4 - bone in chicken breasts
2 - celery ribs, with leaves
1 - carrot, left whole and ends removed
1 - medium onion, peeled and quartered
3 - bay leaves
3 - quarts of water
1 - teaspoon of salt
1 - bag of frozen unbreaded okra
1 1/2 cup(s) chopped onion
1 1/2 cup(s) chopped celery
1 1/2 cup(s) chopped carrot
2 - bay leaves, dried
3/4 teaspoon(s) ground thyme
1/2 teaspoon(s) marjoram, dried
1/2 teaspoon(s) basil
2 can(s) 16 oz petite diced tomatoes
- salt to taste
- pepper to taste
- cayenne to taste
32 oz - container of chicken broth
4 tablespoon(s) cloves of minced garlic
2 tablespoon(s) file powder
1 1/2 - cups of rice cooked following package directions

Steps:

  • Place the chicken in 3 quarts of water and add all ingredients down to the first salt ingredient. Simmer until the chicken is done (about 30 mins). Remove the chicken and place the bones back in the pot, continue to simmer for another 45 mins.Skim the top for foam.
  • Remove the onion, celery and carrot, then place all other ingredients except the okra and rice in the pot after you remove the bones. Simmer for 1 hour, then put the okra in and simmer for 15 more mins. You can also add more of the spices to your taste at this point.
  • Cook the rice following package directions while the soup is simmering and set aside.
  • When the soup is done, place 1/2 cup cooked rice in the bottom of a serving bowl with the gumbo on top. Serve with garlic bread. Enjoy

This is a Cajun-style gumbo made with a seasoned roux, a classic from the bayous of south Louisiana. I revised the recipe after many, many trials. Serve it hot over cooked rice or with potato salad.

1 cup vegetable oil
1 cup all-purpose flour
1 large onion, chopped
1 large green bell pepper, chopped
2 celery stalks, chopped
1 pound andouille or smoked sausage, sliced 1/4 inch thick
4 cloves garlic, minced
salt and pepper to taste
Creole seasoning to taste
6 cups chicken broth
1 bay leaf
1 rotisserie chicken, boned and shredded

Steps:

  • Heat the oil in a Dutch oven over medium heat. When hot, whisk in flour. Continue whisking until the roux has cooked to the color of chocolate milk, 8 to 10 minutes. Be careful not to burn the roux. If you see black specks in the mixture, start over.
  • Stir onion, bell pepper, celery, and sausage into the roux; cook 5 minutes. Stir in the garlic and cook another 5 minutes. Season with salt, pepper, and Creole seasoning; blend thoroughly. Pour in the chicken broth and add the bay leaf. Bring to a boil over high heat, then reduce heat to medium-low, and simmer, uncovered, for 1 hour, stirring occasionally. Stir in the chicken, and simmer 1 hour more. Skim off any foam that floats to the top during the last hour.

This dish was invented by chef Paul Prudhomme at the legendary New Orleans eatery, K-Paul, in the 1970s. He says its so good, it makes you say YaYa!

1 chicken, cut up
2 tablespoons creole seasoning
2 1/2 cups flour
1 cup vegetable oil
2 cups onions, coarsely chopped
1 1/2 cups celery, coarsely chopped
2 cups green peppers, coarsely chopped
6 cups chicken broth
1 1/2 teaspoons fresh garlic, minced
1 lb andouille sausage, finely diced (or any spicy sausage such as Kielbasa)
4 cups hot cooked rice

Steps:

  • Cut chicken breasts in half crosswise to get a total of 10 pieces of chicken.
  • Season with Creole seasoning.
  • Measure flour into a large paper bag.
  • Add chicken pieces and shake until well-coated.
  • Remove chicken and reserve the flour.
  • In a large skillet, brown chicken in very hot oil, remove and set aside.
  • Stir oil remaining in the skillet with a wire whisk to loosen any brown particles remaining in the bottom of the pan.
  • Make a roux by whisking in 1 cup of the remaining flour and stirring constantly until the roux turns a dark brown.
  • Remove from heat; add onions, celery and green bell pepper, stirring constantly until vegetables are tender.
  • Transfer roux and vegetables to a Dutch oven.
  • Add stock to roux and vegetables and bring to a boil.
  • Reduce heat to simmer and add garlic, sausage and chicken.
  • Continue cooking, covered, until the chicken is tender, 1 3/4 to 2 hours.
  • Adjust seasonings and serve in bowls over the rice.
  • Serves 10.

