4 boneless skinless chicken breasts (about 1 1/4 lb)
1 package (8 oz) sliced fresh mushrooms (3 cups)
4 medium green onions, chopped (1/4 cup)
1/4 teaspoon salt
1/4 cup brandy or chicken broth
1/2 cup whipping (heavy) cream
Hot cooked spinach fettuccine or regular fettuccine, if desired

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil 10 to 15 minutes, turning once, until chicken is clear when center of thickest part is cut (170°F).
  • Stir in mushrooms, onions, salt and brandy. Cook 4 to 5 minutes or until mushrooms are tender and most of the liquid has evaporated.
  • Gradually stir in whipping cream. Cook about 2 minutes or until hot. Serve over fettuccine.

4 skinless, boneless chicken breast halves
1 cup all-purpose flour
1 egg, beaten with water
1 cup bread crumbs
3 tablespoons vegetable oil
¼ cup grated Parmesan cheese
salt and ground black pepper to taste
⅓ cup brandy
2 cups milk

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Gently press the chicken breasts into the flour to coat and shake off the excess flour. Dip into the beaten egg, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded chicken onto a plate while breading the rest; do not stack.
  • Heat the oil in a large skillet over medium-high heat. Cook the breaded chicken breasts on both sides in the hot oil until evenly browned; transfer to a large baking dish. Sprinkle Parmesan cheese over the chicken and season with salt and pepper. Pour the brandy and milk over the chicken.
  • Bake in the preheated oven until the milk is bubbly and browned around the edges, about 1 hour.

4 chicken breasts, boneless and skinless. halved about 2 lbs.
1/2 c all purpose flour
1/4 tsp salt
1/8 tsp black pepper
2 Tbsp butter
3/4 tsp garlic powder
1 tsp onion powder
11 oz apricot nectar
6 Tbsp orange juice, concentrated breakfast drink
1/4 c brandy or ginger brandy if you can find it
2 Tbsp wildflower honey
2 Tbsp powdered ginger

Steps:

  • 1. Dip chicken in flour blended with salt and pepper.
  • 2. Brown slowly in butter over medium heat in an iron. (cast iron skillet)
  • 3. In a small bowl, blend garlic and onion powders,nectar, orange juice, honey and powdered ginger. Pour over chicken.
  • 4. Add brandy. Simmer slowly, covered until chicken is tender. Add a little water, if needed while cooking.
  • 5. * serve with some steamed snow peas and greens. Buttered french bread and a well chilled Chablis..if desired.

4 boneless skinless chicken breast halves, washed and dried
1 teaspoon fresh ground black pepper
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons extra virgin olive oil
1 medium onion, coarsely chopped
1 garlic clove, coarsely chopped
1 lb button mushroom, sliced
1/4 cup brandy
1/2 cup heavy cream or 1/2 cup sour cream
salt & freshly ground black pepper

Steps:

  • Preheat oven to 250°F Place chicken on a plate and press black pepper into them.
  • In a heavy skillet, heat butter and olive oil. Cook chicen on medium heat until lightly browned.
  • Remove chicken and place in an ovenproof dish, then place this in the oven. Leave the pepper and juices in the skillet.
  • Add onion and garlic to the skillet and brown over medium high heat, adding more oil if needed. Try not to brown the garlic too much.
  • Add the mushrooms and saute until most of the liquid has evaporated.
  • Remove skillet from heat and add brandy. Ignite the brandy and saute for 1 minute.
  • Add cream and stir. Add salt and pepper to taste.
  • Take the chicken out of the oven, return it to the skillet, and heat for 2 minutes on medium-low heat, letting the chicken absorb some of the sauce.
  • Serve with the sauce.

3/4 cup flour, seasoned with salt and pepper
4 tablespoons butter
1 shallot, chopped fine
3 tablespoons brandy
1/2 cup white wine
2 tablespoons grainy mustard
1 cup heavy cream
2 shallots, chopped

Steps:

  • Dip the chicken in flour until coated, and shake off the excess.
  • Put the butter in a large heavy skillet over medium high heat. When the butter is melted, add the chicken and cook until golden on each side, about 4-5 minutes per side. Transfer to a plate and keep warm.
  • Add shallot, brandy and wine to the skillet and bring to a boil, stirring to get all the cooked bits off the bottom. Simmer for 2-3 minutes - the liquid will cook down a little.
  • Stir in the mustard, and then the cream. Simmer for another 3 minutes. Season to taste with salt and pepper.
  • Spoon a little sauce on each plate, place a chicken breast on top, and spoon more sauce over the top. Garnish with chopped shallots. I like to serve this with slivered steamed carrots and green beans.

