine remaining ingredients.
  • 5. Bring to boil, then turn heat to low and simmer, covered, for 30 minutes. Now is a good time to start rice of your choice separately.
  • 6. Serve over rice.

  • Cut whole chicken into pieces and trim excess fat and remove skin if preferred. Take one lime and cut in half. Clean each chicken pieces by rubbing lime halves while squeezing some of the juice out. Repeat process for each chicken pieces. Rinse chicken well with water and pat dry.   • Heat remaining oil in skillet add marinade to cook for 1 minute. Add chicken to pan and stir to incorporate. Add remaining tomato paste into 1 cup of boiling water to dilute and add to chicken. Cook covered over medium heat until chicken is fully cooked. Remove from heat, remove chicken from pan and strain liquid to remove extra spices residue. Reheat sauce in same pan, add 1/4 water (or more if necessary), season with additional salt and pepper and hot pepper or hot sauce if preferred. Add onion slices and bell pepper if using, and bring to a boil. Once sauce starts to thickens, add chicken and cook uncovered for 5 to 7 minutes on medium to low heat. Remove from heat and serve immediately.