2 cups unsalted butter
4 cups all-purpose flour
2 red bell peppers, diced
2 green bell peppers, diced
2 medium yellow onions, diced
2 stalks celery, diced
5 quarts chicken stock, heated
2 tablespoons Creole Seasoning
1 teaspoon ground black pepper
1 teaspoon crushed red pepper
1 teaspoon chili powder
1 teaspoon thyme
1 tablespoon chopped garlic
2 bay leaves
2 tablespoons kosher salt
1 pound andouille sausage, sliced 1/2-inch thick
1 whole 4-pound chicken, roasted and deboned, cut into 2-inch pieces

Steps:

  • 1. First you make a roux. Melt the butter in a 12-quart stockpot. Whisk in the flour and cook until foaming. Cook, stirring often, until dark mahogany, about 1 hour.
  • 2. Add the peppers, onion, and celery. Cook until soft, about 5 minutes. Whisk in the chicken stock (make sure it's hot), and bring the mixture to a boil. Reduce the heat to simmer. Stir in Creole Seasoning, black pepper, crushed red pepper, chili powder, thyme, chopped garlic, bay leaves, and kosher salt. Cook, skimming fat as necessary, an additional 45 minutes.
  • 3. Add the andouille and chicken and cook for approximately 15 minutes. Taste, and adjust for seasoning.

Gumbo Ya-Ya image

Yes, there's a gumbo called ya-ya. Many people believe gumbo can only be made with seafood but there's a less expensive way to make a delicious pot of this dish. Still, just because gumbo ya-ya is made with chicken and andouille sausage doesn't mean it's a poor man's gumbo. Since andouille can be hard to find outside of Louisiana, I use smoked sausage, which is more easily available. We also add enough herbs and spices to this gumbo to make it sing with the classic flavors of Louisiana.

3/4 cup canola oil
2 pounds chicken wings, drumettes and flats separated, tips removed
1/4 cup plus 2 tablespoons Creole seasoning
1 cup unbleached all-purpose flour, plus more as needed
3 stalks celery, chopped
1 medium Spanish or white onion, chopped
1 bell pepper, chopped
5 cloves garlic, finely chopped
1 teaspoon cayenne pepper
2 bay leaves
5 sprigs fresh thyme
12 cups low-sodium chicken stock
24 ounces smoked sausage, sliced 1/4 inch thick
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground black pepper
3 cups cooked white rice, for serving
1 bunch green onions (3 to 4 bulbs), sliced 1/4 inch thick, for serving
1/4 cup finely chopped flat-leaf parsley leaves, for serving

Steps:

  • Heat 1/2 cup of the oil an 8-quart heavy-bottomed pot over medium to medium-high heat. Coat the chicken wings with 2 tablespoons of the Creole seasoning in a large bowl. Pour 1/4 cup of the flour over the chicken and coat evenly, then slowly add additional flour as needed until all of the chicken is completely coated (see Cook's Note). Working in batches, fry the chicken wings until golden brown, about 3 minutes per side. Transfer the wings to a paper towel-lined plate and set aside.
  • Carefully add the remaining 1/4 cup oil to the pot and heat until smoking (there should be a thin faint white smoke coming off the oil). Whisk in the remaining 3/4 cup flour and cook, whisking continuously, over medium-high heat until it turns into a dark chocolate brown roux. If the roux is browning too quickly, remove the pot from the heat and continue whisking until the roux reaches the desired color. Turn the heat down to low and stir in the celery, onions and peppers with a wooden spoon, scraping the bottom of the pan, until the vegetables are coated with the roux, about 1 minute. Add the garlic, cayenne, bay leaves, thyme and 2 teaspoons Creole seasoning and turn up the heat to medium-high. Whisk in the chicken stock in three parts to make sure it's fully incorporated. Add the chicken wings, sausage, Worcestershire sauce and 1 tablespoon plus 1 teaspoon Creole seasoning. Stir to combine.
  • Bring to a boil, then reduce the heat to low and simmer, uncovered, using a ladle to skim off any foam that rises to the top, until the gumbo is slightly reduced and thickened, about 1 hour. Stir in the remaining 2 tablespoons Creole seasoning, 1 teaspoon salt and 1 teaspoon pepper. Combine the green onions and parsley in a small bowl or on your cutting board.
  • To serve, ladle the gumbo over bowls of cooked white rice and garnish with the green onion and parsley mixture.