Chicken Normandy, also known as 'Poulet á lá Normande,' is a super delicious, fall, French Chicken dish. It is whole chicken legs braised in apple cider and brandy; then cooked with onions, garlic, and herbs, and finally finished off with cream, dijon mustard, and fried apples. It's luxurious, has that definite "Wow" factor both in look and in taste - yet it's easy to make.

2 tbsp Butter (unsalted, to fry apples)
2 whole Apples* (see notes) (peeled, cored, sliced)
4 Whole Chicken Leg Quarters
pinch of Salt (to season each chicken leg)
2 tbsp Butter (unsalted, to sear the chicken legs)
1 Yellow Onion (medium size, sliced )
1 clove Garlic (minced)
1 teaspoon Dry Thyme
1/2 cup Brandy ((ideally Apple Brandy))
2 cups Apple Cider ((Claudy Apple Juice))
1/2 cup Heavy Cream
1 tbsp Dijon Mustard
2 springs Fresh Thyme (chopped)
Salt & Pepper to taste

Steps:

  • Fry the apples: Peel, quarter, remove seeds and slice the apples. Heat 2 tablespoons of butter in the skillet, add the apples in one layer and fry them until golden brown, flipping a few times. Once cooked on both sides, remove apple slices and set them aside (about 5-7 minutes)
  • Sear the Chicken: To the same skillet add another 2 tablespoons of butter; season chicken with salt and pepper on both sides and sprinkle with flour. Sear the chicken on the hot pan for 5-7 minutes on each side until the skin is crispy and golden brown. Then remove the chicken from a pan and set aside.
  • Prepare the braising liquid: Preheat the oven to 375ºF. To the same pan add sliced onions. Sauté the onions on medium heat for approximately 5-7, add garlic and dry thyme and cook for another minute. Deglaze the pan with brandy and cook until half of it has evaporated, then add apple cider (cloudy apple juicer) and cook for about 5 minutes.
  • Braise the chicken: Add the chicken (skin side up) back to the skillet, cover the pan and move to the hot oven. Bake the chicken for 30 minutes. Carefully remove the pan from the oven using heavy-duty oven mittens.
  • Finish up the sauce: Remove your chicken onto a plate and finish up the sauce. First, add heavy cream and then Dijon mustard and mix well. Cook it for about 5 minutes until the sauce thickens out. Add fried apples, fresh thyme, and chicken back to the skillet (to soak up some of the sauce).
  • Serve: To serve place the sauce onto the plate, make sure each plate has onions, apples, and enough sauce to dunk in. Place a chicken leg on top of the sauce and serve. Enjoy!

Boneless chicken breasts with a simple rich pan sauce. Extremely fast and easy to make using a basic pan sauce technique.

2 boneless chicken breast halves
1/2 cup flour
1 cup chicken broth
1/4 cup brandy
1 tablespoon butter
1 teaspoon lemon juice
3 tablespoons extra virgin olive oil
1/8 cup Italian parsley
2 teaspoons fresh ground pepper
kosher salt

Steps:

