BAKED HAVARTI CHICKEN RECIPE

- 1. Preheat oven to 400 degrees F (200 degrees C). 2. Marinate chicken in Italian dressing and Greek seasoning, if using, for a minimum of 30 minutes. 3. Place chicken in a 9x13 baking dish. Sprinkle top with additional Greek seasoning, if desired, and bake in preheated oven for approximately 25 minutes, or until juices run clear. 4. Shortly before chicken is done, melt butter in a skillet over medium-high heat until bubbling. Pour in wine, Worcestershire sauce, and garlic salt; bring to a boil. Stir in mushrooms then reduce heat and simmer covered until mushrooms are tender, about 3 to 5 minutes. Adjust seasoning with salt as needed. 5. Remove chicken from the oven. Lay green chili slices on top of each breast then top each chili with a slice of cheese. Return to the oven until cheese has melted. 6. Remove chicken from the oven, top with mushrooms and their pan juices, and serve.
CREAMY MUSHROOM CHICKEN
I call this meal "the easy chicken fixin'"...and love it that the leftovers are equally delicious heated up in the microwave. My husband, Tim, and I spend a lot of time riding horses and playing Cowboy Polo in summer. We are extra busy now since we just had our first child, Shelby.

- Sprinkle chicken with pepper. In a large skillet over medium heat, brown chicken in oil until a thermometer reads 170°. Remove to a serving platter and keep warm. , In the same skillet, saute mushrooms in butter until tender. Sprinkle with flour and stir until coated. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat; stir in 1/2 cup cheese. Pour over chicken. Sprinkle with parsley and remaining cheese. Serve with pasta.

This Danish dish is quick to prepare. It features chicken cooked in a creamy mushroom and Havarti cheese sauce. It's great with a side dish of white asparagus and chilled applesauce.

Steps:
- 1. Melt butter in a skillet over medium-high heat. Add the chicken pieces, and cook in the hot butter, turning occasionally, for about 7 minutes or until chicken is browned on all sides. Season with dill weed, salt and pepper.
- 2. Add onion to skillet, and continue cooking and stirring until onion is clear, about 5 minutes. Add the mushrooms, and cook another 5 minutes, stirring occasionally.
- 3. Reduce heat to low, stir in sour cream and cheese, and cook about 2 minutes more or just until cheese melts.
- 4. Sprinkle the breadcrumbs and parsley on top, and stir just enough to incorporate the breadcrumbs into the cheesy mixture. Serve immediately.
