CHICKEN HERRISEH (ARMENIA)
This recipe is from week 13 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Armenia is my 13th stop. Chicken Herriseh is made from wheat berries, which can usually be found at a whole-foods type store or from a Middle Eastern grocer.

- Boil the chicken in 8 cups of water for about an hour and 45 minutes. Leave the lid on your pot but tilt it slightly so that not a whole lot of steam can escape.
- Remove the chicken to a plate and let cool. Do not discard the broth.
- Shred the chicken and set aside.
- Strain the broth into a measuring cup to determine how much you have left. Then add water to the broth to bring the amount back up to 8 cups.
- Put the broth in a large pot and add the wheat berries, the shredded chicken, and salt to taste.
- Bring to a boil then reduce heat to low. Simmer covered for four to six hours, or until the wheat berries are soft. Don't be tempted to stir the pot.
- Smash the wheat berries and chicken with a potato masher. The finished mixture should look like oatmeal. If it doesn't, you didn't cook it long enough.
- Serve in bowls with a pat of butter and some cumin and paprika sprinkled on top.

- Rinse chicken. Place in large pot with 8 cups water and salt. Bring to a boil, then reduce heat to medium. Cook, with lid tilted, for about 45 minutes to 1 hour, or until chicken is cooked.
- Remove chicken from liquid; place on platter until cool enough to handle. Discard skin, bones and fat. Shred chicken; cut into smaller pieces, if necessary.
- Strain broth. Measure broth, and add enough water to make the 8 cups needed. (Note: Some of the original amount of water will have evaporated, so this step is important.)
- Place broth in large pot. Add wheat, shredded chicken, and salt if necessary. Bring to a boil; reduce heat to low. Remove any foam which rises to the surface.

- In a medium sized soup pot, place your chicken breasts, chicken stock, onion, bay leaves and cinnamon stick. Bring to a very low simmer and maintain low heat for about 75 minutes. If any gunk rises to the top of the pot, skim it off with a spoon and discard.
- While the chicken simmers away, cut open the shirataki bags and pour the contents into a strainer to get rid of the liquid. Once the rice is in a strainer, run it under cold water for a good minute or two. Wash that fishy odor off of it. Then, let it drip dry for a bit.
- Pre-heat a large non-stick pan. Add your rice to the pan and stir fry them, to dry them off and tighten them up, a bit. I've read that you do not need to oil these; there are no carbs to stick to the pan. However, I always add a little oil to them, just to be on the safe side. Cook them over very high heat for about 2 or 3 minutes, tossing them around, until they're dry. Evidently, if you do not coat them with oil, when they are sufficiently dry, they will "squeek", like a basketball player stopping abruptly.
- When they appear dry, add your spices to the rice and toss them in. Turn the heat off the rice and let it sit until the chicken is ready.