  • Trim fat from chicken breast halves.
  • Cut breast sections in half so that you have four roughly equal pieces.
  • Take a gallon zip top bag and cut the two edges open so that the sides are only joined at the bottom edge of the bag.
  • Place breast sections in bag one at a time and pound flat with a mallet or a flat heavy object until chicken pieces are only 1/4 to 1/2" thick.
  • Season breast sections on both sides with 1 tsp of fresh ground pepper and salt to taste.
  • Heat a frying or sauté pan to medium/medium high heat. Do NOT use a non-stick pan. You can't make decent pan sauces with Teflon. I prefer a stainless steel pan but cast iron would work (preferably enamel coated cast iron).
  • Put flour in a bowl and press breast pieces into it to coat chicken fully.
  • Add olive oil to pan and let it come up to temperature. It should only take a couple of seconds.
  • Add breast sections. Brown the chicken to a golden brown then flip and do the same on the other side. It should only take roughly 3 minutes per side or you have the chicken too thick. Do not crowd the pan. If you have to cook the chicken in batches keep the first batch warm by wrapping in aluminum foil.
  • While chicken is frying, chop Italian parsley to 1/8 cup.
  • Remove the last batch of chicken from the pan and wrap in foil to keep warm.
  • Turn up heat under pan to medium high and add chicken broth. If pan is hot enough, the broth will boil immediately. Use a wooden spoon to scrape all the brown bits off the bottom of the pan. This is where all the flavor is.
  • Add brandy, lemon juice and remaining black pepper and then reduce liquid by 1/2.
  • Reduce heat to low and add butter and parsley. Stir in butter until sauce is smooth.
  • Place chicken pieces on plates and then pour the pan sauce over the chicken. Don't drown it.
  • Enjoy!

1 tbsp vegetable oil
4 boneless, skinless chicken thighs
2 granny smith apples, peeled, cored, and cut into 1/2" wedges
1 small yellow onion, diced
1 garlic clove, minced
2 tbsp apple brandy (or regular brandy)
apple cider (also known as unfiltered apple juice), *see note
1 tbsp dijon mustard
1/4 cup heavy cream
1 tbsp finely chopped fresh sage

Steps:

  • To a large pot, heat the oil over medium-high heat. Pat dry the chicken thighs and a pinch of salt and pepper to both sides of the thighs. Carefully place the thighs into the pot and cook each side until browned.
  • Remove the chicken thighs from the pot and temporarily set aside on a plate. Add the apple wedges to the pot and sauté for a few minutes until golden and caramelized. Place the apple wedges on a separate plate.
  • Turn down the heat to medium. To the pot, add the onions and brandy. Use a wooden spoon to scrape up the browned bits that are stuck to the bottom of the pan. After a few minutes, when the onion has softened, add the garlic and cook for another minute.
  • Add the chicken back into the pot and pour in enough apple cider so that the chicken is mostly immersed in the cider, but not completely submerged. Raise the heat to high to bring the cider to a boil. Once it's boiling, turn down the heat to medium and cover the pot with a lid; cook for 5-7 minutes, until the chicken is tender and cooked through.
  • Remove the lid from the pot and stir in the cooked apples, mustard, cream, and chopped sage. Allow the mixture to simmer for about 5 to 7 minutes longer, until the sauce has reduced and thickened.
  • Serve each chicken thigh with a few apple wedges and some cream sauce poured over it. Enjoy immediately with French bread.

1/4 c. flour
1 t salt
1/2 t curry
1/4 t pepper
1/8 t thyme, dried
5 T butter
1/2 lb. mushrooms -- sliced
1 onion -- medium, sliced
1/2 c brandy
1 c heavy cream

Steps:

  • Preheat over to 325 F. Cut chicken into 1 to 1.5 inch pieces. Combine flour and spices in a plastic bag. Add chicken all at once and shake to coat thoroughly. Melt 2 tablespoons butter in large skillet. Add mushrooms and onions. Cook until limp. Remove from pan to oven-proof casserole. Add remaining butter to skillet. Add chicken and brown lightly. Remove to casserole. Pour brandy and cream into skillet. Scrape bits from pan, stirring into sauce, and heat until thickened a bit. Pour over ingredients in casserole. Set aside in refrigerator or bake 20 to 30 minutes until heated through and chicken is done.

Orange slices (optional)

Steps:

  • Melt butter in heavy large skillet over medium-high heat. Season chicken with rosemary, salt and pepper. Add chicken to skillet and sauté until brown, about 3 minutes per side. Add orange juice concentrate, chicken broth and brandy and simmer until chicken is just cooked through, 5 minutes. Transfer chicken to plate; tent with foil to keep warm. Boil pan juices until thickened to sauce consistency, stirring occasionally, about 5 minutes. Spoon sauce over chicken. Garnish with orange slices, if desired, and serve.