1 1/2 cups chopped onions
1 cup chopped celery
1 cup chopped bell peppers
1 pound smoked sausage, such as andouille or kielbasa, cut crosswise into 1/2-inch slices
1 1/2 teaspoons salt
1/4 teaspoon cayenne
3 bay leaves
6 cups chicken broth
1 pound boneless chicken meat, cut into 1-inch chunks
1 teaspoon Rustic Rub, recipe follows
2 tablespoons chopped fresh parsley leaves
1/2 cup chopped green onions
1 tablespoon file powder
8 tablespoons paprika
3 tablespoons cayenne
5 tablespoons freshly ground black pepper
6 tablespoons garlic powder
3 tablespoons onion powder
6 tablespoons salt
2 1/2 tablespoons dried oregano
2 1/2 tablespoons dried thyme

Steps:

  • Combine the oil and flour in a large cast iron or enameled cast iron Dutch oven over medium heat. Stirring slowly and constantly for 20 to 25 minutes, make a dark brown roux, the color of chocolate. Add the onions, celery, and bell peppers and continue to stir for 4 to 5 minutes, or until wilted. Add the sausage, salt, cayenne, and bay leaves. Continue to stir for 3 to 4 minutes. Add the chicken broth. Stir until the roux mixture and water are well combined. Bring to a boil, then reduce heat to medium-low. Cook, uncovered, stirring occasionally, for 1 hour.
  • Season the chicken with the rub and add to the pot. Simmer for 2 hours. Skim off any fat that rises to the surface. Remove from the heat. Stir in the parsley, green onions, and file powder. Remove the bay leaves and serve in deep bowls.
  • Combine all ingredients and store in an air-tight container.

2 medium yellow onions, quartered
2 ribs celery, each cut into 6 pieces
2 bay leaves
1 tablespoon plus 1 1/2 teaspoons salt
1 1/2 teaspoons cayenne pepper
1 1/2 cups vegetable oil
1 1/2 cups bleached all-purpose flour
2 cups chopped yellow onions
1 cup chopped green bell peppers
1 cup chopped celery
1/2 pound andouille or other smoked sausage, finely chopped, plus 1 pound smoked sausage, cut crosswise into 1/4-inch thick slices
2 tablespoons chopped green onions or scallions
2 tablespoons chopped fresh parsley leaves
Cooked white rice, for serving

Steps:

  • In a large, heavy pot place the hen, water, quartered onions, celery pieces, bay leaves, 1 tablespoon of the salt, and 1 teaspoon of the cayenne pepper and bring to a boil over high heat. Reduce the heat to medium and cook, partially covered, until the hen is tender, about 2 hours. Remove the hen and set aside. Strain and reserve the broth. In a large, heavy pot or a Dutch oven over medium heat, combine the oil and flour. Cook, stirring constantly, until the roux is a dark, chocolate brown color, about 20 to 25 minutes. Add the chopped onions, bell peppers, celery and chopped sausage. Cook, stirring, until the vegetables are very soft, about 8 to 10 minutes. Add the reserved chicken broth and stir until the roux mixture and broth are well combined. Bring to a boil, then reduce the heat to medium-low and cook, uncovered, stirring occasionally, for 1 1/2 hours. Meanwhile, remove the skin from the hen and pick the meat off the bones, discarding the skin and bones. Coarsely chop or tear the meat into bite size pieces. Add the chicken and the sliced sausage to the gumbo. Cook for 15 minutes. Remove from the heat and let sit for 5 minutes before skimming any fat that has risen to the surface. Stir in the green onions and parsley and serve the gumbo in individual soup or gumbo bowls over hot, steamed white rice.

  • Tip - I recommend to prepare roux the night before if you plan to cook in slow cooker. In small cast iron pot or heavy bottom pot over medium-high heat, add oil and let heat up for a few minutes. Gradually add in the flour a little at a time while stirring to combine. Once all the flour is added, turn the heat down to low. Constantly stir the roux over low heat, until it turns a deep dark brown color (anywhere ranging from the color of peanut butter to chocolate). This can take 40 to 50 minutes. Once roux has reached desired color of dark brown, remove from heat and set aside until later.
  • Turn the heat down to medium and add 2 tablespoons of olive oil and then add in the okra. Sauté the okra for 30 to 40 minutes or until it ceases to "rope" (slimy strings connecting the okra); remove from heat and set aside. NOTE: Take your time and do not burn it. It is worth the trouble. Cooking the okra first will prevent it from mushing up in the gumbo and remove the slimy texture.
  • In a Dutch oven over medium-high heat, add 2 tablespoons olive oil and let heat up for a minute. Then add chicken pieces and brown on all sides for 7 to 8 minutes. Remove chicken and set aside.

  • Remove any chicken fat or skin from the boneless chicken and cut the meat into cubes. Season with salt, black pepper and a pinch of flour and reserve.
