GREEK GYRO RECIPE - A GRECIAN TOASTED PIZZA



Greek Gyro Recipe - A Grecian Toasted Pizza image

While on a Grecian roll, I thought why not use a Greek Gyro. The "Gyro" is usually done in pita bread wrap, but a thin crust pizza bread will work just as well. Its base is crisp an crunchy and its toppings of asparagus, olives, chicken comforting to a foodie's soul.

thin crust pizza bread ((used instead of pita bread))
5 - 6 cubes grated cheese ((my preference is for Amul cheese))
400 gm boneless chicken ((chopped into cubes))
2 tbsp lemon juice
1 tsp garlic ((chopped fine, to give it a mild flavour))
2 medium-sized tomatoes ((chopped))
1 onion ((chopped fine))
1 tbsp asparagus ( (chopped))
4 tbsp dark olives ((rings))
1 tsp sea salt with herbs ((Carmencite brand))
1 tbsp "Pizza Mixed Herbs" ((readymade, available at stores))
½ tsp chilli flakes
4 tbsp olive oil

Steps:

  • As with all recipes, oil has to be heated first, and so the olive oil goes in first. (Remember to not overheat the oil owing to its smoking point).
  • Add the chopped garlic. When the flavour of garlic seasoning infuses the air, add the chopped chicken cubes and sautee.
  • Then let the chopped asparagus and onions follow, together.
  • Sprinkle a spoonful of salt, mixed herbs, chilli flakes and sautee.
  • Then comes the dark olive rings, and sea salt.
  • Finally, the grated cheese tossed a bit for a minute. Turn off the stove. Let's call this the "cooked mix".
  • Using a pizza cutter, pre-cut the pizza bread into triangles, then place them on a baking tray (see featured image).
  • Top the pizza triangles with the "cooked mix".
  • Place the loaded pizza triangles into a pre-heated OTG at 175 degrees and bake for 10 to 15 minutes till crisp.

2 lb boneless, skinless chicken thighs, pounded flat
½ large yellow onion, peeled and root side removed
1 wooden skewer, sturdy, roughly 10 inches (25 cm)
2 cups greek yogurt
¼ cup lemon juice
¾ cup olive oil
1 tablespoon kosher salt
1 tablespoon garlic, minced
1 tablespoon coriander powder
1 tablespoon paprika
1 tablespoon ground cumin
½ teaspoon cayenne pepper
1 teaspoon cinnamon
1 teaspoon black pepper
1 large cucumber, shredded
2 cups greek yogurt
1 tablespoon garlic, minced
¼ cup lemon juice
2 tablespoons fresh dill, finely chopped
2 tablespoons fresh parsley, finely chopped
salt, to taste
pepper, to taste
8 pita breads
onion, sliced
tomato, sliced

Steps:

  • In a large bowl, combine marinade ingredients and stir well.
  • On a cutting board, place a piece of plastic wrap over the chicken thighs and pound until about ½ inch (1 cm) thick with a meat mallet, rolling pin, or heavy pan.
  • In another large bowl or gallon plastic bag, combine chicken thighs and marinade, stirring well to coat. Cover and refrigerate for at least one hour and up to one day.
  • Preheat oven to 400°F (200°C).
  • Shred the cucumber, be sure to squeeze out any excess liquid.
  • In a medium bowl, combine tzatziki ingredients and stir well. Cover and refrigerate at least 30 minutes.
  • On a baking sheet or a large cast-iron skillet, use the onion half as a base and position the skewer vertically like a spit. Skewer the chicken thighs individually, rotating each one 90 degrees.
  • Bake for 1.5 to 2 hours, until internal temperature reaches 165°F (75°C). Let cool for 10 minutes.
  • Carve off slices of chicken to fill a pita. Top with onion slices, tomato slices, and tzatziki sauce.
  • Enjoy!

1/2 batch of prepared Sam Adams Beer Pizza Dough or purchased prepared dough
1/2 c Homemade Pizza Sauce
1 c cooked chicken meat (chopped)
1 yellow tomato (seeded and chopped)
1/4 of a red onion (thinly sliced)
1/4 c sliced kalamata olives
1/4 c sliced pepperoncini peppers (can substitute banana peppers)
1/4 c thinly sliced cucumber
2 c shredded mozzarella cheese
dried oregano (for sprinkling)

Steps:

  • Heat oven to 425F with the pizza stone in there. Once heated, heat an addition 10-15 minutes to make sure the stone is thoroughly heated.
  • Roll out the pizza dough. Transfer to the preheated pizza stone. Layer the toppings: sauce, chicken, tomato, onion, olives, banana peppers, cucumber, and cheese. Dust with oregano. Cook at 425F for ~15 minutes until crust is golden and toppings are sizzling. Yields 1 large pizza.

Steps:

  • Move oven rack to lowest position. Heat oven to 425° F. Spray 12-inch pizza pan with cooking spray. Stir Bisquick mix, oregano and water; beat vigorously with spoon 20 strokes until soft dough forms. Press dough in pizza pan, using fingers dipped in Bisquick mix; pinch edge to form 1/2-inch rim. Bake about 15 minutes or until golden brown.
  • Top crust with chicken and olives; sprinkle with feta and mozzarella cheeses.

  • Greek Marinade: Whisk together all of the Greek Marinade ingredients in a large freezer bag and add chicken. Marinate 4 hours up to overnight.
  • Blender Tzatziki Sauce: Meanwhile, slice cucumber in half lengthwise and scrape out the seeds using a teaspoon. Roughly chop cucumber and add to blender along with all remaining Tzatziki Sauce ingredients and blend until smooth. Add milk, a teaspoon at a time if needed to reach desired consistency. Refrigerate. (Best if chilled at least 1 hour.)
  • Chicken: When ready to make Flatbread Pizzas, remove chicken from fridge and let sit at room temperature 20-30 minutes (you can prep your toppings during this time). Heat one tablespoon olive oil in a large non-stick skillet over medium high heat. Once very hot, drain chicken from marinade, pat dry and add to skillet. Cook undisturbed for 3-4 minutes, or until nicely browned on one side. Turn chicken over, cover, and reduce heat to medium. Cook for approximately 5-7 more minutes (depending on thickness of chicken), or until chicken is cooked through. Remove to cutting board and let rest 5 minutes before chopping into bite size pieces.
  • Bake and Assemble: Meanwhile, heat oven to 375 degrees F. Place 2 Flatout Flatbreads on a cookie sheet and bake for 2 minutes. Remove from oven.
