BRAISED CHICKEN LEGS WITH CARROT JUICE, DATES & SPICES
The carrot juice and dates lend sweetness to this Moroccan-inspired braise. Serve over couscous or rice.

- Position a rack in the center of the oven and heat the oven to 350ºF.
- Season the chicken pieces generously with salt and pepper. In a straight-sided 10- or 11- inch ovenproof sauté pan with a lid, heat the oil over medium-high heat until very hot. Arrange the chicken pieces skin side down in the pan (it'll be crowded), cover with a splatter screen, if you have one, and cook until deeply browned, about 5 minutes. Turn the pieces over and cook until the other sides are deeply browned, 3 to 5 minutes more. Transfer to a plate. Pour out and discard all but 1 Tbs. of the fat in the pan.
- Put the pan over medium heat. Add the onion and cook, stirring frequently, until it's soft and begins to color, 6 to 8 minutes. Add the ginger, cinnamon, and cumin and stir into the onions for about 1 minute. Pour in the carrot juice and broth and bring to a boil, scraping the browned bits from the bottom of the pan with a wooden spoon. Return the chicken pieces to the pan, along with any accumulated juices. If using prunes or apricots, add them now. Cover, transfer to the oven, and braise for 15 minutes. Add the dates, if using, and continue to braise until the chicken is fork-tender and the drumstick meat starts to come away from the bone, 30 to 35 minutes more.
- With a slotted spoon, transfer the chicken and dried fruit to a serving dish and keep warm by covering the dish loosely with foil. Tilt the sauté pan and skim off as much fat as possible from the sauce. Bring the sauce to a boil over medium-high heat, reduce the heat to medium-low, and simmer until the sauce is slightly thickened, about 5 minutes. Add the lemon juice and season to taste with salt and pepper. Pour the sauce over the chicken, sprinkle with the chopped cilantro, and serve.

CHICKEN IN CARROT JUICE
After searching the web for recipes that include carrot juice (had too much and nobody at home drinks it), I found two that used it with chicken. I decided to combine them both and got one of the best kitchen experiments in my life. Apricots can be substituted for dates if desired. Served it with saffron rice. Worth a try!

- Mix flour, cumin, cinnamon, ginger, and salt together in a gallon-size resealable bag. Add chicken, seal bag, and shake to coat. Remove chicken and discard unused flour mixture.
- Heat olive oil in a large pan or Dutch oven over medium heat. Cook and stir chicken in the hot oil, working in batches, until lightly browned, 3 to 4 minutes per side. Transfer chicken to a plate, reserving oil in the pan.
- Saute onion and garlic in the same pan used for chicken until onion is translucent, about 10 minutes. Pour vinegar into the pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Cook until most liquid is evaporated, 1 to 2 minutes.
- Pour carrot juice into onion mixture and bring to a boil; cook until liquid is reduced by half, 10 to 15 minutes. Add dates, reduce heat, and simmer until liquid is 1/3 the amount as original amount, about 5 minutes. Reduce heat to low, add chicken, and simmer, gently stirring occasionally, until chicken is no longer pink in the center and carrot juice mixture is deep brown and thickened, 10 to 15 more minutes.

- Spread garlic onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with carrots and chicken.

This fine Cooking recipe was really easy. I used California dates as Medjool dates were unavailable. I served it with couscous cooked in chicken stock. The Moroccan flavors were absolutely delicious. This was a very inexpensive dish. Yet it was elegant in presentation. Hope you enjoy.

- Add the dates and continue to braise until the chicken is fork-tender and the drumstick meatstarts to come away from the bone, 30 to 35 minutes more.
- With a slotted spoon, transfer the chicken and the dates to a serving dish and keep warm by loosely covering the dish with foil.
- Tilt the saute pan and skim off as much fat as possible from the sauce.
- Bring the sauce to a boil over medium-high heat, reduce the heat to medium low, and simmer until the sauce is slightly thickened, abouth 5 minutes.
- Add the lemon juice and season to taste.
- Pour the sauce over the chicken, sprinkle with the chopped cilantro and serve.

- Pull any skin from chicken. Slice legs from thighs if using. Turn slow cooker to low or high depending on how long you want to cook it. In the slow cooker bowl; stir barbecue sauce with beer, chipotle, thyme and rosemary. Add chicken and carrots and stir to evenly coat. Push pieces into sauce as much as possible.
- Cover and cook for 2 to 2½ hours on high or 4 hours on low. Cooking time depends on the size of chicken pieces. They should reach an internal temperature of 165°F (74°C). Serve beside sugar snap or green peas and spoon the sauce over mashed potatoes or rice. A sprinkle of fresh parsley or basil is a nice touch.

- Add chicken to the skillet, add sliced carrots, mix orange juice and soy sauce together and pour over the chicken. Place on stove and cover; bring to boil, reduce heat and simmer for about 15 minutes, or until chicken is tender. Can use boneless, skinless breasts, but the sauce isn't as flavorful. I also double the amounts of liquid, as I like to have extra sauce.

- Fry the chicken pieces skin side down until brown on both sides. Set aside. In the same pan add the leeks, carrots, thyme and rosemary and fry over low heat until softened. About 10 minutes.
- Add the butter and when it’s melted, sprinkle over the flour and stir to coat and cook slightly. Add the orange/naartjie juice and deglaze the pan. Scrape any browned bits that may have got stuck on the bottom. Then add the milk, cream, honey and stock and bring it to a bubble. Add the chicken pieces back in (with any juices) and cook for 25 – 30 minutes with the lid on, on the lowest setting. Stir occassionally to ensure the sauce doesnt catch at the bottom of the pan. Or you could pop it in the oven @ 180C / 350F for 40 minutes
- While the chicken is cooking make your rice to serve. You will need around 1 – 1.5 cups of rice for 4 people.
