Chicken & mushroom hot-pot image

Get the kids in the kitchen to help use up leftover cooked chicken in this hearty pie topped with slices of potato

50g butter or margarine, plus extra for greasing
1 onion, chopped
100g button mushrooms, sliced
40g plain flour
1 chicken stock cube or 500ml fresh chicken stock
pinch of nutmeg
pinch of mustard powder
250g cooked chicken, chopped
2 handfuls of a mixed pack of sweetcorn, peas, broccoli and carrots, or pick your favourites
2 large potatoes, sliced into rounds
knob of butter, melted

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the butter in a medium-size saucepan and place over a medium heat. Add the onion and leave to cook for 5 mins, stirring occasionally. Add the mushrooms to the saucepan with the onions.
  • Once the onion and mushrooms are almost cooked, stir in the flour - this will make a thick paste called a roux. If you are using a stock cube, crumble the cube into the roux now and stir well. Put the roux over a low heat and stir continuously for 2 mins - this will cook the flour and stop the sauce from having a floury taste.
  • Take the roux off the heat. Slowly add the fresh stock, if using, or pour in 500ml water if you've used a stock cube, stirring all the time. Once all the liquid has been added, season with pepper, a pinch of nutmeg and mustard powder. Put the saucepan back onto a medium heat and slowly bring it to the boil, stirring all the time. Once the sauce has thickened, place on a very low heat. Add the cooked chicken and vegetables to the sauce and stir well. Grease a medium-size ovenproof pie dish with a little butter and pour in the chicken and mushroom filling.
  • Carefully lay the potatoes on top of the hot-pot filling, overlapping them slightly, almost like a pie top.
  • Brush the potatoes with a little melted butter and cook in the oven for about 35 mins. The hot-pot is ready once the potatoes are cooked and golden brown.

4 large chicken pieces (leg with thigh portions)
1 ounce seasoned flour
2 ounces butter
1 1/2 lbs scraped tiny new potatoes
1 garlic clove, crushed
12 baby onions, peeled
4 slices streaky bacon, diced
4 stalks celery, sliced
4 ounces button mushrooms
salt and black pepper
1 pint chicken stock
1 teaspoon dried herbs
1 teaspoon paprika
1 bay leaf
chopped fresh parsley (to garnish)

Steps:

  • Set oven to 350*F or mark 4.
  • Toss the chicken joints in the seasoned flour. Melt the butter in a frying pan and brown the chicken until golden all over.
  • Place the joints in a large caserole dish and add the potatoes.
  • Put the garlic, onions, bacon celery and mushrooms in the pan you browned the chicken in and cook for a few minutes. Add the remaining flour and stir well. Add the stock gradually, stirring constantly, until thickened. Add the herbs and paprika and check seasoning.
  • Pour over the chicken and potatoes.
  • Add the bayleaf, cover and cook for 1 to 1 1/2 hours until the meat is tender.
  • Remove the bayleaf and garnish with the parsley.
  • Serve with carrots.

This is my version of the famous poule au pot associated with Henri IV of France, whose ambition was that every family in his kingdom might be able to afford to eat this dish every Sunday. I'm really pleased to be able to re-introduce a great classic.

3 lb (1.35 kg) chicken
1 small bunch of parsley stalks
a few celery leaves (if you happen to have them)
2 sprigs of fresh thyme
1 bay leaf
8 oz (225 g) dark-gilled mushrooms, sliced
1 rounded tablespoon softened butter
1 tablespoon plain flour
salt and freshly milled black pepper
3 tablespoons olive oil
8 oz (225 g) unsmoked lardons or chopped pancetta
12 shallots or button onions
4 medium carrots, peeled and cut into 1 inch (2.5 cm) chunks, or 6 whole baby carrots
4 small turnips, peeled and quartered
1 clove garlic, crushed
10 fl oz (275 ml) dry white wine
15 fl oz (425 ml) chicken stock

Steps:

  • First, heat 1 tablespoon of the oil in the casserole, then fry the lardons or pancetta a little with the shallots or button onions. When they have coloured a bit, remove them with a slotted spoon and keep them on one side. Now, add the rest of the oil and when it is fairly hot, fry the chicken whole. This will seem a bit awkward, but all you do is protect your hands with a cloth and hold the chicken by its legs, turning it into different positions until it is a good golden colour all over; this will take 10-15 minutes in all, then remove it from the casserole. Next, fry the carrots, turnips and crushed garlic for about 5 minutes, stirring them all around so that they brown slightly. Now put the bacon and onions back in the pan. Push everything to the sides and sit the chicken in the centre. Next, pour in the wine and stock, add the parsley and celery leaves, tied in a bundle (if using celery leaves), plus the thyme, bay leaf and salt and pepper. Bring to simmering point, then transfer the casserole to the oven (the casserole should be without a lid, but place a piece of foil over the chicken breast) and let it cook for 30 minutes, uncovering and basting the chicken breast now and then with the surrounding stock. After 30 minutes, remove the foil, add the sliced mushrooms, then bake for another 30 minutes, again basting fairly often with the juices. When the chicken is cooked, take the casserole from the oven, remove the chicken, drain it well and put it on a warmed serving dish. Surround it with the well-drained vegetables and bacon, and discard the bay leaf and herbs. Now place the casserole over a direct heat and boil the liquid fiercely to reduce it by about a third. Then make a paste with the butter and flour, then whisk this paste into the reduced liquid. Bring it back to the boil, whisking continuously, until the sauce thickens. Now taste to check the seasoning, then carve and serve the chicken and vegetables with the sauce poured over them.

A simple take on the traditional Chinese Hot Pot prepared with a warm and spicy broth chock full of veggies, noodles, and chicken.

1/2 tablespoon sesame seed oil
1 yellow onion, thinly sliced
4 cloves garlic, minced
8 cups (2-32 ounce containers) Kitchen Basics® Unsalted Chicken Stock
2 tablespoons low sodium soy sauce
1 tablespoon light brown sugar
3 tablespoons Thai Kitchen® Red Curry Paste
1 teaspoon McCormick® Ground Ginger
1 teaspoon McCormick® Ground Turmeric
salt and fresh ground pepper, to taste
3 boneless, skinless chicken breasts, thinly sliced
14 ounces firm tofu, cubed
8 ounces green beans, trimmed and cut into 2-inch pieces
1 large red bell pepper, sliced
3 cups Chinese cabbage leaves, sliced 1-inch thick
1 bunch swiss chard, trimmed and sliced into 2-inch wide ribbons
8 ounces Chinese-style (lo mein) noodles, cooked

Steps:

  • Heat oil in 6-quart stockpot or dutch oven over medium-high heat.
  • Add onion and cook for 3 minutes, or until tender.
  • Stir in the minced garlic and continue to cook for 30 seconds, or until fragrant.
  • Stir in chicken stock, soy sauce, brown sugar, curry paste, ginger and turmeric and bring mixture to a boil.
  • Reduce heat to low; cover and simmer for 20 minutes.
  • In the meantime, prepared your dippers and transfer them to small serving bowls or plates.
  • When ready to serve, transfer dutch oven to a portable hot plate set on a table OR transfer the broth to a PREHEATED slow cooker.
  • Arrange the dippers around the Hot Pot and let everyone cook the dippers in the broth for about 2 to 3 minutes or until desired doneness.
  • Place some cooked lo mein noodles in individual bowls, then ladle broth, chicken and veggies over noodles.
  • Serve.

4 oz. (115 g) napa cabbage, sliced
12 oz. (340 g) fish balls
6 oz. (170 g) chicken meat, sliced
4 oz. (115 g) tofu
4 oz. (115 g) shiitake mushrooms , sliced
4 oz. (115 g) white mushrooms, sliced
6 oz. (170 g) shrimp, shelled and deveined
4 oz. (115 g) salmon fillet, cut into pieces
4 oz. (115 g) scallops
4 oz. (115 g) baby bok choy, sliced
1 head garlic, peeled and minced
5 tablespoons cooking oil
1 box (32 oz. / 1000 g) Kitchen Basics® Original Chicken Stock
3 cups water
5 dashes ground white pepper
soy sauce
Cut chilies, optional

Steps:

  • Arrange the fresh ingredients on plates. Arrange the similar kinds of ingredients on the same plate. See picture above.
  • Add the cooking oil in a skillet. When it's heated, make the Garlic Oil by frying the minced garlic until they turn light brown (do not fry until medium brown). Turn off the heat and transfer the garlic oil to a small bowl. Let cool.
  • Turn on the Instant Pot and set it to Saute mode, for 30 minutes. Add the Kitchen Basics® Original Chicken Stock, water and McCormick Ground White Pepper. Bring the broth to boil.
  • Add the napa cabbage first and cook for 1 minute.
  • Add each ingredient into the Instant Pot in the following order, in batches: fish balls, chicken, tofu, mushrooms, shrimp, salmon, scallops and baby bok choy. Do not use up all the ingredients. The ingredients should be cooked in the hot pot in 2 to 3 bathes.
  • When the soup comes to a boil, add some garlic oil on top. Stir to mix well. Ladle the ingredients and some soup into serving bowls and serve immediately with the Condiment. After you finish the first round, continue to cook the remaining ingredients in the soup until all ingredients are used up.
